2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
3 egg yolks
1/2 Almond Coconut milk (or any milk flavor of your choice)
1 1/2 cup scalded Almond Coconut Milk
1/2 Cup Semi-sweet chocolate chips
1/2 cup shredded coconut
1 teaspoon coconut extract
1 Tablespoon Butter
1 Teaspoon vanilla extract
Pre-cooked Shortcrust Pastry Pie Shell or Perfect Flaky Pie crust
Homemade whipped topping
shredded chocolate
pan toasted coconut

Steps:

  • In a medium saucepan sift sugar, starch, and salt.
  • Add egg yolks and 1/2 cup milk of choice.
  • Begin heating on low heat
  • Add 1 1/2 cup scalded milk. (Milk doesn't need to be scaled necessarily just hot. I heated mine in the microwave for 1-2 minutes).
  • Add chocolate chips, shredded coconut, and coconut extract.
  • Stir and continue to cook on medium heat until pudding consistency.
  • Don't overcook or pie will be too thick in texture.
  • Remove from heat as soon as it begins to come close to pudding consistency
  • Add butter and vanilla extract and stir until butter is melted.
  • Fill the pre-cooked pie shell.
  • Cover with plastic wrap and cool in the fridge several hours or overnight until completely cooled and set.
  • Top with whipped topping
  • Sprinkle with Shredded chocolate and toasted coconut
  • Serve and enjoy!

1 crust from 1 box (14.1 oz) refrigerated Pillsbury™ Pie Crusts (2 Count), softened as directed on box
3/4 cup light corn syrup
1/2 cup sugar
3 tablespoons butter, melted
1 teaspoon vanilla
3 eggs
1 cup semisweet chocolate chips
1 cup cashew halves
10 whole cashews
1 cup heavy whipping cream
2 tablespoons sugar
2 tablespoons unsweetened baking cocoa

Steps:

  • Heat oven to 325°F. Place pie crust in 9-inch glass pie plate; make a decorative edge on crust.
  • In large bowl, using whisk, beat corn syrup, 1/2 cup sugar, the melted butter, vanilla and eggs. Reserve 2 tablespoons chocolate chips. Stir in remaining chips and cashew halves. Pour into pie crust.
  • Place pie on middle oven rack; place sheet of foil on rack below pie in case of spillover. Bake 45 to 55 minutes or until set and golden brown. Cool at least 4 hours.
  • In small bowl, microwave reserved 2 tablespoons chocolate chips on High 45 to 60 seconds or until melted. Dip large end of each whole cashew into melted chocolate. Place on wax paper-lined cookie sheet and refrigerate 15 to 20 minutes or until chocolate is set.
  • In medium bowl, combine whipping cream, 2 tablespoons sugar and the cocoa. Beat until stiff peaks form. Pipe whipped cream around edge of pie; garnish with chocolate-dipped cashews. Store in refrigerator.

For crust:
1 1/4 cups all-purpose flour
1/4 teaspoon kosher salt
10 tablespoons unsalted butter, chilled and cut into 1/2-inch cubes
3 to 5 tablespoons ice water
For filling:
1 1/4 cups pure maple syrup
6 tablespoons unsalted butter, melted
1 cup (packed) dark brown sugar
1/4 teaspoon kosher salt
3 large eggs
2 tablespoons brandy
3 ounces bittersweet (at least 60% cacao) chocolate, finely chopped
1 1/4 cups unsalted roasted cashews
For serving:
2 (8-ounce) containers crème fraîche
pie weights or dried beans

9-inch glass or metal pie pan; pie weights or dried beans

Steps:

