Crunchy peanut butter balls dipped in chocolate. A favorite Christmas cookie in my family for at least three generations. Can be refrigerated, frozen, or eaten immediately.

1 ½ cups crushed cornflakes cereal
1 cup confectioners' sugar
½ cup smooth peanut butter
3 tablespoons butter, softened
1 ½ cups chocolate chips
1 tablespoon vegetable oil

Steps:

  • Mix corn flakes cereal, confectioners' sugar, peanut butter, and butter together in a bowl. Scoop mixture using a melon baller into balls and arrange on a plate or baking sheet. Refrigerate until solid, at least 3 hours.
  • Melt chocolate chips and oil in a microwave-safe glass or ceramic bowl in 30-second intervals, stirring after each melting, for 1 to 3 minutes.
  • Grease a baking sheet.
  • Gently roll peanut butter balls in the melted chocolate until evenly coated; arrange on the same baking sheet.

No Bake Chocolate Covered Peanut Butter Balls image

These are one of my family favorites.

Number Of Ingredients 6

(1) 18oz jar(s) of smooth or chunky peanut buter - i prefer smooth
(1) 16oz bag(s) of confectioners sugar
1/4 c butter, melted
chocolate almond bark or
chocolate candy melts or
12 oz semi-sweet chocolate chips

Steps:

  • 1. In a large bowl, stir together the peanut butter, confectioners sugar and melted butter until the mixture is crumbly. For the next step, the best way that I've found to make a smooth filling is to use your hands to mix everything together.
  • 2. Line a baking sheet with foil. Roll the peanut butter filling into 1 inch balls and line the baking sheet with rows of the balls. Set the baking sheet in the freezer for 5-7 minutes to chill the peanut butter balls for easier dipping.
  • 3. While the peanut butter balls are chilling, melt the chocolate in the microwave in a microwave safe bowl that is deep enough for dipping. I melted 6 blocks of chocolate almond bark at a time, stirring at 45 second intervals until smooth.
  • 4. Remove the baking sheet from the freezer. Insert a toothpick or wooden skewer into a peanut butter ball and then dip it into the chocolate, turning quickly to cover the entire candy.
  • 5. Place onto a second baking tray that has also been lined with foil. Swirl the chocolate on the top of each candy for a pretty design. Refrigerate until the chocolate had completely dried. Store the candies in a sealed container in the refrigerator.

2 cups peanut butter
3 Tbsp evaporated milk
1 lb powdered sugar
1 stick butter or margarine, melted
1 bag (12 oz.) semi-sweet chocolate chips
1/2 piece paraffin wax

Steps:

  • Mix peanut butter, milk, sugar and butter together into a soft dough and then roll into balls (about 1" or so)
  • Using a double boiler, melt chocolate chips and wax together.
  • Using a toothpick to pick up each peanut butter ball, dip each ball into chocolate and set aside on waxed paper to set. (Be sure to leave part of the peanut butter showing at the top so it looks like a Buckeye!)
  • Store in air tight container in a cool location or in the refrigerator

1 cup butter or 1 cup margarine
1 1/4 cups smooth peanut butter or 1 1/4 cups chunky peanut butter
1 lb powdered sugar
3 1/2 cups Rice Krispies
6 ounces chocolate chips
1/2 large Hershey Bar, chopped
2 1/2 inches paraffin wax, shaved

Steps:

  • Melt butter in a heavy 2 quart saucepan over low heat, Add peanut butter, stir until well blended.
  • Remove from heat.
  • Combine sugar and rice krispies in a large bowl.
  • Pour hot peanut butter mixture over all.
  • Mix thoroughly using hands.
  • Shape into 1 inch balls.
  • Place on wax paper lined cookie sheets.
  • Cover and refrigerate 1 hour.
  • Combine chocolate chips, Hershey Bar, and paraffin in top of double boiler.
  • Place over hot water until melted.
  • Dip chilled peanut butter balls in chocolate mixture to coat.
  • Place on wax paper lined sheets to set chocolate.
  • When dry, store in refrigerator.

2 cups creamy peanut butter
2 cups powdered sugar
4 tablespoons butter
4 cups Rice Krispies
1 (23-ounce) bag chocolate chips
4 tablespoons vegetable shortening

Steps:

  • Mix everything together and roll into balls and place on wax paper. Chill for 15 to 20 minutes. While peanut butter mixture is chilling, melt chocolate: 23 ounce bag of milk chocolate chips melted with 4 tablespoons vegetable shortening or chocolate melting chips. If using chocolate chips then you will need to place the balls in the fridge to set up. If using chocolate candy coating then they should set up at room temp. Cover balls with chocolate. Makes approximately 4 dozen.

These are NOT those goofy little nuts looking like a logo of a college football team, my husband contests loudly! We completely cover these peanut butter balls up with delicious chocolate for no mistaking them. We love them, hope you do too!

2 cup(s) peanut butter
1/2 cup(s) butter
1 box(es) powdered sugar (or 3 1/4 cups)
12 ounce(s) chocolate chips

Steps:

  • Blend peanut butter and butter together. Slowly add in powdered sugar until fully incorporated. The mixture will be really thick.
  • Melt chocolate chips in baby crock pot, double broiler or your favorite way. *I use Gulf Wax and dark chocolate chips. Dark chocolate is so YUMMY & makes me smile!
  • Roll peanut butter mixture into balls (1 in. or less depending on how much peanut butter vs. chocolate you prefer). Dip them in the chocolate as you go. Cool them on wax paper. *We freeze them because they are yummy that way, but they are yummy no matter what!
