Calling all chocolate lovers and novice bakers: This one's for you. These chocolate drop cookies are straight from grandma's recipe box, but they definitely don't require her wealth of baking expertise to make yourself. Drop cookies, made from soft dough and dropped onto a baking sheet in balls, are a simple, old-fashioned treat that are prime for personalization. If you like nuts, add them in. Prefer mint chocolate chips to semi-sweet chips? Feel free to substitute. No matter what you add, you're sure to end up with a soft, cake-like cookie that packs on the chocolate flavor. Plus, once you pile on the chocolate icing, it's nearly impossible to have just one.To drop the cookies on your baking sheet, try using a tablespoon cookie scoop. Not only will it help keep your fingers clean, but it will also make sure your cookies come out even.

1/2 cup shortening
1 egg
1 cup sugar
3/4 cup buttermilk
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 cup cocoa
1 3/4 cups flour
1/2 teaspoon salt
1-2 cups semi-sweet chocolate chips
1 cup nuts (optional)
1/4 cup butter, softened
2 ounces cream cheese, softened
1 teaspoon vanilla
2 tablespoons cocoa
1 1/4 cups powdered sugar
1 tablespoon milk

Steps:

  • Make the Cookies: Mix shortening, sugar, and egg thoroughly. Stir in buttermilk and vanilla. Sift in dry ingredients and stir. Stir in chocolate chips and nuts if desired. Drop cookies onto prepared baking sheets using a tablespoon cookie scoop. Space cookies 2 inches apart. Bake for 8-10 minutes at 375°.
  • Make the Frosting: Cream together cream cheese and butter. Add vanilla and cocoa. Beat until smooth. Add powdered sugar, and mix until smooth. Add milk, adding more if needed for desired consistency. Spread frosting over cookies once completely cooled.

3/4 cup shortening
1 cup sugar
4 large eggs, room temperature
1/2 cup 2% milk
1 teaspoon vanilla extract
4 cups all-purpose flour
1/2 cup baking cocoa
2 teaspoons ground cinnamon
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon ground cloves
1/2 cup chopped walnuts
GLAZE:
2-1/4 cups confectioners' sugar
2 teaspoons light corn syrup
3 to 4 tablespoons 2% milk
Sprinkles, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Beat in eggs, milk and vanilla. In another bowl, whisk flour, cocoa, cinnamon, baking soda, baking powder and cloves; gradually beat into creamed mixture. Stir in walnuts., Shape level tablespoons of dough into balls; place 1 in. apart on ungreased baking sheets. Bake until bottoms are light brown, 10-12 minutes. Remove from pans to wire racks to cool completely., For glaze, in a large bowl, mix confectioners' sugar, corn syrup and enough milk to reach desired consistency. Dip tops of cookies into glaze; if desired, decorate with sprinkles. Let stand until set. Store between pieces of waxed paper in airtight containers.

Note: The vegetable shortening should be melted and cooled. Don't over bake the cookie should still be a little soft (not mushy) when you take it out of the oven.

2 1/2 cups flour
3 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup cocoa

Steps:

  • Preheat oven to 350.
  • In a large stainless steel bowl, with a wooden spoon, mix together 2 cups of the flour, the baking powder, baking soda, cocoa, cloves, nutmeg and cinnamon. Make a well in the center and set aside.
  • In an electric mixer with a wire whisk, beat eggs and sugar. Add milk and melted shortening. Mix well.
  • Pour egg mixture into the well and begin to mix with a wooden spoon.
  • With a wooden spoon, mix in the remaining 1/2 cup flour. This will produce a slightly sticky dough. Drop from teaspoon onto cookie sheet spacing 2 inches apart.
  • Bake for 8-10 minutes or until lightly browned. Remove cookies onto wire rack to cool then frost with Chocolate Clove Frosting (to follow) Let frosting dry for few hours before serving. Store frosting cookies in an airtight container lined with wax paper between layers.
  • You may freeze "unfrosted" cookies in a heavy duty freezer bag until ready to use. Thaw out and frost.
  • CHOCOLATE CLOVE FROSTING: Mix all ingredients with electric mixer until well combined and smooth. Using a butter knife, frost the tops of the cookies. NOTE: If the frosting is too stiff to spread, add a few drops of water to it and dip your butter knife in water before spreading.

1 cup unsweetened cocoa powder (such as Hershey's®)
¼ cup baking powder

1 teaspoon salt
1 large orange, zested
½ cup vegetable shortening (such as Crisco®)
½ cup margarine (such as Parkay®)
5 eggs
1 teaspoon vanilla extract, or to taste
¼ cup orange juice
¼ cup whole milk
½ (8 ounce) package cream cheese, softened
½ cup chopped walnuts
3 tablespoons whole milk, or more as needed
1 teaspoon orange juice, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Whisk flour, white sugar, cocoa powder, baking powder, cinnamon, cloves, allspice, and salt in a large bowl. Stir orange zest into flour mixture. Mix vegetable shortening and margarine into dry ingredients, using your hands, until mixture is crumbly.
  • Beat eggs and vanilla extract in a bowl with an electric mixer until foamy; add egg mixture, 1/4 cup orange juice, and 1/4 cup milk to flour mixture and knead dough in the bowl until thoroughly combined and dough doesn't stick to your hands, about 8 minutes. Dough will be stiff. Knead cream cheese thoroughly into dough, followed by walnuts.

  • Bake cookies in the preheated oven until lightly browned, 12 to 14 minutes. Cool cookies on racks.
  • Beat 3 tablespoons milk, 1 teaspoon orange juice, and 1 cup confectioners' sugar in a bowl until smooth; gradually beat in remaining confectioners' sugar until frosting is thick and drizzles slowly from a spoon.
  • Dip tops of cookies into frosting and place frosted cookies on racks with waxed paper underneath to catch drips. Let cookies dry overnight.
