WHITE CHOCOLATE DREAM PIE

2 cups macadamia nuts crushed, reserving 2 tablespoons for garnish
3 tablespoons unsalted butter, melted
3 tablespoons sugar
3 cups cream
1 cup sugar
2 eggs
1 teaspoon vanilla
3 tablespoons cornstarch
1 tablespoon unsalted butter
1 12-ounce bag white chocolate chips
1 8-ounce block of cream cheese, softened
1 16-ounce tub of Cool Whip, softened

Steps:

  • Combine all crust ingredients and mash into the bottom of a greased 9x11 cake pan. Bake for 10 minutes in a 300 degree F oven. Set crust aside to cool while you prepare the filling.
  • Combine cream, sugar, eggs, vanilla, and cornstarch into a medium sauce pan and bring to a boil over a medium flame. As the filling begins to thicken, add the butter, vanilla, and white chocolate chips. When the filling has thickened turn off the heat and whisk in the cream cheese. Pour the filling on top of the crust.
  • Allow to cool in the refrigerator for at least thirty minutes. Then take the Cool Whip and spread over the top of the filling. Garnish with the remaining macadamia nuts and chill until ready to serve.

3 (1 ounce) squares unsweetened chocolate
¼ cup boiling water
1 (.25 ounce) package unflavored gelatin
5 egg whites
¾ cup white sugar
¾ cup light corn syrup
2 teaspoons vanilla extract

Steps:

  • Place chocolate squares in a small, microwave-safe bowl. Microwave on high 2 minutes. Set aside. Sprinkle gelatin over boiling water and set aside to soften.

½ cup rice milk
1 tablespoon frozen orange juice concentrate
1 cup semi-sweet chocolate chips
1 tablespoon maple syrup
½ teaspoon vanilla extract

  • In heavy pan over medium-high heat, toast coconut until lightly browned. Remove 1 tablespoon of the coconut for garnish. Add rice milk and orange juice concentrate.   • In a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until crumbly. Add oil and buttermilk; toss with a fork. Gradually add water, tossing with a fork, until a ball forms. Cover and refrigerate for 1 hour., On a lightly floured surface, roll out dough to fit a 9-in. pie plate. 2 3/4 c cold milk
1 tsp pure vanilla extract
2 pkg jell-0 brand chocolate flavor instant pudding and pie filling or any other flavor (not cooked pudding)

  • 1. Prepare whipped topping mix with 1 cup of the milk and the vanilla as directed on the package, using large mixing bowl.

  • Place Oreo cookies into a food processor and pulse until broken into small crumbs.
  • Add the butter and pulse to combine.

FOR CRUST
2 9-inch prepared pie crust shells, baked
use the scraps of pie dough to bake up decorations, dust with powdered sugar if desired
CHOCOLATE PUDDING
2 c milk
1 c heavy cream
1 1/4 c white sugar
1/3 c unsweetened dark chocolate cocoa powder
1/2 c plus 1 tablespoon, all-purpose flour
1 dash(es) salt
3 large egg yolks, mixed and set aside in medium bowl
1 tsp vanilla extract
CHOCOLATE MOUSSE
2 box instant chocolate mousse (or make your own), plus ingredients per package directions
ADDITIONAL ITEMS
Whipped cream for topping

Steps:

