1/2 stick unsalted butter, chilled, cut into 1/2-inch pieces, plus more for greasing pan
Eight 4 1/2-inch-long plain or almond biscotti cookies, coarsely broken (about 5 1/2 ounces)
1/4 cup packed dark brown sugar
3/4 cup cherry preserves or jam, such as Bonne Maman
12 ounces semisweet chocolate chips, such as Ghiradelli
1 cup heavy cream
1/2 cup dried cherries
3/4 cup chopped shelled pistachio nuts
Salt flakes, such as Maldon, optional

Steps:

  • For the crust: Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-inch springform pan. Combine the biscotti, butter and sugar in a food processor. Blend until the mixture forms moist crumbs that stick together when pressed. Firmly press the crumbs into the bottom of the prepared pan. Bake until golden and feels firm to the touch, about 15 minutes. Cool to room temperature, about 20 minutes. Spread the cherry preserves over the cooled crust leaving a 1/2 to 1-inch border.
  • For the filling: Place the chocolate chips in a medium bowl. Heat the cream in a medium saucepan over medium heat to just below a boil. Remove the pan from the heat and pour the cream over the chocolate chips. Stir until the chocolate is melted and the mixture is smooth. Add the dried cherries and 1/2 cup of the pistachios. Pour the chocolate filling over the cherry preserves and sprinkle the remaining 1/4 cup pistachios on top. Refrigerate for at least 5 hours or preferably overnight.
  • Loosen the tart from the sides of the pan by running a thin metal spatula around the edge. Unmold the tart and transfer to a serving plate. Sprinkle with a pinch of salt flakes, if using. Cut into wedges and serve.

1/3 cup packed light brown sugar
1/3 cup granulated sugar
1 teaspoon pure vanilla extract
1 large egg
1 1/4 cups all-purpose flour

1 cup chocolate chunks
1/2 cup dried tart cherries

Steps:

  • Line 2 baking sheets with parchment paper.
  • Beat the butter, brown sugar and granulated sugar with an electric mixer in a large bowl until fluffy. Add the vanilla and egg and beat to combine.
  • Whisk together the flour, baking soda and salt in a medium bowl. Add the flour mixture to the butter mixture and beat until just combined. Stir in the chocolate chunks and dried cherries.

1 tablespoon sugar
1/2 tablespoon salt
1 cup (2 sticks) plus 2 tablespoons butter, cold, diced
2/3 cup cold water
1/3 cup butter
3 tablespoons cornstarch
4 ounces almond paste
4 ounces powdered sugar
2 ounces dried cherries
2 ounces white chocolate, chopped
1 egg
2 Gala apples, sliced 1/4-inch thick
1/2 cup apricot preserves, melted
1 cup fresh cherries, pitted and diced
1/2 cup sugar
1/4 cup apple brandy
1 teaspoon pectin
3 drops lemon juice
2 cups sugar
2 cups water
4 large Granny Smith apples, chopped
Juice of 1 lemon
1 teaspoon citric acid

Steps:

  • For the pate brisee: In a food processor, blend the flour, sugar and salt with the butter until a coarse meal forms. Add the water and mix until a dough forms.
  • Form the dough into a disc, sandwich it between two sheets of parchment paper, and roll into a 1/4-inch-thick slab. Chill for 30 minutes.
  • Cut out circles of dough to fit six 4-inch tart pans; line the tart pans with the dough. Refrigerate until ready to use.
  • For the frangipane filling: Combine the butter, cornstarch, almond paste, powdered sugar, dried cherries, white chocolate and egg in a food processor. Process to form a paste.
  • For the tart: Fill the lined tart pans a little over halfway with frangipane filling. Top each with a nice fan of sliced apples.
  • Bake in a preheated 375-degree oven for 15 minutes. Lower the heat to 325 degrees and continue baking until golden on the edges and set at the center, another 15 minutes.
  • Remove from the oven and allow to cool before service.
  • Unmold the tarts and glaze with melted apricot preserves.
  • For the cherry-apple brandy compote: Mix the cherries, sugar, brandy and pectin in a saute pan and cook until thickened, about 10 minutes.
  • Add a few drops of lemon juice and cook for another minute.
  • Allow to cool, then puree and serve.
  • For the green apple sorbet: Make a simple syrup by boiling the sugar and water together. Let cool to room temperature, about 1 hour.
  • In a blender, puree the apples along with the simple syrup and the lemon juice until smooth; strain if a smoother texture is desired.
  • Add the citric acid, and taste ¿ add more citric acid if needed to make sure the flavor is bright.
  • Transfer the mixture to an ice-cream machine and spin according to manufacturer's instructions.
  • Serve the tarts with compote and sorbet.

