2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 cup vegetable oil spread
1 cup Splenda® Brown Sugar Blend
2 large eggs
1 tablespoon vanilla extract
1 cup semisweet chocolate chips or sugar free chocolate chips

Steps:

  • Preheat oven to 375°F. Line baking sheets with parchment paper.
  • In a bowl, combine flour, baking powder, baking soda, and salt.
  • In a mixing bowl, mix together vegetable oil spread and Splenda Brown Sugar Blend.
  • Mix in eggs one at a time. Stir in vanilla extract.
  • Mix in flour mixture, then fold in chocolate chips.
  • Drop dough by rounded tablespoons onto baking sheets.
  • Bake for 11-13 minutes. Allow cookies to cool slightly before transferring to wire racks to cool completely.

1 tsp Baking Soda
17 tbsp Butter (-softened to room temp)
1 cup Splenda (-see post for alternatives, use a granular sugar alternative that measures 1:1 with sugar and can be baked with.)
1/2 cup Surkin Gold
2 Eggs (- room temperature)
1 tsp Vanilla Extract
1 cup Sugar Free Chocolate Chips (- see post for details)

Steps:

  • Start by preheating your oven to 350 and prepping a cookie sheet for nonstick.
  • In a medium sized mixing bowl, use a fork or a whisk to mix together the flour and baking soda. Set this bowl aside. Next, in a large mixing bowl, cream together the butter and the sugar alternatives (white and brown alternatives).
  • Stir in the dry ingredients from the medium mixing bowl (flour and baking soda) until just blended Then stir in the eggs and the vanilla extract. Do not over mix. Then fold in the chocolate chips.
  • Bake your cookies for 10-12 minutes or until they begin to brown. Then allow them to cool on a baking rack.

1 teaspoon salt
1 cup butter, softened
3/4 cup Splenda granular
3/4 cup coconut sugar
1 teaspoon vanilla extract
2 large eggs
2 cups semisweet chocolate morsels or 1 (12 ounce) package semisweet chocolate morsels

Steps:

  • PREHEAT oven to 375°F.
  • COMBINE flour, baking soda and salt in small bowl.
  • Beat butter, coconut palm sugar, splenda and vanilla extract in large mixer bowl until creamy.
  • Add eggs, one at a time, beating well after each addition.
  • Gradually beat in flour mixture.
  • Stir in chocolate chips.
  • Drop by rounded tablespoon onto baking sheets (I use parchment paper on mine).
  • BAKE for 9 to 11 minutes or until golden brown. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.
