CHOCOLATE-CHERRY ICE CREAM PIE WITH HOT FUDGE SAUCE
Steps:
- For sauce:
- Bring whipping cream to simmer in heavy medium saucepan; remove from heat. Add chopped chocolate; whisk until smooth.
- For crust and filling:
- Preheat oven to 350°F. Grind cookies in processor until coarse crumbs form. Add butter and blend until crumbs cling together and are evenly moistened. Press crumb mixture over bottom and up sides of 9-inch-diameter glass pie dish. Bake crust until slightly puffed and darker, about 10 minutes. Cool crust on rack. Combine cherries, sugar and brandy, if desired, in heavy medium saucepan. Stir over medium heat until sugar dissolves and mixture comes to boil. Reduce heat; simmer until thick syrup forms, stirring often, about 10 minutes. Remove from heat. Mix in almond extract. Cool to room temperature.
- Place ice cream in large bowl. Fold in cherry mixture and chocolate chips. Pack ice cream mixture into prepared crust. Cover pie and freeze. (Sauce and pie can be prepared 3 days ahead. Cover and refrigerate sauce. Keep pie frozen.)
- Rewarm sauce over low heat. Cut pie into wedges; serve with sauce.

- Put the white chocolate chips and sweetened condensed milk in a saucepan and warm over a very low heat, stirring continuously until the chocolate has melted and the mixture is smooth. Remove from the heat.
- Stir in the almond extract and then the glace cherries.
- Line a loaf pan with cling film (saran wrap) and pour the warm fudge mixture inches.
- Chill in the fridge for at least 3 hours, until completely set (ideally overnight).
- Then turn out of the pan and serve (this is a soft fudge so is best served slightly chilled).
- NB If desired, you can quarter extra glace cherries and scatter them over the top of the fudge before chilling to make it look a little more colourful!
CHERRY-FUDGE BROWNIES WITH CHOCOLATE SAUCE AND CHOCOLATE-DIPPED CHERRIES

- Make sauce:
- Press preserves through fine strainer into heavy medium saucepan. Add cream and bring to simmer. Remove from heat. Add chocolate and whisk until melted and smooth. (Can be made 2 days ahead. Cover; chill. Rewarm before serving.)
- Make brownies:
- Preheat oven to 350°F. Butter 11 x 7-inch metal baking pan. Stir chopped chocolate and butter in heavy small saucepan over low heat until melted and smooth; remove from heat. Whisk sugar, eggs and vanilla in medium bowl until blended; whisk in chocolate mixture. Sift in flour, baking powder and salt; stir to blend. Mix in dried cherries and chocolate chips, then preserves. Spread batter in prepared pan.
- Bake brownies until tester inserted into center comes out with some moist crumbs still attached, about 35 minutes. Cool completely in pan on rack.
- Cut brownies into 8 rectangles. Cut rectangles diagonally in half, forming triangles. Spoon warm sauce onto 8 plates. Place 2 brownie triangles atop sauce on each plate. Sift powdered sugar over. Garnish with chocolate-dipped cherries.

