After first trying this years ago my 2nd son declared -who needs banana bread?! - and this became our favorite choice for doing away with overripe bananas. The recipe originally had an optional chocolate glaze, I've always skipped it and just added a light dusting of confectionary sugar. This is a pretty sturdy cake which makes it great for picnics, potlucks and lunch bags - the same son recently took 1/2 a cake with him for the drive back to S.CA! An extra note - seeing some of the comments - this is not a tall cake it only rises a littel more than half way up the pan. Ovens are different - go with a shorter cooking time and check to see if needs more.

1 1/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup cocoa powder
1/4 teaspoon salt
1 teaspoon instant coffee (optional) or 1 teaspoon espresso powder (optional)
1/2 cup butter
1 cup brown sugar
2 eggs
1 cup banana, very ripe and mashed, about 3
1 cup chocolate chips

Steps:

  • Preheat oven to 350 degrees, grease or spray a bundt pan and lightly dust with cocoa powder.
  • Mix together dry ingredients, set aside.
  • Cream butter, add sugar and eggs, mix well,then add bananas and mix briefly.
  • Mix in dry ingredients until incorporated, don't over mix, stir in chocolate chips.
  • Pour into prepared pan and bake 50- 60 minutes until it tests done, cake will just start to pull away from edges.
  • Cool slightly then remove from pan.
  • Your supposed to let it cool all the way then dust with confectionary sugar, but my kids always slice it warm, which is good with vanilla ice cream .
  • Note:.
  • I always use a pan release spray and dust with the cocoa, and have almost never had a problem with the cake sticking. If greasing the pan - do it well and use a bit more cocoa as you would flour.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a Bundt pan.
  • Prepare batter according to instructions on cake mix package. Stir in 1 1/2 cups chocolate chips. Reserve remaining chips.
  • Pour batter into Bundt pan. Bake at 350 degrees F (175 degrees C) for 35 to 40 minutes, or until toothpick inserted into center of cake comes out clean.

1/2 c shortening
1 1/2 c sugar
1 1/2 c (or approximately 3) very ripe bananas, smashed
2 large eggs
1/2 c sour cream
1 Tbsp vanilla
2 c flour
1 tsp baking soda

3/4 c chopped pecans (or nuts of your preference)
3/4 c mini chocolate chips
powdered sugar for dusting

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. In large bowl, cream shortening and sugar. Add bananas, eggs, sour cream and vanilla. Mix well.
  • 3. In small bowl combine flour, baking soda and salt. Add to banana mixture and combine well. Fold in nuts and mini chocolate chips.
  • 4. Spray bundt pan with non-stick spray. Pour cake batter into pan and bake on middle rack for 45-50 minutes, until wooden pick inserted in middle comes out clean.

  • 3.Mix the cocoa and chopped chocolate in a heatproof bowl. Pour boiling water over the chocolates and stir to melt.

3 cups (378 g) AP flour
1/2 tsp baking soda
3/4 tsp salt
2 cups mini chocolate chips
1/2 lb (2 sticks) unsalted butter, softened
3 cups sugar
6 large eggs
3/4 tsp peppermint extract
2 tsp vanilla
3 Tbs creme de menthe
1 Tbs heavy cream
3/4 cup low fat sour cream
For the glaze:
12 oz semi sweet chocolate chips
1/2 cup heavy cream
3-4 T creme de menthe, to taste
a few drops of peppermint extract, to taste

Steps:

  • 1. Preheat the oven to 325 F. Spray a nonstick bundt pan thoroughly with flour/grease mixture. Also spray some bundlettes or mini loaves for the excess batter. Set aside. 2. Whisk together the flour, baking soda and salt. Remove 1 tablespoon and toss with the chocolate chips. Set the chips and the flour mixture aside. 3. Whisk together the peppermint extract, vanilla, creme de menthe, heavy cream and sour cream. Set aside. 4. Cream the butter in large bowl of mixer on moderate speed for 4 mins. Add the sugar in 4 additions, beating for 1 minute after each portion is added. Add the eggs, one at a time, beating for 30 secs after each addition and scraping down the sides of bowl. On low speed, add the sifted flour mixture in 3 additions, alternating with sour cream mixture in 2 additions, beginning and ending with the flour mixture. Remember to keep scraping sides and bottom of bowl. Fold in the chocolate chips by hand. Try not to just eat the batter. 5. Scrape batter into prepared pan(s) and smooth top with rubber spatula. 6. How long you bake the cake will depend on the size(s). A 10 inch tube cake will take 1 hour and 15 minutes. A 9-10 inch bundt cake will take approximately 1 hour. 1 cup size bundlettes take around 25 minutes. You will just need to watch for whatever sizes you choose to make. 7. Bake the cake(s) for the recommended time, or until a toothpick inserted comes out clean (it may hit chocolate chip and be smeared with melted chocolate, which is fine). The baked cake will pull also slightly away from the sides of the pan. 8. While the cake is baking, make the glaze. Combine all ingredients into a small saucepan over low heat. I was looking for this recipe on here, but could only find the ones with chocolate pudding. So I just made my own up with ingredients I knew that that recipe included. This cake is so moist, but so full of flavor!!! It works for most people, as it is not too rich with a ton of chocolate, but just enough. It is great for last minute company or when you need a dessert quickly. This makes a yellow cake with chocolate chips and then can use optional chocolate glaze.

