1 cup old-fashioned rolled oats
1/2 cup all-purpose flour
1/2 cup packed dark brown sugar
1/2 cup chocolate chips (milk or semisweet)
1/2 cup sweetened flaked coconut
1/4 teaspoon baking powder
1/4 teaspoon salt
5 tablespoons unsalted butter, melted and cooled
1 large egg
1/2 teaspoon vanilla

Steps:

  • Preheat oven to 350°F.
  • Line a 9-inch square metal baking pan with a 12- to 14-inch-long sheet of foil, letting excess hang over sides, and butter foil in pan.
  • Toss together oats, flour, brown sugar, chips, coconut, baking powder, and salt in a large bowl. Beat together butter, egg, and vanilla with a fork in another bowl, then stir into oat mixture until incorporated. Spoon batter into baking pan, patting evenly.
  • Bake in middle of oven until set, about 25 minutes. Remove from pan by lifting ends of foil. Cool on a rack, then cut into 16 squares.

Number Of Ingredients 8

2 cups finely ground graham crackers (from 15 rectangles)
3 cups (10 ounces) finely shredded unsweetened coconut
5 ounces semisweet chocolate, finely chopped
2 ounces milk chocolate, finely chopped
1 cup plus 3 tablespoons granulated sugar
1 stick ( 1/2 cup) unsalted butter, cut into 2-inch pieces, plus more for pan
3 large eggs plus 5 large egg yolks
12 ounces cream cheese, room temperature

Steps:

  • Preheat oven to 350 degrees. Butter a 9-inch square baking pan. Line with parchment paper, leaving a 2-inch overhang on 2 sides. Butter parchment.
  • Stir together graham cracker crumbs and 2 cups coconut.
  • Place chocolates and 3 tablespoons sugar in a heatproof bowl, and set over a pan of simmering water. Heat, stirring, until melted. Add butter, and stir until melted and smooth. Remove from heat, and let cool slightly. Whisk in 1 egg.
  • Stir chocolate mixture into coconut mixture. Press evenly into prepared pan. Bake until set, 10 minutes. Transfer to a wire rack, and let cool in pan.
  • Using a mixer fitted with a whisk attachment, beat cream cheese and remaining cup sugar on high speed until very smooth and fluffy, about 5 minutes. Reduce speed to medium, and add egg yolks and remaining 2 eggs, 1 at a time, until well combined. Scrape sides of bowl. Beat on medium-high speed until completely smooth, about 3 minutes.
  • Pass mixture through a fine-mesh sieve into a bowl, and stir until smooth. Pour over cooled crust. Sprinkle remaining cup coconut evenly over the top.
  • Bake, rotating pan halfway through, until top layer is just set and coconut is golden brown, 40 to 45 minutes. Let cool completely in pan on a wire rack. Refrigerate, loosely covered, overnight.
  • Run a sharp knife around edges of pan, and use parchment to lift out cheesecake. Run a knife under hot water, and dry well. Use it to cut cheesecake into 1-inch squares, wiping knife clean between cuts.

3/4 cup (1-1/2 sticks) margarine or butter, softened, divided
3/4 cup sugar, divided
1-1/4 cups flour
2 Tbsp. whipping cream
1-3/4 cups coarsely chopped pecans
1 cup BAKER'S ANGEL FLAKE Coconut
1 pkg. (4 oz.) BAKER'S Semi-Sweet Chocolate, coarsely chopped

Steps:

  • Preheat oven to 350°F. Beat 1/2 cup of the margarine and 1/4 cup of the sugar in large bowl with electric mixer on medium speed until creamy. Add flour; beat until well blended. Press dough firmly onto bottom of ungreased 9-inch square baking pan. Bake 18 to 20 minutes or until edges are lightly browned.
  • Place remaining 1/2 cup sugar, remaining 1/4 cup margarine and the cream in medium saucepan; cook until margarine is melted and mixture is well blended, stirring frequently. Stir in pecans; set aside.
  • Sprinkle coconut and chocolate evenly over crust. Top with the pecan mixture; spread to evenly cover chocolate layer. Bake an additional 20 to 25 minutes or until golden brown; cool completely. Cut into 24 squares to serve. Store in airtight container at room temperature.

