Yield Makes 12 to 16 servings

Number Of Ingredients 16

Pie:
2 3/4 cups all-purpose flour
1 1/2 teaspoons salt
1 1/4 teaspoons baking soda
1 teaspoon baking powder
1 cup (2 sticks) unsalted butter, softened
1 1/2 cups packed light brown sugar
1/2 cup granulated sugar
3 large eggs
1 tablespoon vanilla
3 cups semisweet chocolate chips
2 cups chopped walnuts (optional)
Whipped Cream:
2 pints (4 cups) heavy cream
1/4 cup confectioners' (powdered) sugar
1/2 cup miniature semisweet chocolate chips

Steps:

  • 1. Preheat oven to 350°F. Grease two 9-inch pie plates; set aside.
  • 2. In a large bowl, sift together the flour, salt, baking soda, and baking powder. In the bowl of an electric mixer, cream together butter, brown sugar, and granulated sugar. Add the eggs, one at a time, beating until incorporated. Beat in the vanilla. Add flour mixture, a little at a time, and mix until fully combined. Fold in the 3 cups chocolate chips and, if desired, the walnuts. Divide the dough between the prepared pie plates and smooth the tops with a spatula.
  • 3. Bake about 30 minutes or until pies are golden and slightly firm to the touch but still soft. If the pies begin to darken too much before they are baked through, cover with foil and continue baking. Let pies cool completely on a wire rack.
  • 4. While the pies cool, whip the cream until soft peaks form (tips curl). Add the confectioners' sugar and whip until just combined. Fold in the chocolate chips. Refrigerate whipped cream until ready to use. Spread the whipped cream over the pies and serve.

For when you can't decide if you want pecan or chocolate pie. :) Please note: you need to TEST to see if the pie is set before removing it from the oven. I use a knife. If it comes out clean, it is set. This can take longer than the 50-55 minutes mentioned. I have found it is best to cover the pie crust with foil strips for the first 30 minutes or so to keep it from getting too brown while the filling cooks.

4 eggs
1 cup sugar
1 cup light corn syrup
1 teaspoon vanilla extract
1/2 cup butter, melted
1 cup pecans, chopped
1/2 cup semi-sweet chocolate chips
1 (10 inch) unbaked pastry shells
vanilla ice cream (optional)

Steps:

  • In a mixing bowl beat eggs, sugar, corn syrup and vanilla. Add butter and mix well. Stir in pecans and chocolate chips. Pour into pie shell.
  • Bake at 350 F for 50-55 minutes or until set. It is important for it to be set *before* you remove it from the oven. It will not set afterward if you haven't baked it long enough. Serve with ice cream if desired.

Number Of Ingredients 13

1 cup butter
1/2 cup vegetable shortening
3/4 cup sugar
1 3/4 cups brown sugar
3 eggs
1 teaspoon vanilla
3 3/4 cups flour
2 teaspoons baking soda
1 teaspoon salt
12 ounces semi-sweet chocolate chips
1 cup milk chocolate chips
3 ounces squares bittersweet chocolate, chopped
1 cup almond butter brickle

Steps:

  • Preheat oven to 375 degrees.
  • With an electric mixer beat butter and shortening.
  • Add sugars, beat until fluffy.
  • Add eggs and vanilla.
  • Mix dry ingredients together and add to wet mixture.
  • Fold in chips.
  • Drop by 1/4 cup's full onto greased cookie sheets.
  • Bake 12-15 minutes.
