¾ cup sweetened condensed milk
¼ teaspoon almond extract
1 ½ teaspoons vanilla extract
¼ teaspoon fine salt
1 large egg white
3 cups shredded unsweetened coconut
1 (4 ounce) bar semisweet chocolate, chopped, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine condensed milk, almond extract, vanilla extract, salt, and egg white in a bowl. Whisk until thoroughly combined. Add about 2 1/3 cups shredded coconut. Mix with a spatula until mixture is sticky and holds together. Form into balls using a sorbet scoop.
  • Roll balls in remaining coconut. Space macaroons evenly onto a silicone-lined baking sheet.
  • Bake in the preheated oven until golden, about 20 minutes. Let cool to room temperature, at least 20 minutes.
  • Meanwhile, place 3/4 of the chocolate in top of a double boiler over simmering water. Stir frequently, scraping down the sides with a rubber spatula to avoid scorching, until chocolate is melted, about 5 minutes. Remove from heat and stir in the rest of the chocolate until it melts.
  • Dip the base of each cooled macaroon about 1/8 inch into the chocolate. Place cookies, chocolate-side down, on parchment paper. Let chocolate harden completely.

Scant 1/2 cup egg whites (from about 3 eggs)
3/4 pound (scant 2 1/2 cups) sweetened desiccated or flaked coconut (not shredded)
4 ounces semisweet chocolate, melted

Steps:

  • Heat the oven to 350 degrees F. Mix all the ingredients except the chocolate together in a bowl. (The recipe can be made up to this point and kept refrigerated up to 3 days in advance.)
  • Scoop the mixture with a small 1 to 1 1/2-inch ice cream scoop onto parchment lined cookie sheets, leaving 2 inches between the cookies. Bake until light golden, about 12 to 15 minutes. Let cool completely on the pans.
  • Remove from the pan and dip the bottoms in melted chocolate, then place back on the sheet tray to set up.

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. Preheat oven to 275°., Add vanilla to egg whites; beat on medium speed until soft peaks form. 2/3 cup unsalted butter, softened

  • Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Line baking sheets with parchment paper., Preheat oven to 350°. 2 cups fresh pineapple chunks (about 12 ounces)
1/4 cup sugar
2 tablespoons fresh lemon juice (from 1 lemon)
Macaroons:
Nonstick cooking spray
3 large egg whites
One 14-ounce bag sweetened and shredded coconut
1/3 cup sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
Fine salt
6 ounces bittersweet chocolate, roughly chopped
1 tablespoon unsalted butter

Steps:

  • For the pineapple filling: Puree the pineapple in a food processor and transfer to a medium skillet along with the sugar and 1/4 cup water. Heat over medium-low and bring to a low simmer. Use a rubber spatula to stir and move the mixture around as it reduces and thickens to the consistency of very thick jam, 18 to 20 minutes (you should have about a heaping 1/2 cup). Remove from the heat and stir in the lemon juice. Let cool completely in the skillet. The pineapple filling can be made and refrigerated up to 2 days in advance.
  • Adjust an oven rack to the middle position and preheat the oven to 350 degrees F. Line a baking sheet with parchment and coat lightly with nonstick spray.
  • For the macaroons: Whisk the egg whites in a large bowl until frothy. Toss the coconut, sugar, cornstarch, vanilla and 1/4 teaspoon salt together with your hands in another large bowl. Add the coconut mixture to the egg whites and combine with your hands; the mixture should pack together tightly when squeezed. Divide the mixture into 24 slightly heaping tablespoons and roll each into a smooth ball (slightly wet hands can help with rolling). Hold a ball in the palm of your hand and use your thumb to make a slight indentation in the middle. Reshape the edges of the macaroon back into a round if it cracks. Arrange about 1 inch apart on the prepared baking sheet. Bake until golden brown, rotating the tray as needed for even browning, 20 to 24 minutes. Let cool completely on the tray.
  • Set up a cooling rack over a baking sheet. Combine the chocolate and butter in a small bowl and microwave for 30 seconds; stir. Repeat until all of the chocolate is melted and smooth. Dip the bottom of each macaroon into the chocolate and press into the chocolate about halfway up the macaroon. Use a fork to help lift it out of the chocolate. Transfer to the cooling rack and allow to sit at room temperature until the chocolate hardens and sets up, about 20 minutes.
  • Fill each macaroon with about 1 teaspoon of the pineapple filling. Store and refrigerate in an airtight container for up to 3 days.

