2 individual packages graham crackers
2 (3 ounce) packages instant vanilla pudding mix
3 cups milk
1 (8 ounce) container frozen whipped topping, thawed
1 (16 ounce) package prepared chocolate frosting

Steps:

  • Line the bottom of a 9x13-inch pan with graham crackers.
  • In a large bowl, combine pudding mix and milk; stir well. Mix whipped topping into pudding mixture. Spread half of mixture over graham cracker layer. Top with another layer of graham crackers and the remaining pudding.
  • Top all with a final layer of graham crackers and frost with chocolate frosting. Refrigerate at least two hours before serving to allow the graham crackers to soften.

1/2 cup butter, cubed
1 cup all-purpose flour
4 eggs
1 package (1.5 ounces) instant sugar-free vanilla pudding mix
2-3/4 cups fat-free milk
1 package (8 ounces) reduced-fat cream cheese, softened
1/2 cup light chocolate syrup

Steps:

  • In a saucepan, bring water and butter to a boil, stirring constantly until butter is melted. Reduce heat to low; add the flour. Stir vigorously with a wooden spoon until mixture leaves sides of pan and forms a smooth ball. Remove from the heat. , Add eggs, one at a time, beating well after each addition until the batter becomes smooth. Spread into a greased and floured 13-in. x 9-in. baking pan. Bake at 400° for 30 minutes or until puffed and golden. Immediately remove from pan and cut in half horizontally. Cool completely. , For filling, beat the pudding mix, milk and cream cheese in a bowl until smooth. Just before serving, place bottom eclair layer on a serving platter; cover with filling. Replace top layer and drizzle with chocolate syrup.

2 Jello Instant Vanilla Pudding Mix (small packages)
3 cups milk
8 ounces non-dairy whipped topping
1 (16 ounce) box graham crackers (you will have some leftovers)
1 (15 ounce) container chocolate frosting

Steps:

  • Mix together vanilla pudding mix and milk.
  • Fold in whipped topping.
  • Line 9 x 13 pan with one layer of graham crackers.
  • Put half of the pudding mixture over the graham crackers.
  • Place a second layer of graham crackers over the pudding mixture.
  • Put the remaining pudding mixture over the graham crackers.
  • Place a third layer of graham crackers over the pudding mixture.
  • Heat the tub of frosting in the microwave for 30 seconds to soften. (Don't forget to remove the foil seal or you'll get fireworks).
  • Spread frosting on the top of the last layer of graham crackers.
  • Cover with plastic wrap and let set a couple hours or overnight in the refrigerator.
  • Cut in squares.

Most Eclair Cakes or Desserts use Graham Crackers. I find that by using Club Crackers, the desert actually tastes more like a true Chocolate Eclair. I find its not as sweet using the Club Crackers also. If you don't want to make the frosting, use a ready made chocolate fudge frosting. Just heat for a few seconds so its pourable. Cook time is chill time. To make it lighter, you can use sugar free pudding, low fat milk, low fat Club crackers, and sugar free Cool Whip.

This is a recipe I received from my husbands college aged niece Sarah. She made it for a desert after Easter dinner. It's like a huge "Ring Shaped" Chocolate Eclair. We loved it so much, we had to ask for the recipe!

1 cup water
1/2 cup butter
1 cup flour
1/4 teaspoon salt
4 eggs
2 (3 1/2 ounce) packages French vanilla instant pudding
2 1/2 cups milk
1 cup Cool Whip
1/2 teaspoon almond extract
1 (7 1/2 ounce) package chocolate fudge frosting mix

Steps:

  • Preheat oven to 400 degrees.
  • On a cookie sheet grease and flour a circle
  • approx 7 inches.
  • In a sauce pan, over high heat mix Water and Butter until boiling. Turn burner to Low and add Flour and Salt. Mix fast with a wooden spoon until dough leaves the sides of the pan.
  • Transfer dough to a large bowl and mix with an electric beaters at Medium speed. Add eggs, one at a time. Beat until dough is smooth and slimy.
  • Drop tablespoons of dough onto the cookie sheet to form a circle with an open center. Bake for 45 minutes. After 45 minutes turn oven off and leave in the oven for an additional 20 minutes.
  • Put on a wire rack to cool. Once cool carefully cut in half (like a cream puff).
  • For the Filling, mix BOTH packages Instant French Vanilla pudding with the 2 1/2 cups milk. Mix with an electric beater on Low for 1 - 2 minutes. Once pudding has set up, add Cool Whip and Almond Extract and fold in slowly until incorporated.
  • Take the top of the "ring" off and set to the side. Spread the filling evenly on the bottom "ring". Once you have distributed all the filling evenly across the bottom "ring" replace the top of the "ring".
  • For the frosting, make the Chocolate Fudge Frosting Mix as directed on the package and spread on the top of the ring. Let Frosting set up until ready to serve.

Years ago a previous boss' wife made this dessert for the office. This was such a fantastic dessert that we all asked her for the recipe. Over the years I have made this for tons of family and friends gathering and always get asked for the recipe. So here it is and I hope you all enjoy this as much as my family and friends.

