I received this recipe from an old Southern cook, a copy of a copy of a typed-up sheet from long ago, annotated with her notes (which included the word oleo instead of margarine). I've never seen another chocolate cake recipe like it, which instructs the cook to heat part of the cake batter on the stove, and pour the cooked icing over a hot cake. The result is a wonderfully rich (yet surprisingly light) chocolate sheet cake topped with a cooked chocolate and pecan frosting. This cake has an incredible homemade taste, yet is foolproof! Will make you forget Duncan Hines®!

2 cups white sugar
2 cups all-purpose flour
½ teaspoon salt
1 cup water
½ cup vegetable shortening
½ cup margarine
3 tablespoons unsweetened cocoa powder
1 teaspoon baking soda
½ cup buttermilk
2 eggs, beaten
1 teaspoon vanilla extract
1 (16 ounce) box confectioners' sugar
3 tablespoons unsweetened cocoa powder
½ cup butter
6 tablespoons milk
1 teaspoon vanilla extract
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease bottom and sides of a 9x13-inch pan.
  • Mix 2 cups white sugar, flour, and salt in a mixing bowl.
  • Combine water, vegetable shortening, margarine, and 3 tablespoons cocoa powder in a saucepan. Bring mixture to a boil over medium heat, stirring frequently. Pour liquid into flour mixture and stir well. Return saucepan to stove and set it aside.
  • Dissolve baking soda in buttermilk in a large liquid measuring cup and stir in eggs and vanilla extract. Pour egg mixture into cake batter and mix until fully combined. Transfer batter into the prepared pan.
  • Bake the cake in preheated oven until cake springs back when touched lightly with a finger or a tester comes out clean, 25 to 30 minutes.
  • While cake is baking, prepare icing using reserved saucepan. Combine confectioners' sugar, 3 tablespoons cocoa powder, butter, milk, vanilla, and pecans in saucepan. Cook and stir over medium heat until hot but not boiling. Pour icing over hot cake immediately after it comes out of the oven. Allow cake to cool completely on a wire rack.

This dessert is absolutely decadent! Because it is so sweet, I only make it for occasions such as Valentine's Day when you want to spoil your loved one. This recipe came from the test kitchens of Robin Hood Multifoods.

1 package caramel (about 75 to a package)
1 can sweetened condensed milk
1/2 cup butter
2/3 cup vegetable oil
4 ounces unsweetened baking chocolate, chopped
1 1/2 cups water
2 cups granulated sugar
2 eggs
2 1/2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons vanilla
1 1/2 cups coarsely choppped toasted pecans

Steps:

  • Heat oven to 350 degrees F.
  • In a heavy saucepan, combine the caramels, sweetened condensed milk and butter.
  • Over medium heat, cook and stir until melted and smooth.
  • Set aside.
  • Heat the oil and chocolate in a large saucepan or microwave in a large microwavable bowl at medium for 2 minutes or until melted.
  • Add the water, sugar, eggs, flour, salt, baking soda and vanilla to the chocolate mixture.
  • Beat with a fork until smooth and creamy, about 2 minutes.
  • Spread half the batter into a greased 13" x 9" cake pan.
  • Bake at 350 degrees F for 15 minutes or until the center is set.
  • Remove from the oven.
  • Spoon the caramel mixture evenly over the cake.
  • Spread the remaining batter evenly over the caramel layer.
  • Sprinkle with nuts.
  • Return to the oven and bake 40 minutes or until the cake springs back when lightly touched.
  • Cool completely before cutting.

1 cup lightly packed dark brown sugar
1/2 cup butter (no substitutes)
1/4 cup water
1 1/2 cups pecan halves
1 1/4 cups flour
3/4 cup chocolate baking cocoa
1 teaspoon baking powder
1/2 teaspoon instant coffee granules
1/4 teaspoon baking soda
1/4 teaspoon salt
1 cup butter, softened
1 cup sugar (or more if desired more sweet)
1 teaspoon vanilla
3/4 cup break-free liquid egg, well shaken
1/2 cup buttermilk

Steps:

  • Set oven to 350 degrees.
  • Prepare a buttered non-stick 10-inch tube pan.
  • To make the topping; combine brown sugar, butter and water in a saucepan; boil over medium heat, stirring often, until butter is melted, and mixture is glossy, 3-5 minutes.
  • Chop 1/2 cup of the pecans into the caramel mixture.
  • Spread evenly into the bottom of a buttered tube pan.
  • For the cake; sift together the flour, cocoa, baking powder, coffee granules, salt and baking soda.
  • Cream butter until fluffy.
  • Beat in sugar, vanilla and the Break-Free eggs.
  • Alternating, mix in the flour mixture and buttermilk into the butter/egg mixture.
  • Drop by spoonfuls of batter over the caramel mixture; spread evenly.
  • Bake for 40-45 minutes, or until the cake test done.
  • Turn cake pan over onto a platter, and let stand for 2 minutes.
  • Remove pan and quickly replace any pecans that might have stuck to the pan.
  • Cool completely before slicing.

8 ounces fine-quality bittersweet chocolate (not unsweetened)
3/4 stick (6 tablespoons) unsalted butter
2 tablespoons heavy cream
4 large egg yolks
7 large egg whites
1/4 teaspoon cream of tartar
Accompaniment: creamy caramel sauce

Steps:

  • Butter six 1-cup ramekins (4 by 2 inches) and coat with sugar, knocking out excess sugar.
  • Finely chop chocolate. In a small saucepan melt butter over low heat. Add cream and bring just to a boil. Remove pan from heat and add chocolate, stirring until smooth. Transfer mixture to a large bowl and stir in yolks.
  • In another large bowl with an electric mixer beat whites with cream of tartar and a pinch salt until they just hold stiff peaks. Gradually add 1/4 cup sugar, beating until just combined. Stir one fourth whites into chocolate mixture to lighten and fold in remaining whites gently but thoroughly.
  • Divide soufflé mixture among ramekins and smooth tops with a knife. Run tip of knife around edges of soufflés to aid rising. Soufflés may be made up to this point 1 day ahead and chilled, loosely wrapped in plastic wrap.
  • Preheat oven to 375°F.
  • Bake soufflés on a baking sheet in lower third of oven until puffed and surfaces are cracked, about 20 minutes.
  • Top soufflés with sauce and serve immediately.