  • In a heavy saucepan stir together the egg whites, the sugar, the salt, the vanilla, and the coconut, sift in the flour, and stir the mixture until it is combined well. Cook the mixture over moderate heat, stirring constantly, for 5 minutes, increase the heat to moderately high, and cook the mixture, stirring constantly, for 3 to 5 minutes more, or until it is thickened and begins to pull away from the bottom and side of the pan. Transfer the mixture to a bowl, let it cool slightly, and chill it, its surface covered with plastic wrap, until it is just cold. Drop heaping teaspoons of the dough 2 inches apart onto buttered baking sheets and bake the macaroons in batches in the middle of a preheated 300°F. oven for 20 to 25 minutes, or until they are pale golden. Transfer the macaroons to a rack and let them cool.
  • In a small metal bowl set over a pan of barely simmering water melt the chocolate, stirring until it is smooth, remove the bowl from the heat, and dip the macaroons, 1 at a time, into the chocolate, coating them halfway and letting any excess drip off. Transfer the macaroons as they are dipped to a foil-lined tray and chill them for 30 minutes to 1 hour, or until the chocolate is set. 5 cups shredded unsweetened coconut (be generous)
1 1/2 cups coconut cream (such as Coco Lopez)
1/4 teaspoon salt
1/2 teaspoon coconut, flavor (optional)
1/3 cup coconut milk powder (optional)
1 1/2 cups semi-sweet chocolate chips
2 1/2 tablespoons butter (or margarine)
2 tablespoons light corn syrup (or honey)

Steps:

  • Preheat the oven to 350°F Lightly grease a baking sheet, or line with parchment.
  • In a medium bowl, mix together the coconut, coconut cream, salt, and coconut flavor, stirring till thoroughly combined.
  • Add the coconut milk powder, stirring to combine.
  • Drop the sticky mixture in ping pong-sized balls (about 1 1/2") onto the prepared baking sheets. It helps to use a tablespoon cookie scoop or small ice cream scoop here.
  • For best results, pack the coconut mixture into the scoop; each ball should weigh about 1 ounce.
  • You can space the balls fairly close together on the baking sheet; they only need about 3/4" to 1" between them.
  • Bake the macaroons for about 10 minutes; they won't brown. You may see the merest hint of brown on top.
  • Remove from the oven, and cool completely on the baking sheet.
  • To make the coating, heat the chocolate chips, butter, and corn syrup until the chips are very soft. A microwave oven works well, as does a saucepan set over very low heat.
  • Dip half of each cooled macaroon into the chocolate.
  • Set the macaroons back on the baking sheet, and allow the chocolate to set completely before serving.
  • To store, place in one layer in a closed container.
  • They'll keep for 2 or 3 days, but will gradually become less moist as they sit.

2 cups granulated sugar
4 egg whites, lightly beaten
1 cup thinly sliced almonds, toasted
1 # bakers dipping chocolate (chocolate bark), melted (see note)

Steps:

  • Preheat oven to 350 degrees. Line baking sheets with parchment paper. In a stand mixer with a paddle attachment, mix almond paste and sugar on medium speed until crumbly, about 2 minutes. Add egg whites and mix about 1 minute. Add almonds and mix about 1 minute. Using a 1-ounce scoop (about a heaping tablespoon), drop dough onto lined baking sheets. Space cookies about 2 inches apart. Using a lightly moistened finger, gently press each cookie until flattened. Batter will be sticky. Bake in preheated oven 15 minutes, or until just lightly browned. Remove from oven and cool completely on the baking sheets. When cool, dip half of each macaroon into the melted chocolate, then return it to the parchment paper. Mmmm... these were so sweet, moist and flaky. I have always loved coconut macaroons and dipping them in chocolate makes them so much better. A perfect treat to make for a bake sale or to take to a luncheon.

1 14 ounce(s) package sweetened shredded coconut (about 5 cups)
4 large egg whites
2/3 cup(s) sugar
1/3 cup(s) all purpose flour, spooned and leveled
1/4 teaspoon(s) salt
1/2 teaspoon(s) vanilla
- chocolate semi-sweet squares melted for coating bottom of cookie

Steps:

  • Heat oven to 325 degrees. In a medium bowl, combine the coconut, egg whites, sugar and flour, salt and vanilla. Drop packed tablespoonfuls of the mixture onto parchment-lined baking sheets, spacing them 1-inch apart. Bake, rotating the baking sheets halfway through, until lightly golden, 25-30 minutes. Cool slightly on the baking sheets, then transfer to wire racks to cool completely.
  • For Dipping: 6 or 8 squares of chocolate melted in microwave. Use more if needed. Dip bottoms of cookie and put on parchment sheet to dry. After completely dry and cooled you can store in airtight container. Will keep for 5 days.