1 1/2 cups sugar
3 eggs
1 1/2 teaspoons vanilla
1 cup flour
3 tablespoons cocoa
2/3 cup chopped nuts
1 (14 ounce) can sweetened condensed milk
1 cup coconut
2 cups powdered sugar
2 tablespoons cocoa
4 tablespoons half-and-half
2 tablespoons butter
1 teaspoon vanilla

Steps:

  • Cream butter and sugar; add eggs and vanilla.
  • Mix flour, cocoa, and nuts.
  • Add to sugar mixture.
  • Spread into 9x13 pan.
  • Bake at 350* for 30 minutes.
  • Combine condensed milk and coconut.
  • Spread over cake, bake 15 minutes more.

100g butter , softened
100g caster sugar
2 eggs , beaten
140g self-raising flour
1 tsp baking powder
2 tbsp cocoa powder
2 tbsp milk
100g plain chocolate , broken into pieces
25g butter
100g icing sugar , sifted
100g desiccated coconut

Steps:

  • Heat oven to 180C/fan 160C/gas 4. Butter and line the base of a 20cm square baking tin. Beat together the butter and sugar until pale and creamy, then beat in the eggs. Add 1 tbsp of the flour if the mix starts to curdle.
  • Sieve in the flour, baking powder and cocoa and fold in with a metal spoon. Stir in the milk. Scrape mix into the tin and level the top. Bake for 18-20 mins or until the cake springs back when pressed. Allow to cool in the tin.
  • To make the icing, put the chocolate, butter and 4 tbsp water in a pan and gently heat until melted. Allow to cool slightly, then beat in the icing sugar.
  • Remove cake from tin and peel away paper. Cut into 16 squares. Dip the squares into the icing, then roll in the coconut. Allow to set on cooling rack.

1/3 cup flour
1/2 cup melted butter

1 (7 ounce) package flaked coconut
1 (12 ounce) package chocolate chips
2 tablespoons peanut butter
chopped peanuts (to garnish)

Steps:

  • Set oven to 350 degrees.
  • Prepare an ungreased 13 x 9-in baking pan.
  • Combine first 4 ingredients.
  • Press mixture into ungreased baking dish.
  • Bake for 10 minutes.
  • Combine milk and coconut; mix well, spread over crust.

Steps:

  • Melt butter in 9in square pan on stove top. Remove from heat and add graham crumbs and mix with fork until all the butter is absorbed and the crumbs are moist. Press down into pan to form the crust. Make layers of chocolate chips, coconut and walnuts. Top with condensed milk- spread over the top thoroughly. Bake in a preheated oven at 350 degrees for 25 minutes

13 small (2-inch) wheatmeal biscuits such as Carr's or ten 5- by 2 1/2-inch graham crackers
3/4 stick (6 tablespoons) unsalted butter
2 cups sweetened flaked coconut (about 5 ounces)
1/4 teaspoon salt
12 ounces fine-quality bittersweet chocolate (not unsweetened)
2 large egg yolks
1 cup heavy cream
confectioners' sugar for dusting

Steps:

  • Preheat oven to 350° F. In a food processor pulse biscuits or crackers until finely ground. Melt butter and in large bowl stir together with crumbs, coconut, and salt until combined. Firmly press crumb mixture evenly onto bottom of a 9-inch square baking pan and bake in middle of oven until golden, about 15 minutes. Cool crust completely in pan on a rack. Chop chocolate. In a double boiler or a metal bowl set over a saucepan of barely simmering water melt chocolate, stirring until smooth. Remove top of double boiler or bowl from heat and cool chocolate 15 minutes. In a small bowl lightly beat yolks. In a saucepan heat cream over moderate heat until it just boils and whisk 1/2 cup into yolks, whisking constantly. Add mixture to remaining cream and cook over moderate heat, whisking, until an instant-read thermometer registers 160° F. Whisk custard into chocolate until just smooth and pour evenly over crust, smoothing top with a small metal offset spatula or rubber spatula. Chill confection, covered, at least 4 hours, or until firm. With a sharp thin knife cut confection into 36 squares. Squares keep, layered between sheets of wax paper in an airtight container and chilled, 1 week. Using star shapes cut out of parchment paper as a stencil, dust squares with confectioners' sugar.