  • Allow cake to cool completly.
  • For optional glaze, put butter, chips and light corn syrup in microwave safe container (I use 1 cup glass measuring cup) and cook on high for 20 second . Stir and if all chips and butter are melted, glaze is smooth, then drizzle over cake, if not, microwave 10 seconds longer and stir. Allow glaze to cool and harden before covering cake with plastic wrap.

This recipe is one that my husband's family passed to me and it is absolutely wonderful and easy. Everyone that tries it loves it. Hope you do too!

Number Of Ingredients 8

1 (18 1/4 ounce) box yellow cake mix
1 (3 1/2 ounce) package instant vanilla pudding
8 ounces sour cream (room temp.)
4 eggs
1/2 cup Crisco cooking oil
1/2 cup water
1 (6 ounce) package chocolate chips, semisweet
4 ounces baker sweet cooking German chocolate

Steps:

  • Preheat oven to 350 degrees.
  • Mix all ingredients except chocolates in large mixing bowl- Beat 1/2- 2 minutes.
  • Grate German Chocolate bar (Or chop in a mini-chop or cuisinart-- this is much easier than grating).
  • Add grated chocolate and chocolate chips to mixture.
  • Pour into well-greased and floured bundt pan (most bundt pans are sized between 9" and 12" diameter).
  • Cook at 350 degrees for 50- 60 minutes.
  • Sprinkle with powdered sugar (if desired) when cool.

This cake is so moist but you must use Duncan Hines cake mix. When zucchini isn't available, it is just as good without it. I put a white chocolate or chocolate ganache on it.

1 box duncan hines devil's food cake mix
1 box instant chocolate pudding (small)
2 c zucchini, grated
1 tsp vanilla
4 eggs
3/4 c oil
1 c chocolate chips

Steps:

  • 1. Mix the dry ingredients; add all other ingredients and beat until well blended. Grease a bundt pan. Bake at 325 degrees for 1 hour - 1 hour 10 minutes.
  • 2. Ganache: 1 cup white chocolate chips or dark chocolate chips; 1/2 cup heavy cream. Mix in microwave for 20 minutes; stir; continue in microwave for about a minute, stirring at 20 minute intervals (until the chips are all melted). Allow to cool slightly; pour over cake. I have used both white and dark chocolate for this cake and it is very good with either one. This particular cake has the white ganache on it.

1 cup butter, at room temperature
3/4 cup light brown sugar
3/4 cup sugar
1 tablespoon vanilla
4 eggs
2 1/4 cups all-purpose flour
1/2 cup Dutch-processed cocoa powder
1 teaspoon baking soda
1/4 teaspoon baking powder
1 teaspoon salt
1 cup buttermilk
1 (12 ounce) bag peanut butter chips
1 tablespoon butter, melted
2 tablespoons peanut butter
2/3 cup powdered sugar
2 -4 tablespoons milk (2% or higher)

Steps:

  • Heat the oven to 350 F and spray a bundt pan with non-stick spray.
  • In the bowl of a mixer cream the butter, vanilla and both sugars until very fluffy, about 3 minutes at medium speed. Add the eggs, one at a time, and blend until they are just mixed.
  • In a separate bowl whisk together the flour, cocoa powder, baking powder, baking soda, and salt until well mixed.
  • Alternately add the flour mixture and buttermilk into the butter, in three additions, beginning and ending with the flour. Add the peanut butter chips and mix until evenly distributed. The batter will be thick.
  • Spoon the batter into the prepared pan and smooth the top, making sure the batter is even. Bake for 50 to 55 minutes, or until the center of the cake springs back when gently pressed and a toothpick inserted into the thickest part of the cake comes out with only a few crumbs clinging to it.
  • Cool the cake in the pan for ten minutes before turning out onto a wire rack to cool.
  • While the cake cools prepare the glaze.
  • In a bowl whisk together the butter and peanut butter until well mixed. Whisk in the powdered sugar and two tablespoons of the milk and whisk until smooth. Add more milk, a few teaspoons at a time, until the glaze is pourable but still fairly thick.
  • Once the cake has cooled some, but still slightly warm, place a piece of parchment paper under the rack and pour the glaze over the top.
  • Let the cake cool completely before serving.

I had left over cucumbers and did not want them to waste so I shredded half of one and added it to a cake mix and added a few other ingredients to make a very moist different delicious dessert. My family really enjoyed it.

1 - 15.25 oz box betty crocker super moist cake mix, golden vanilla flavor
1 cup water
1/2 cup vegetable oil
3 eggs
1 tsp vanilla extract(don't have to use)
1/2 cucumber shredded
1/2 to 1 cup chocolate chips(depends on how much chocolate you like)can use mini chocolate chips too

Steps:

  • 1. PreHeat oven to 350 degrees. 325 degrees for a dark or nonstick pan. Grease bottom only of a 13 x 9 pan or the bottom and sides of all other pans. I used Bakers Joy baking spray on a bundt pan.
  • 2. In a medium bowl, beat cake mix, water, oil, eggs and add shredded cucumber and extract and mix on low speed 30 seconds and then on medium speed 2 minutes scraping bowl occasionally.
  • 3. Add your chocolate chips and then pour into pan. Bake 38 to 43 minutes for a 12 cup Bundt pan. Test cake for doneness, may need to add a few minutes more.
  • 4. Let cool. You can dust with powdered sugar or frost it with your favorite frosting flavor. Chocolate or Vanilla. Can enjoy with whipped cream. May add chopped walnuts or pecans too.
