Yield Makes 1 (9-inch) pie to serve 8 to 10

Number Of Ingredients 19

For crust:
1 1/4 cups all-purpose flour
1/4 teaspoon kosher salt
10 tablespoons unsalted butter, chilled and cut into 1/2-inch cubes
3 to 5 tablespoons ice water
For filling:
1 1/4 cups pure maple syrup
6 tablespoons unsalted butter, melted
1 cup (packed) dark brown sugar
1/4 teaspoon kosher salt
3 large eggs
2 tablespoons brandy
3 ounces bittersweet (at least 60% cacao) chocolate, finely chopped
1 1/4 cups unsalted roasted cashews
For serving:
2 (8-ounce) containers crème fraîche
pie weights or dried beans
Special Equipment
9-inch glass or metal pie pan; pie weights or dried beans

Steps:

  • Make crust:
  • In food processor, pulse flour and salt until combined. Add butter and pulse just until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. Drizzle 3 tablespoons ice water evenly over mixture and pulse or gently stir with fork until incorporated.
  • Squeeze small handful of dough: If it doesn't hold together, add more ice water 1/2 tablespoon at a time, pulsing or stirring until incorporated. Do not overwork dough, or pastry will be tough.
  • Turn dough out onto lightly floured work surface, gather into ball, and flatten into disk. Wrap in plastic wrap and chill until firm, about 1 hour. (Dough can be made ahead and frozen up to 1 week. Defrost in refrigerator before proceeding.)
  • On lightly floured surface, roll out dough to 12-inch round, then transfer to pie pan. Trim edge, leaving 1/2-inch overhang, then fold overhang under and crimp edge decoratively. Prick bottom and side of shell all over with fork, then chill shell 30 minutes. (Shell can be assembled to this point ahead: Wrap entire pan well in plastic wrap and refrigerate up to 2 days, or freeze up to 1 week. Defrost in refrigerator before continuing.)
  • While shell chills, preheat oven to 425°F.
  • Line shell with foil and fill with pie weights or dried beans, then bake until pastry is set and pale golden on rim, about 15 minutes. Carefully remove foil and weights and bake shell until pale golden all over, 5 to 7 minutes more. Cool on rack.
  • Make filling and bake pie:
  • In medium saucepan over moderately high heat, simmer maple syrup, uncovered, until reduced to 3/4 cup, about 10 minutes. Carefully whisk in butter (mixture may splatter), then sugar and salt. Remove from heat and let cool to warm room temperature.
  • In medium bowl, whisk together eggs and brandy. Whisk egg mixture into cooled maple syrup mixture.
  • Preheat oven to 325°F. Spread chopped chocolate in even layer over bottom of prepared crust. Sprinkle nuts in second even layer, then pour filling over nuts. Bake until filling is puffed and center is just set, 45 to 60 minutes. Cool in pan on rack. (Pie can be made up to 1 day ahead. Let cool, then cover loosely and store at room temperature.)
  • To serve:
  • Using electric mixer, beat crème fraîche until it holds soft peaks. Serve with pie.

1 teaspoon vanilla extract
3 eggs
1 (16 ounce) package semi-sweet chocolate chips (1 cup)
1 cup cashew nuts
10 whole cashew nuts
whipped cream, if desired

Steps:

  • Prepare pie crust for one-crust filled pie using 9-inch pie pan.
  • Heat oven to 325 F.
  • In large bowl, combine corn syrup, sugar, margarine, vanilla and eggs; beat with wire whisk until well blended.
  • Reserve 2 tablespoons chocolate chips for topping.
  • Stir in remaining chocolate chips and cashew halves.
  • Spread evenly in crust-lined pan.
  • Bake at 325 F.
  • for 45 to 55 minutes or until pie is deep golden brown and filling is set.
  • Cover edge of crust with strips of foil after 15 to 20 minutes of baking to prevent excessive browning.
  • Cool 2 hours or until completely cooled.

I tried an experiment today and came up with a cashew pie. Toasting the nuts first brings out all their goodness.

1 - prepared pie crust, refrigerated (like pillsbury) or homemade
3 large eggs
1/2 cup(s) maple syrup
1/2 cup(s) dark corn syrup
1/4 cup(s) brown sugar, firmly packed
2 tablespoon(s) all purpose flour
1/4 teaspoon(s) salt
1/2 teaspoon(s) cinnamon
2 tablespoon(s) whiskey
1 teaspoon(s) pure vanilla extract
1 cup(s) cashews, roasted, unsalted and chopped
1/2 cup(s) dark chocolate, chopped

Steps:

  • Preheat oven to 350°. Roll out a single refrigerated pie crust into a 12" circle. Spray the bottom of a 9" pie pan and fit the crust into the pan. Don't stretch the dough. Fold the edge of the crust under and flute the crust. Chill in the freezer for 15 minutes.
  • Chop the chocolate into small chunks. Chop the nuts.
  • Combine the eggs, syrups, flour, brown sugar, salt, cinnamon, whiskey and vanilla with a whisk until well blended. Stir the nuts into the filling.
  • Sprinkle the chocolate on the bottom of the crust. Gently pour the filling over the chocolate. Bake for 30-40 minutes. Cover the pie crust edge with a pie shield if it starts to get too dark before the filling sets up. A knife inserted the middle of the pie should be almost clean.
  • Cool pie on a cooling rack for about two hours or refrigerate until ready to serve. Garnish with whipped cream or vanilla ice cream.

3/4 cup light corn syrup
1/2 cup sugar
3 tablespoons butter or margarine, melted

1 cup semisweet chocolate chips
1 cup cashew halves
10 whole cashews
Whipped cream, if desired

Steps:

  • Heat oven to 325°F. Place pie crust in 9-inch glass pie plate as directed on box for One-Crust Filled Pie.
  • In large bowl, beat corn syrup, sugar, butter, vanilla and eggs with wire whisk until well blended. Reserve 2 tablespoons chocolate chips for topping; stir remaining chips and 1 cup cashews into corn syrup mixture. Pour into crust-lined pie plate, spreading evenly.
  • Bake 45 to 55 minutes or until pie is deep golden brown and filling is set, covering crust edge with strips of foil after 15 to 20 minutes of baking to prevent excessive browning. Cool completely, about 2 1/2 hours.
  • Meanwhile, cover cookie sheet with waxed paper. In small microwavable bowl, microwave reserved 2 tablespoons chocolate chips uncovered on High 45 to 60 seconds or until chips can be stirred smooth. Dip each whole cashew into chocolate; place on cookie sheet. Refrigerate until chocolate is set, 15 to 20 minutes.
  • Just before serving, garnish pie with whipped cream and chocolate-dipped cashews. Cover and refrigerate any remaining pie.