Steps:

  • For the crust:

Steps:

  • Preparation of Cherry/ Cranberry filling: (Can be made a day ahead of time and refrigerated.)
  • Drain cherries reserving cherry juice. Combine sugar, cornstarch and (2/3 cup) cherry juice in a 2-quart saucepan.
  • Heat mixture until it comes to a full boil. Add cranberries. Let mixture simmer for 5 to 7 minutes until cranberries spilt open.
  • Add cherries and Kirsch and heat just until mixture returns to a boil. Pour mixture into a covered bowl and refrigerate until completely cooled.
  • Preparation of Cake:
  • Let butter and eggs come to room temperature (20-30 minutes). Preheat oven to 350°F
  • Prepare three round 9" x 1½" cake pans; lightly butter the sides and line bottoms with parchment paper.
  • Cream butter. Add sugar and cream together until light and fluffy. Add eggs one at a time, beating after each addition.
  • In a separate bowl, whisk together flour, cocoa, baking soda and salt. Add dry ingredients to butter mixture alternating with buttermilk.
  • Mix until well blended but do not over mix.
  • Divide batter evenly between 3 prepared pans. Bake 30 minutes or until top springs back when gently pressed and a wooden skewer inserted into the center comes out clean.
  • Cool 10 minutes, then remove from pans to a wire rack, peel off parchment paper and cool completely before assembling cake.
  • Preparation of the Whipped Cream filling: (prepare just before the cake is to be assembled.)
  • Combine gelatin and Kirsch in a small custard cup and let stand about 5 minutes to soften the gelatin.
  • Place the custard cup in a small pan of warm water and gently heat mixture over low heat, stirring until the gelatin has completely dissolved.
  • Remove from heat. Beat the cream in a chilled bowl until it holds soft peaks. Add powdered sugar and beat until it holds stiff peaks. Add in the gelatin mixture gradually beating until the mixture holds stiff peaks.
  • Preparation of Chocolate Icing: (Prepare after the rest of the cake is assembled and use immediately.)
  • Cream butter. Whisk together sugar and cocoa. Add sugar mixture alternating with Kirsch.
  • Beat mixture until fluffy adding only enough milk to make a thick spread-able icing.
  • Assembling the cake:
  • Place one layer, bottom side up, on a platter.
  • Spoon half the cherry/berry mixture onto the layer and allow the layer to absorb the syrup. Then cover with half the whipped cream mixture.
  • Place the second layer, also bottom side up, on top of the first layer. Cover with remaining cherry/ berry mixture (reserving about 5 cherries for garnishing the top of the cake.)
  • Top with the remaining whipped cream mixture.
  • Add third cake layer. Spread chocolate butter icing in the top of the third layer. Garnish with reserved cherries.

(Makes one 9-inch crust)
1 1/4 cups all purpose flour
1/3 cup powdered sugar
1/2 teaspoon salt
10 tablespoons (1 1/4 sticks) chilled unsalted butter, cut into pieces
2 large egg yolks
1 tablespoon cold water

Steps:

  • For Filling:
  • Preheat oven to 350°F. Roll out tart crust dough on lightly floured work surface to 13x10-inch rectangle. Transfer to 11x8-inch rectangular tart pan with removable bottom, pressing dough firmly into place. Fold overhang in and press, forming double-thick sides. Freeze crust 15 minutes.

