1 3/4 cups all-purpose flour
1 3/4 cups sugar
3/4 cups high-fat cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1 cup buttermilk, shaken
1/2 cup vegetable oil
2 extra-large eggs, room temperature
1 1/2 teaspoon vanilla extract
1/2 cup freshly brewed strong, hot, coffee
1/2 cup hot water
Chocolate Fudge Cookie Bar, recipe follows
Marshmallow Meringue Frosting, recipe follows
2 1/2 cups chocolate sandwich wafer cookies, finely ground
6 tablespoons unsalted butter, melted
1/8 teaspoon salt
2 cups semisweet chocolate chips
1/2 (14-ounce) can condensed milk
1 3/4 cups sugar
1/4 cup water
3 large egg whites
1/4 teaspoon cream of tartar
1 1/2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Line cupcake pans with cupcake liners.
  • Sift together the flour, sugar, cocoa, baking soda, baking powder, and salt. Set aside. In a large bowl, combine the buttermilk, oil, eggs, and vanilla. Slowly add the wet ingredients to the dry. Slowly stir in the coffee and water.
  • Fill the cupcake pans about two-thirds full. Place a piece of Chocolate Fudge Cookie Bar in each cupcake. Bake until a toothpick inserted into the center of the cakes comes out clean, 9 to 11 minutes. Cool completely, and then frost with Marshmallow Meringue Frosting and enjoy!
  • Preheat the oven to 350 degrees F.
  • Combine the cookie crumbs and salt with the melted butter. Press into the bottom of a greased 13 by 9-inch pan. Bake for 8 minutes and let cool. Melt the chocolate chips and condensed milk together until completely melted and combined. Pour over the cookie crust and let cool.
  • Beat the sugar, water, egg whites, and cream of tartar over a double boiler until stiff peaks form, 10 to 12 minutes. Remove from the heat and stir in the vanilla. Continue beating until the frosting is thick, about 3 minutes.

3 Cups powdered sugar
3 Tablespoons of cocoa powder, don't level
1/3 cup butter, room temperature
1 teaspoon of vanilla
1/4 cup milk
1 Tablespoon sugar

Steps:

  • In a medium bowl combine 1 cup powdered sugar and cocoa powder. Using an electric mixer add butter and mix well. Add additional 2 cups of powdered sugar slowly until combined as well as vanilla. Mixture will be thick, set aside. In a small pot, heat milk and 1 Tablespoon sugar on stove until warm but not hot and sugar is dissolved. While mixer is on, slowly add milk to powdered sugar mixture and blend until smooth and creamy and desired consistency. Use immediately or store in an airtight container. If storing, you'll need to whisk it up again before spreading over cookies.

For the cupcakes:
1½ cups hot brewed coffee
¾ cup unsweetened cocoa powder
2¼ cups all-purpose flour
1½ tsp. baking soda
¾ tsp. baking powder

12 tbsp. (1½ sticks) unsalted butter, at room temperature
1½ cup packed brown sugar
¾ cup granulated sugar
3 large eggs
1 tbsp. vanilla extract
For the ganache:
6 oz. bittersweet chocolate, finely chopped
½ cup heavy cream
For the peanut butter cookie frosting:
9 tbsp. unsalted butter, at room temperature
1½ cups creamy peanut butter
3 cups confectioners' sugar

Steps:

  • To make the cupcakes, preheat the oven to 350. In a bowl or liquid measuring cup, whisk together the hot brewed coffee and cocoa powder until dissolved. Set aside. In another bowl, whisk together the flour, baking soda, baking powder, and salt. In the bowl of an electric mixer, combine the butter and sugars. Beat on medium-high speed until light and fluffy, about 3 minutes. Blend in the eggs one at a time, scraping down the bowl as needed. Blend in the vanilla. With the mixer on low speed, add the dry ingredients in three additions alternating with the coffee-cocoa mixture, beginning and ending with the dry ingredients. Mix each addition just until incorporated, being careful not to overmix. Divide the batter between the prepared liners, filling each about two-thirds of the way full. Bake about 20 minutes. . When the cupcakes are cool, make the ganache by placing the chopped chocolate in a small bowl. Bring the cream to a simmer, pour over the chocolate, and let stand about 2 minutes. Whisk together until a smooth ganache forms. If needed, let cool briefly at room temperature to thicken slightly before using. To make the peanut butter cookie frosting, combine the peanut butter and butter in the bowl of an electric mixer and beat on medium-high for 1 minute. Add in the confectioners' sugar until fully incorporated. Mix until smooth, about 2 minutes. Scoop about 1 tablespoon of the peanut butter mixture and use clean, dry hands to form it into a patty. Use the tines of a fork to make the classic crisscross pattern on top of the "cookie". Repeat with the remaining peanut butter mixture. Use an offset spatula to spread a layer of ganache over the top of each cupcake. Place a peanut butter "cookie" on top of each cupcake.

Baked brownies (store-bought, boxed, or from scratch; whatever you prefer)
Cookie dough frosting, recipe below
1/3 cup miniature semi-sweet chocolate chips for garnish
4 oz. semisweet chocolate chips
1/4 cup heavy cream
Allow both baked cupcakes and brownies to cool to room temperature. Cut brownies into 1" cubes. Prepare cookie dough frosting, and ice cupcakes generously. Sprinkle evenly with 1/3 cup miniature chocolate chips.
Make the ganache: heat 4 oz. semisweet chocolate chips and 1/4 cup heavy cream over a double boiler, stirring frequently, until it reaches a smooth consistency. Drizzle evenly over cupcakes.