  • 1. Make up your pie crust and bake per directions. Make some decorations up too with your scraps! Coat the scraps with egg wash for a nice golden color. You can use any pie crust recipe but you may want to try mine. It doesn't shrink that bad after baking without any filling inside. I don't put any beans in it either and it bakes so good. Light and flaky!
  • 2. Mix your egg yolks in a medium bowl and set aside.
  • 3. In another medium bowl, whisk together flour, sugar, cocoa, and a dash of salt. Set aside.
  • 4. In a medium sauce pan, add your milk and cream just until hot... NOT BOILING. Add half of the hot milk and cream into the flour mixture and whisk together. Test with your finger and make sure it's not too hot.
  • 5. Then add your egg yolks whisking them into the mixture until well blended. (You don't want to cook the eggs so make sure you do not boil your milk.)
  • 6. Pour the mixture into the other half of your milk you have left in your sauce pan. On medium heat stir until really thick, shouldn't take that long but don't leave the pan and don't stop stirring. Nobody likes a lumpy pudding!
  • 7. After it gets real thick, take off burner and whip in your vanilla extract. NOTE: This pudding will be pretty thick, perfect for pie. If you want to make pudding cups then don't cook it as long, as soon as it starts getting thick pour into your serving dishes.
  • 8. Pour evenly into your pie shells. Let that cool down completely.
  • 9. Make your chocolate mousse (per package instructions) and spread on your cooled pudding. Let that chill.
  • 10. Top with whipped cream, decorations and it you really want to kick it off make some chocolate ganache and pour on top of the whipped cream. Don't add the whipped cream until serving.
  • 11. Your really going to LOVE this! In this photo you will see a wonderful cup of hot chocolate with whipped cream and chocolate ganache on top! YUMBO! I'm taking a culinary pastry course and received an excellent rating on this one! YEA!

Coconut White Chocolate Custard:
½ cup sugar
6 tablespoons cornstarch
1 cup whole milk
1¾ cups canned coconut milk (13.5 fluid ounce can)
½ vanilla bean, split lengthwise
6 large egg yolks, lightly beaten
½ teaspoon fine sea salt
1 teaspoon vanilla extract
1 teaspoon coconut extract
1½ ounces chopped white chocolate (¼ cup)
Crunchy Toasted Coconut Crust:
vegetable oil spray
3 cups unsweetened flaked coconut (6 ounces) (available at health food stores or Whole Foods), lightly toasted
6 tablespoons sugar
¼ teaspoon fine sea salt
6 tablespoons unsalted butter, melted
Whipped Cream Topping:
2 cups heavy cream
¼ cup powdered sugar
1 teaspoon vanilla extract
Garnish:
dried coconut shards, toasted

Steps:

  • Toast the Coconut: Preheat the oven to 350°. Spread the coconut shards on a baking sheet and toast in the oven, watching carefully and stirring once or twice, until lightly browned, 7 to 8 minutes. Remove from the oven and cool. Prepare the Custard Filling: In a medium saucepan, whisk together the sugar and cornstarch until well combined. Add the milk, coconut milk, and vanilla bean. Over medium-high heat, stir with a wooden spoon until the custard thickens and begins to boil. Remove the saucepan from the heat. Ladle a bit of the hot sauce into the eggs and whisk to warm the eggs gradually. Repeat, and then scrape the warmed eggs into the sauce in the pan. Stir to combine. Place the pan back on medium-high heat, and continue stirring slowly while bring the custard back to a boil. Maintain a slow boil for 1-2 additional minutes, stirring slowly to prevent browning on the bottom of the pan. Remove from the heat. Add salt, vanilla extract, and coconut extract, and stir until incorporated. Scrape the custard into a strainer set over a medium bowl and push the custard through the mesh into the bowl. This ensures that you will have no lumps in your custard. Stir the white chocolate into the hot custard until melted. Place a piece of plastic wrap directly on the surface of the custard to prevent a crust from forming and refrigerate until completely cold. The custard will thicken considerably as it cools. Prepare the Crust: Coat a 9½- to 10½-inch diameter, 5- to 6-cup capacity pie plate with vegetable spray. Reserve. Process the coconut, sugar, and salt in a food processor until finely ground. Stop the machine and pour the melted butter over the top of the crumbs. Pulse to combine. Add the crumbs to the pie plate, pat the crumbs evenly across the bottom and firmly up the sides, and level the top edge. The edges should be 1/4-inch thick, and firmly and evenly pressed against the bottom and sides of the pan. Don't pat the crumbs over the horizontal edge of your pie plate, if it has one, as the edge will shatter when you cut the pie. Put the pie pan on an edged baking sheet ad bake at 375° for 15-20 minutes, until fragrant and nicely browned. Remove to a wire rack to cool. Assemble the Pie: When the pastry cream is cold, and not too long before serving, fill the baked pie crust with it, smoothing the surface. In an electric mixer with the whisk, whip the heavy cream with the sugar and vanilla on medium speed. Gradually increase the speed to high and whip to peaks that are firm enough to hold their shape. Top the pie with the whipped cream and then sprinkle with the toasted coconut shards and shaved white chocolate.

