This is an easy to make but wonderfully delicious treat. We pack them in tins and give as gifts during the holidays. Use your favorite nuts to top the cookies.

4 ounces saltine crackers
1 cup butter
1 cup dark brown sugar
2 cups semisweet chocolate chips
¾ cup chopped pecans

Steps:

  • Preheat oven to 400 degrees F (205 degrees C).
  • Line cookie sheet with saltine crackers in single layer.
  • In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
  • Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts. Cool completely and break into pieces.

1 sleeve saltine crackers (128 grams (about 40 crackers))
1 cup unsalted butter (226 grams (2 sticks))
1 cup dark brown sugar (213 grams)
6 ounces semisweet chocolate chips (170 grams)
6 ounces milk chocolate chips (170 grams)

Steps:

  • Preheat the oven to 400°F. Line a rimmed baking sheet with heavy-duty aluminum foil and spray with nonstick spray.
  • Lay the crackers (salt-side down) in a single layer until the sheet is covered.
  • Melt the butter in a nonstick pan set over medium-low heat.
  • Add the brown sugar and bring to a rolling boil.
  • Boil for 4-5 minutes, until lighter in color of bubbly.
  • Pour the butter/sugar mixture carefully over the crackers.
  • Bake the toffee for 5 minutes.
  • Let the toffee cool for 1-2 minutes, then sprinkle the chocolate chips on top.
  • Let sit for a few minutes until the chocolate melts (you might need to put the pan in the oven for 30 seconds or so to warm the chocolate chips).
  • Carefully spread the chocolate over the crackers until smooth and covers every cracker.
  • Let cool to room temperature, then cool in the refrigerator until cold.
  • Break the crackers into rough pieces.

A crunchy, sweet, and salty snack. You can easily change things up by using other flavored chips in place of the regular chocolate chips.

1 sleeve saltine crackers
1 cup butter (not margarine)
1/2 cup brown sugar
1 bag (12 ounce size) chocolate chips
chopped or crushed nuts, optional

Steps:

  • Preheat oven to 350 degrees F. Line a 9x13 cookie sheet with aluminum foil. Place the saltine crackers on the foil, single, not on top of each other. In a saucepan, melt together the butter and sugar. Pour the butter/sugar mixture onto the crackers. Place in the oven for 5 minutes. It will be bubbly when it comes out. Turn oven off. Pour the chocolate chips over the crackers. Place in the oven for about 1 minute to get the chips soft. Remove from oven and gently spread the chips, like icing. Sprinkle with nuts (if using). Place in the freezer for about 20 minutes. Break apart, like brittle. Store in an airtight container. Variation -- use a mixture of chocolate chips and peanut butter chips.

35 saltines
1 cup butter, cubed
1 cup packed brown sugar
2 cups semisweet chocolate chips
1 cup chopped pecans, toasted

Steps:

  • Preheat oven to 350°. Line a 15x10x1-in. baking pan with foil; grease foil. Arrange saltines in a single layer on foil., In a large heavy saucepan, melt butter over medium heat. Stir in brown sugar. Bring to a boil; cook and stir 3-4 minutes or until sugar is dissolved. Spread evenly over crackers., Bake 8-10 minutes or until bubbly. Immediately sprinkle with chocolate chips. Allow chips to soften for a few minutes, then spread over top. Sprinkle with pecans. Cool slightly., Refrigerate, uncovered, 1 hour or until set. Break into pieces. Store in an airtight container.

Cooking spray
35 to 40 saltine crackers
2 sticks (1 cup) butter
1 cup light brown sugar
8 ounces semisweet chocolate chips (about 1 1/3 cups)

Steps:

  • Preheat the oven to 425 degrees F. Line 1 large or 2 small jelly-roll pans with aluminum foil, spray with nonstick spray and arrange the saltines salt-side down in a single layer. In a medium saucepan, melt the butter and brown sugar together and boil until it turns a caramel color, a few minutes. Remove from the heat and pour over the crackers, covering them evenly. Put the jelly-roll pan into the oven and bake for 3 to 5 minutes, or until just bubbly, watching carefully. Remove from the oven and pour the chocolate chips over the crackers. When the chips melt a bit, spread them over the crackers with a knife. Transfer the pan to the freezer for 15 to 20 minutes, or until completely cold. They will form one big sheet. Break up into pieces. Store in an airtight container.

1 cup chocolate melting wafers or chocolate almond bark
2 heaping tablespoons chocolate-hazelnut spread, such as Nutella
1/2 cup very finely chopped mixed nuts (should include almonds)
15 to 20 snacks for dipping, such as very thin, plain Italian breadsticks, big pretzels, saltines or butter crackers
Topping suggestions: chopped almonds, chocolate chips, crushed mints and sprinkles

Steps:

  • Melt the chocolate wafers with the chocolate hazelnut-spread in a microwave or double boiler and stir together. Add the nuts and stir.
  • Break the breadsticks in half and dip the halves in the chocolate-nut mixture. Dip the other dippers--pretzels, saltines and crackers--to coat. Lay on waxed paper and sprinkle with chopped almonds, chocolate chips, crushed mints and/or sprinkles. Allow to set before serving.

48 saltine crackers
1 cup granulated sugar
1/2 pound unsalted butter
1 teaspoon vanilla
3 cups semisweet chocolate chips

Steps:

  • Heat oven to 350 degrees. Line a sheet pan or large cookie sheet with sides with heavy-duty aluminum foil. Arrange the crackers side by side in a single layer on the foil. In a small saucepan, melt the sugar and butter, stirring constantly until they bubble, about 2 to 3 minutes. Remove from heat and quickly stir in the vanilla. Pour evenly over the crackers and, using a spatula, spread to cover evenly.
  • Bake immediately. After 7 minutes, remove the pan from the oven and sprinkle the chocolate chips evenly over the crackers. Return to the top rack of the oven and bake for 2 minutes more. Spread the chocolate evenly over the crackers with a clean spatula. Cool for 20 to 30 minutes before transferring the tray to the freezer. The next day, peel off the foil and break the brickle into pieces. Keep frozen or refrigerated.