  • Spread chocolate mixture evenly into crust, Refrigerate until almost set, about 20 minutes.
  • Arrange cherries decoratively over chocolate, pressing slightly to adhere. Rewarm remaining preserve mixture over low heat. Brush generously over cherries. Chill until chocolate sets, about 1 hour. (Can be made 1 day ahead. Keep chilled.)
  • For Crust:
  • Mix flour, powdered sugar and salt in processor. Add butter; process until mixture resembles coarse meal. Mix egg yolks and water in small bowl. Add to flour mixture and process until moist clumps form.
  • Gather dough into ball; flatten into disk for round tart or into square for rectangular tart. Wrap in plastic and refrigerate 1 hour. (Can be prepared 3 days ahead. Keep refrigerated. Let dough soften briefly at room temperature before rolling out.)
  • Garnish tart with mint and serve.

  • Place semisweet chocolate in microwave-safe 8-cup measuring cup or large bowl.
  • Place white chocolate in microwave-safe 2-cup measuring cup or medium bowl.
  • Heat semisweet chocolate in microwave, covered with waxed paper, on High 2 to 3 minutes or until almost melted, stirring once. Remove from microwave and stir until smooth.
  • Heat white chocolate in microwave, covered with waxed paper, on High 1 to 2 minutes or until almost melted, stirring once. Remove from microwave and stir until smooth.
  • Stir 1 cup pistachios and 1 cup cherries into semisweet chocolate.
  • On large cookie sheet, spread chocolate mixture to about 1/4-inch thickness.

2 Cups Light Cream

WARM CHERRY and BLUEBERRY RUBY PORTO SAUCE:
Cherries
Blueberries
3 Tablespoon of agave,maple syrup or honey
1/4 cup Merlot
1/4 cup Ruby Red Porto Wine
1 Tablespoon Cornstarch
1/8 teaspoon Vanilla Extract

Steps:

  • 1. To make tart shell, place Almond Meal (or pulverized nuts), maple syrup, and butter in bowl and fold until properly mixed. Place parchment paper in 8-10 inch tart pan with removable bottom. 2.Preheat oven to 375F 3. Butter the sides of pan for easy removal. 4.Press mixture into tart pan. 5. Bake crust for 15-20 min or until golden brown. 6. Set up 2 double boilers 7. Place chocolate in a double boiler and melt. 8. In other double boiler heat cream until scalding hot. 9. Beat egg yolk into the boiler with chocolate. (chocolate will slightly harden and clump it's ok it will smooth out again once you add the cream). 10. Pour scalding hot cream into the chocolate and stir or beat until all the chocolate is smooth again. 11. Pour mixture into shell and chill tart for at least 2 hours 12. To decorate, cut out a stencil of a pattern and place over the tart. Pour powdered sugar into a sifter and sprinkly lightly over the stencil. Remove stencil and serve. SAUCE: 1. If cherries and blueberries are frozen; thaw, drain and save the juice. 2. Pour juices from cherries into glass cup and add merlot and Porto to measure 1 cup. 3. Stir 3 tablespoon of honey and 1 tablespoon cornstarch in heavy small saucepan until no lumps remain. 4. Gradually whisk in wine mixture, then cherries and blueberries. 5. Cook over medium-high heat until cause boils, thickens and is translucent, stirring frequently, about five minutes. 6. Remove from heat. Stir in vanilla extract. 7. Spoon warm sauce over Ganache tart and serve immediately.

Steps:

  • For the crust: Add the graham cracker crumbs, melted butter and cocoa powder to a mixing bowl and mix together well.
  • Press mixture firmly into the bottom and around the edges of a tart tin (rectangle 13 3/4 x 4 1/2 inches or circle 9 1/2 inches). Place in the fridge to chill.
  • Chop the unsweetened chocolate bar into small chunks and combine with chocolate chips in a bowl. Set aside.