  • Make crust:
  • In food processor, pulse flour and salt until combined. Add butter and pulse just until mixture resembles coarse meal with some small (roughly pea-size) butter lumps. Drizzle 3 tablespoons ice water evenly over mixture and pulse or gently stir with fork until incorporated.
  • Squeeze small handful of dough: If it doesn't hold together, add more ice water 1/2 tablespoon at a time, pulsing or stirring until incorporated. Do not overwork dough, or pastry will be tough.
  • Turn dough out onto lightly floured work surface, gather into ball, and flatten into disk. Wrap in plastic wrap and chill until firm, about 1 hour. (Dough can be made ahead and frozen up to 1 week. Defrost in refrigerator before proceeding.)
  • On lightly floured surface, roll out dough to 12-inch round, then transfer to pie pan. Trim edge, leaving 1/2-inch overhang, then fold overhang under and crimp edge decoratively. Prick bottom and side of shell all over with fork, then chill shell 30 minutes. (Shell can be assembled to this point ahead: Wrap entire pan well in plastic wrap and refrigerate up to 2 days, or freeze up to 1 week. Defrost in refrigerator before continuing.)
  • While shell chills, preheat oven to 425°F.
  • Line shell with foil and fill with pie weights or dried beans, then bake until pastry is set and pale golden on rim, about 15 minutes. Carefully remove foil and weights and bake shell until pale golden all over, 5 to 7 minutes more. Cool on rack.
  • Make filling and bake pie:
  • In medium saucepan over moderately high heat, simmer maple syrup, uncovered, until reduced to 3/4 cup, about 10 minutes. Carefully whisk in butter (mixture may splatter), then sugar and salt. Remove from heat and let cool to warm room temperature.
  • In medium bowl, whisk together eggs and brandy. Whisk egg mixture into cooled maple syrup mixture.
  • Preheat oven to 325°F. Spread chopped chocolate in even layer over bottom of prepared crust. Sprinkle nuts in second even layer, then pour filling over nuts. Bake until filling is puffed and center is just set, 45 to 60 minutes. Cool in pan on rack. (Pie can be made up to 1 day ahead. Let cool, then cover loosely and store at room temperature.)
  • To serve:
  • Using electric mixer, beat crème fraîche until it holds soft peaks. Serve with pie.

1 pkg. (4 oz.) BAKER'S Bittersweet Chocolate, broken into pieces

Steps:

  • Heat oven to 375ºF.
  • Prepare crust in 9-inch pie plate as directed on package for one-crust filled pie.
  • Whisk next 4 ingredients and 1/2 cup cream in medium bowl until blended. Add sugar and flour; mix well. Stir in nuts and coconut. Pour into crust.
  • Bake 40 to 45 min. or until top is puffed and lightly browned. Cool completely.

1 unbaked pie pastry (9 inches)
2/3 cup sugar
1/3 cup cornstarch
1/4 teaspoon salt
3 cups whole milk
3 large egg yolks
1 tablespoon butter
2 teaspoons vanilla extract
1/2 cup sweetened shredded coconut
CHOCOLATE LAYER:
3 tablespoons baking cocoa
3 tablespoons sugar
2 tablespoons whole milk
MERINGUE:
3 large egg whites
1/4 teaspoon cream of tartar
6 tablespoons sugar

Steps:

  • Bake pie pastry. Cool. , Meanwhile, in a saucepan, combine sugar, cornstarch and salt; stir in milk. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes more. Remove from the heat. Beat egg yolks lightly. Stir a little of the hot mixture into the yolks; return all to saucepan. Bring to a gentle boil. Top with coconut mixture and finish with remaining chocolate mixture. , For meringue, beat egg whites with cream of tartar until foamy. Gradually add sugar, beating until stiff peaks form. Spread over hot filling, sealing to edges of pie crust. Bake at 350° for 12-15 minutes or until lightly browned. Cool to room temperature; chill several hours before serving.

Chocolate, toasted coconut and cashews - what's not to love? They are finger lickin' good!

2 c semisweet chocolate chips
8 oz shredded coconut, toasted
2 c cashews, toasted

Steps:

  • 1. Line cookie sheets with wax paper and set aside. Mix together toasted coconut and cashews and set aside.
  • 2. Place chocolate chips in a large microwavable bowl. Microwave on high 2-3 minutes, or until melted.
  • 3. Add in coconut and cashews. Using a rubber spatula, stir until thoroughly mixed together.
  • 4. Form into clusters by placing heaping tablespoons of mixture onto the lined cookie sheets. Allow clusters to harden at room temperature for 1 hour or so, until firm enough to handle. Or place in refrigerator (especially on hot, humid days) until set.
  • 5. Store in an air tight container in the refrigerator.
  • 6. Note: to toast nuts and coconut Preheated oven to 325°. Toast cashews on a baking sheet in the preheated oven 10 minutes or so until golden. Cool completely. Toast coconut on baking sheet in the preheated oven for 10 minutes or until lightly golden around the edges. Cool completely.