- Line a 9x9" pan, bottom and sides, with foil. Rub foil with butter or lightly spray with nonstick cooking spray. In a small bowl, whisk together confectioners sugar and amaretto. Set aside. Place granulated sugar, butter, and milk in a large pot. Bring to a full rolling boil over medium-high heat, stirring constantly. Continue stirring and boil for 3 minutes ~ this is important for the fudge to set up properly, so time it! {Make sure to stir constantly ... and to keep the mixture at a full rolling boil. - 1. Position oven rack in the lower middle of oven
- 2. Preheat to 350°F.
- 3. Butter a 12-inch Bundt pan or two 8 1/2-by-4 1/2-inch loaf pans. Sprinkle with flour and tap out the excess set aside. Or (as I do; in a small bowl, mix together 1 tbsp. cocoa and 1 tbsp. melted butter into a paste.)
- 4. Thoroughly coat the inside interior on pan with cocoa paste.
- 5. In a large mixer bowl, add cake mix, brownie mix. whisk together.
- 6. Add eggs, oil, and water (Baileys'). Beat on medium speed, beating until creamy.
- 7. Pour the batter into prepared Bundt pan, cake pan(s), or loaf pans.
- 8. Bake in preheated oven 350°F., for Bunt pan bake 50 minutes to 60 minutes. For loaf pans, bake 45 to 50 minutes.
- 9. Baking until a toothpick inserted into the center comes out clean.
- 10. Let cool in the pan(s) on a wire rack for 10 minutes.
- 11. Invert the cake onto the rack and lift off the pan. Let the cake rest, cool completely 3 hours.
- 12. Topping You can dust cake with confectioners' sugar, or leave plain. I make an easy glaze that's rich chocolate flavor and fantastic tasting.
- 13. Glaze Ingredients: 1 cup Ghirardelli Mini Semi-Sweet Chocolate Chips 2/3 cup heavy cream 2 tiny pinches of salt ½ tsp. vanilla
- 14. Place the chocolate chips in a medium bowl. Bring the cream and salt to a simmer, I heat cream up in the microwave 45 seconds. Pour the cream over the chocolate. Wait 60 seconds to soften the chocolate, and then stir until the chocolate is entirely melted and the mixture is smooth. Cool to thicken slightly adding vanilla extract.
- 15. When glaze is thick enough, pour over it over the top of the cake. Cool completely to set the glaze!
- 16. As I never heard anyone saying that they've made any of my recipes, or even comments, I hope you try this dessert!!!

- Spray a 9"x9" pan with nonstick cooking spray, then spray the inside of a heavy large saucepan.
- In the prepared saucepan, combine sugar, cream, butter & syrup, then cook over medium heat until sugar dissolves & mixture comes to a boil, stirring freuently. Re-incorporate any sugar crystals that accumulate on the sides of the saucepan.
- Attach a candy thermometer to side of pan, making sure bulb is submerged in sugar mixture, BUT NOT TOUCHING BOTTOM OF PAN!
- Comtinue cooking about 6 minutes or until sugar mixture reaches soft-ball stage (234 degrees F) on candy thermometer, stirring frequently.

CHOCOLATE COVERED CHERRY PIE FUDGE

- 1. Line bottom of an 8x8"inch pan with foil, spray with non-stick spray, set aside.
- 2. In a medium bowl mix the starter frosting and flavor packet, mixing well. set aside.
- 3. Chop cherries into small pieces, leaving some halves for the tops of fudge. In a food processor blend cookies, with butter and sugar on pulse setting until crumbly and pasty. Pour into pan and press firmly.
- 4. Melt white chocolate chips in a double-boiler or in microwave, stirring every 15-20 seconds. stop when almost melted and just continue stirring until all is melted.
- 5. Mix white mix, with other frosting mix, and cherries quickly, pour over the crumb crust. Cover and refrigerate at least 30 min. Take out of pan.. should be a solid block. move to cutting board to cut into pieces. Top each piece with a cherry half, and then melt the remaining 1/4 cup chips with 1 tablespoon of shortening to drizzle over the tops... Enjoy!!!

CHERRY-CHOCOLATE CAKE WITH FUDGE FROSTING
This is one of my grandmother's famous church ladies' luncheon recipes. The cake itself is simple and turns out moist with morsels of cherries throughout. With the cake being so simple, that allows time to make a fabulous frosting. For the frosting, use Recipe #281675 or your preferred chocolate frosting. (Note: Preparation time does not include time required for cake or frosting to set.) In response to one of my reviews, I have adjusted the ingredients to improve the cake--omitted the vegetable oil and replaced it with water and eggs. This recipe is an old one of my grandmother's. I have not made it myself and wonder if her recollection of the ingredients was incorrect. Hopefully the 1-star review doesn't discourage anyone from trying the adjusted cake recipe. I'm not sure what was so terrible about the cake--if it was too dry, too moist, etc. Please be brave, try and give me your thoughts! :)