Number Of Ingredients 12

3 egg whites
Dash salt
1-1/2 cups confectioners' sugar
2-1/2 cups unblanched almonds, finely ground
CHOCOLATE BUTTERCREAM:
7 tablespoons sugar
7 tablespoons water
4 egg yolks, lightly beaten
2/3 cup unsalted butter, softened
1 tablespoon baking cocoa
CHOCOLATE DIP:
9 ounces semisweet chocolate, chopped and melted

Steps:

  • Place egg whites in a small bowl; let stand at room temperature for 30 minutes. Line baking sheets with parchment paper.
  • Preheat oven to 350°. Add salt to egg whites; beat on medium speed until soft peaks form. Gradually add confectioners' sugar, 1 tablespoon at a time, beating on high until stiff glossy peaks form and sugar is dissolved. Fold in almonds.
  • Drop by rounded teaspoonfuls 2 in. apart onto prepared baking sheets. Bake 8-12 minutes or until firm to the touch. Cool 5 minutes before removing to wire racks.
  • For buttercream, combine sugar and water in a small heavy saucepan. Bring to a boil; cook over medium-high heat until sugar is dissolved. Remove from heat. Whisk a small amount of hot mixture into egg yolks; return all to pan, stirring constantly. Cook 2 minutes or until mixture is thickened and reaches 160°, stirring constantly. Remove from heat. Cool to room temperature.
  • In a small bowl, beat butter until fluffy, about 5 minutes. Gradually beat in cooked sugar mixture. Beat in cocoa until smooth. If necessary, refrigerate until buttercream reaches spreading consistency.
  • Spread buttercream over bottom of each cooled cookie. Refrigerate until firm, about 15 minutes. Dip bottom of each cookie in melted chocolate, allowing excess to drip off. Place on waxed paper; let stand until set. Store in an airtight container in the refrigerator.
  • Yield: 6 dozen.

2/3 cup sweetened condensed milk
1 large egg white
1½ teaspoons vanilla
1/8 teaspoon salt
3½ cups sweetened coconut
For the chocolate dipping:
About 10 ounces bittersweet chocolate, chopped

Steps:

  • 1. Preheat the oven to 325°F. Line two baking sheets with parchment paper or a Silpat mat. 2. In a large bowl, stir together the sweetened condensed milk, egg white, vanilla extract, and salt. Stir until combined. Add in the coconut and mix well. 3. With a spoon, scoop up about 2 Tablespoons of the dough and place the dough balls on the baking sheets-about 2 inches apart. Form the cookies into mounds that have a peak at the top. Use your hands-squeeze the dough together and create a point at the top. Your hands will get sticky-you may need to wash them in between forming cookies. 4. Bake cookies one sheet at a time for 15 to 20 minutes. The cookies will turn golden brown. 5. Cool the cookies on the baking sheets for about 5 minutes or until they are firm and set. Remove with a spatula onto a cooling rack. 6. Melt chocolate in a microwave safe bowl. Make sure you keep stirring the chocolate every 20 seconds or so until chocolate is melted and smooth. You can melt the chocolate in a bowl over a pan of boiling water if you wish. Josh did it in the microwave though. 7. Lay out a large piece of parchment paper. Dip the cookies into the chocolate-just so the bottoms are covered in chocolates. Set dipped cookies on the paper to dry. Dip all of the cookies. If you have extra chocolate drizzle the tops with chocolate for fun:) 8. Let the cookies sit until the chocolate has dried.

2/3 C - sugar
6 TBS - flour
1/4 tsp - salt

  • Preheat oven @ 325 Degrees. Grease & flour Baking sheet. Combine; 1st 4 dry ingredients; Add egg whites, & flavoring, Mix well.
  • Drop by Tablespoons onto greased baking sheet 2 " apart, on greased and floured baking sheet.
  • BAKE; 20 minutes. or until edges are golden brown. Cool 3-4 min. on baking sheet.remove to wire rack. cool completely.
  • Melt Chocolate as directed on pkg. Dip cookies only 1/2 way into the dipping chocolate. place on wax paper until chocolate is firm & set.

2/3 cup whole hazelnuts, toasted and skins removed
3/4 cup sugar, divided
1 package (7 ounces) almond paste, crumbled
2 large egg whites
6 ounces semisweet chocolate, melted

Steps:

  • Preheat oven to 325°. Place hazelnuts and 1/4 cup sugar in a food processor; process until nuts are finely ground. Add almond paste, egg whites and remaining sugar; process until blended, about 3 minutes., Cut a small hole in the tip of a pastry bag; insert a large star pastry tip. Fill bag with hazelnut mixture. Pipe 1-1/4-in. rosettes 2 in. apart onto parchment-lined baking sheets., Bake until light brown, 12-14 minutes. Cool on pans 1 minute. Remove to wire racks to cool completely., Dip bottom of each cookie in melted chocolate; allow excess to drip off. Place on waxed paper-lined baking sheets; refrigerate until set, about 1 hour.