FILLING
2 pkg whole graham crackers
2 pkg 3.4 oz instant french vanilla pudding mix
3 c milk
1 pkg 8 oz cool whip
FROSTING
2 Tbsp butter, softened
2 oz baking chocolate, semi-sweet
2 Tbsp corn syrup, light
3 Tbsp milk
1 tsp vanilla extract
1 1/2 c powdered sugar

Steps:

  • 1. Line the bottom of a 9x13 baking dish with whole graham crackers. Combine pudding mix and milk in a large bowl. Beat until stiff. Fold cool whip into pudding mixture. Pour ½ pudding mixture over graham cracker layer in pan. Top with another layer of graham crackers. Pour remaining pudding mixture over graham crackers. Top with another layer of crackers.
  • 2. In separate bowl melt chocolate squares until able to mix (careful not to overcook). Mix in margarine, corn syrup, milk, vanilla and powdered sugar until spreading consistency. Spread over top layer of graham crackers. Chill at least 12 hour.

3 c whole milk
8 oz cibtauber if cool whip
1 container of prepared chocolate frosting

  • 1. Layer the bottom of a 9X13 in basking dish with whole graham crackers...Meanwhile in a large mixing bowl, beat the pudding mixes with the three cups of milk until thickened. Stir in the container of Cool Whip.

2 (3 1/2 ounce) packages vanilla instant pudding mix (fat-free pudding is okay)
1 (8 ounce) package cream cheese, softened (low fat is okay)
1 (8 ounce) container Cool Whip, dessert frozen topping thawed (reduced calorie is okay)
1/4 cup milk
2 tablespoons butter, softened
2 tablespoons honey
2 ounces chocolate, melted
1 1/2 cups confectioners' sugar (icing)

Steps:

  • In a bottom of a 13 x 9" baking dish, arrange 7-1/2 graham crackers in a dish coated lightly with butter or cooking spray.
  • In a bowl, combine 3 cups milk, pudding mix and the cream cheese; beat at low speed of an electric mixer for 1 minute, or until thick; fold in Cool Whip topping.
  • Spread half of the pudding mixture over graham crackers.
  • Top with another 7-1/2 graham crackers sheets.
  • Repeat the procedure with the remaining half of pudding mixture and 7-1/2 more of the graham crackers.
  • In a bowl, combine 1/4 cup milk, softened butter, honey and melted chocolate; beat well with a mixer.
  • Gradually add in icing sugar to milk mixture, and beat well.
  • Spread the chocolate mixture glaze over the graham crackers.
  • Cover the dessert and tent with foil; chill 4-5 hours before serving.

This is a wonderful "company" dessert. The puff pastry crust is light, and you may choose any flavor of pudding for the filling.It looks like you spent hours working on it, yet it is fairly easy and delicious!

1 cup water
1 cup flour
1/2 cup butter
4 eggs
11 ounces cream cheese
3 cups milk
2 (4 ounce) packages instant chocolate pudding mix
12 ounces Cool Whip
chocolate syrup

Steps:

  • Bring water and butter to a rolling boil.
  • Remove from heat and add flour.
  • Stir until forms ball.
  • Add eggs, one at a time. Mix well after each.
  • Put in greased 9 X 13 pan.
  • Bake at 375 degrees for 30 - 35 minutes.
  • Cool.
  • Blend milk and cream cheese together.
  • Mix in pudding mix.
  • Cool.
  • Add cool whip as top layer.
  • Drizzle with chocolate syrup.

A friend made this receipe for a carry in at work. It was delicious. I asked for the recipe and made my own lighter version of it. It really does need to refrigerate for at least 6 hours to soften the crackers so plan ahead.

2 (1 ounce) packages sugar-free instant vanilla pudding mix
4 cups skim milk (for the pudding)
1 (8 ounce) container Cool Whip Lite
1 (16 ounce) box graham crackers
1 (15 ounce) container chocolate frosting (not whipped)

Steps:

  • Prepare pudding according to package directions.
  • Fold in the container of lite cool whip.
  • Line the bottom of a 9x13 pan with the graham crackers.
  • Spread half of the pudding mixture on top of the graham crackers.
  • Put another layer of graham crackers.
  • Spread remaining pudding mixture on top
  • Put another layer of graham crackers
  • Microwave frosting for 20-30 seconds to thin slightly.
  • Pour/spread over the top of the graham crackers.
  • Refrigerate for 6-8 hours to allow graham crackers to soften.

This is so easy and so good. I would like to add that the Caramel topping is optional. It will be just as good without it.

2 box instant vanilla pudding (small box)
4 c milk
1 cool whip ( 8 to 12 oz. )
1 box graham crackers
2 bottle *smuckers chocolate magic shell
1 bottle *smuckers caramel magic shell
* be sure and shake all the bottles of magic shell

Steps:

  • 1. Mix the packs of vanilla pudding together with the milk. Then fold in the cool whip. Set aside.
  • 2. In a 9X13 pan... Place a layer of graham crackers on bottom of pan to cover.
  • 3. Then add a layer of pudding (I put a swirl of caramel on each layer of pudding)
  • 4. Repeat layer of graham crackers, Repeat layer of pudding and caramel, Ending with a layer of graham crackers.
  • 5. Then you put on the chocolate magic shell, will use both bottles. Add more caramel and swirl into the chocolate.
  • 6. Put in the fridge for 12 hrs.