1 T orange juice

Steps:

  • Take a pre made crust and lay washed and dried raspberries along bottom of crust. In a double broiler melt chocolate chips with milk and vanilla. Add sweetener to taste. Mix well, and take off from heat after fully melted so that it does not burn. In a separate bowl mash up the avocado, or pulse in a food processor. Add in orange juice, Get all lumps out. After chocolate cools a bit mix it in with mashed avocado. This mixture should be thick and creamy. Test the sweetness level. Pour over raspberries and place in fridge to set.

1 1/2 cup(s) crushed crisp ladyfinger cookies
1/3 cup(s) butter, melted
1/2 cup(s) nutella
2/3 cup(s) caramel ice cream topping
2 tablespoon(s) plus 2 cups heavy whipping cream, divided
1 1/2 cup(s) slivered almonds
1 package(s) (8 ounces) cream cheese, softened
1/3 cup(s) plus 1 tablespoon confectioners' sugar, divided
1 1/2 cup(s) semisweet chocolate chips, melted
2 teaspoon(s) vanilla extract
- additional heavy whipping cream, whipped
- chocolate stars for garnish if desired, optional

Steps:

  • Combine crushed cookies and butter; press onto the bottom and up the sides of a greased 9-in. pie plate. Refrigerate for 30 minutes. Spread Nutella over crust. In a large bowl, combine caramel topping and 2 tablespoons cream; stir in almonds. Spoon over Nutella layer.
  • In a small bowl, beat cream cheese and 1/3 cup confectioners' sugar; stir in melted chocolate and vanilla until smooth. In a large bowl, beat remaining cream until stiff peaks form; fold into cream cheese mixture. Spread over caramel-almond layer.
  • Sprinkle with remaining confectioners' sugar. Garnish with additional whipped cream and chocolate stars if desired. Refrigerate for at least 1 hour before serving.

1 pkg. (1.3 oz.) JELL-O Chocolate Flavor Sugar Free Fat Free Cook & Serve Pudding
2 cups fat-free milk
2 Tbsp. creamy peanut butter
1 oz. BAKER'S Bittersweet Chocolate, melted
1-1/2 cups thawed COOL WHIP FREE Whipped Topping, divided
1 chocolate cookie crumb crust (6 oz.)

Steps:

  • Cook pudding mix with milk in large saucepan as directed on package. Remove from heat. Whisk in peanut butter. Place pan in bowl of ice water; let stand 5 min., stirring occasionally.
  • Meanwhile, whisk chocolate and 1/3 cup COOL WHIP until blended; spread onto bottom of pie crust.
  • Add 2/3 cup of the remaining COOL WHIP to pudding; whisk until blended. Pour into crust. Refrigerate 3 hours or until firm. Serve topped with remaining COOL WHIP.

Number Of Ingredients 15

1-1/2 cups graham cracker crumbs
2 tablespoons butter, melted
1 egg white
FILLING:
2/3 cup sugar
1/3 cup baking cocoa
3 tablespoons cornstarch
1/8 teaspoon salt
2 cups fat-free milk
1 egg, beaten
1/4 cup semisweet chocolate chips
1 teaspoon vanilla extract
TOPPING:
1-1/2 cups reduced-fat whipped topping
1 teaspoon grated chocolate

Steps:

  • Combine the graham cracker crumbs, butter and egg white; press onto the bottom and up the sides of a greased 9-in. pie plate. Bake at 375° for 6-8 minutes or until lightly browned. Cool on a wire rack.
  • For filling, in a large saucepan, combine the sugar, cocoa, cornstarch and salt. Stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat to low; cook and stir 2 minutes longer.
  • Remove from the heat. Stir a small amount of hot mixture into egg; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in chocolate chips and vanilla.
  • Pour into crust. Refrigerate for at least 2 hours or until firm. Spread whipped topping over filling; sprinkle with grated chocolate.
  • Yield: 8 servings.