2/3 cup powdered sugar
1/2 teaspoon almond extract
1 egg
1 package (3 ounces) cream cheese, softened
1 3/4 cups Original Bisquick™ mix
2/3 cup miniature semisweet chocolate chips
1 can (21 ounces) cherry pie filling
1/4 cup white baking chips
2 teaspoons shortening

Steps:

  • Heat oven to 400°. Mix powdered sugar, almond extract, egg and cream cheese in medium bowl. Stir in Bisquick. Roll or pat dough into 12-inch circle on ungreased cookie sheet. Flute edge if desired. Bake 8 to 10 minutes or until crust is light golden brown.
  • Sprinkle chocolate chips over hot crust. Bake about 1 minute or until chips are melted; spread evenly. Cool 5 minutes. Gently loosen and transfer to serving plate.
  • Spread pie filling over chocolate. Heat white baking chips and shortening over low heat, stirring frequently, until smooth; drizzle over pie filling.

1/2 cup water
1/2 cup sugar
1 cup (packed) dried Bing (sweet) cherries
1/3 cup kirsch (clear cherry brandy)
Crust
1 cup (2 sticks) unsalted butter, room temperature
1/2 cup sugar
1 large egg
1 teaspoon vanilla extract
2 cups all purpose flour
5 tablespoons unsweetened cocoa powder
1/2 teaspoon salt
Filling
3 large eggs
1/3 cup dark corn syrup
1/4 cup (1/2 stick) unsalted butter, melted
1 teaspoon vanilla extract
1/2 teaspoon (scant) salt
1/2 cup sugar
6 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
Powdered sugar
Unsweetened cocoa powder

Steps:

  • For fruit:
  • Stir 1/2 cup water and sugar in heavy medium saucepan over medium heat until sugar dissolves and syrup comes to boil. Add cherries. Remove mixture from heat; cool 30 minutes. Mix in kirsch. Cover and refrigerate 1 day.
  • For crust:
  • Using electric mixer, beat butter in large bowl until fluffy. Add sugar and beat until smooth. Beat in egg and vanilla. Sift flour, cocoa, and salt over; beat to blend. Using moistened fingertips, press dough over bottom and up sides of 11-inch-diameter tart pan with removable bottom. Cover and chill at least 1 hour and up to 1 day.
  • For filling:
  • Preheat oven to 350°F. Drain cherries, reserving cherry syrup. Sprinkle cherries in crust. Combine eggs, corn syrup, butter, vanilla, and salt in large bowl. Add sugar and 1/4 cup cherry syrup; beat to blend. Mix in chocolate. Pour filling into crust.
  • Bake tart until set in center, about 1 hour. Cool on rack 30 minutes. (Can be made 1 day ahead. Cover; store at room temperature.) Release tart from pan. Dust with powdered sugar and cocoa. Serve warm or at room temperature.

8 ounces bittersweet chocolate, finely chopped
4 ounces semisweet chocolate, finely chopped
4 tablespoons unsalted butter, cut into small pieces ( 1/2 stick)
1 cup heavy cream
3 tablespoons granulated sugar
1/2 teaspoon kosher salt
For the cherry-vodka sauce
2 (10 ounce) bags frozen cherries ( about 4 cups)
1/2 cup vodka
6 tablespoons granulated sugar

  • For the crust:
  • Heat the oven to 350 degreesF and arrange a rack in the middle.
  • Combine butter, sugar, vanilla seeds, and salt in a large bowl and stir until evenly incorporated.
  • Add flour and stir until just combined and a soft dough forms.
  • Sprinkle dough over the bottom of a 9-inch tart pan with a removable bottom.
  • Using a measuring cup or your fingers, evenly press the dough into the bottom and up the sides of the pan (flour the cup occasionally to prevent sticking).
  • Cover the tart shell with plastic wrap and let it rest in the refrigerator for 30 minutes.
  • Once chilled, prick it all over with a fork and bake until golden brown, about 20 to 25 minutes.
  • Remove from the oven and cool completely on a wire rack.
  • For the filling:
  • Place chocolate and butter in a medium bowl; set aside.
  • Combine cream, sugar, and salt in a small saucepan over medium heat and stir until sugar dissolves and liquid is just at a simmer, about 4 minutes.
