This is a wonderful, moist banana cake. This can also be made in mini loaf cake pans also, they freeze very well. This cake is even better the next day.

1/2 cup butter or 1/2 cup margarine
1 2/3 cups sugar (or more or less to suit taste)
2 eggs, slightly beaten
1 teaspoon salt
2 teaspoons baking powder
1/2 teaspoon baking soda
1/3 cup sour cream
1 cup mashed banana (about 3 medium)
2 cups cake flour
2 teaspoons vanilla
2 cups miniature semisweet chocolate chips
1/2-1 cup chopped walnuts (optional)

Steps:

  • Set oven to 350 degrees F.
  • Grease a 9 x 5-inch loaf pan OR 3 mini loaf pans.
  • In a bowl, cream together the butter or margarine and the sugar, until light and fluffy.
  • Add in the eggs and the salt; beat until well mixed.
  • In a small bowl, dissolve the baking powder and the baking soda in the sour cream, and add to the creamed mixture; mix well until blended.
  • With a wooden spoon, stir in the banana pulp.
  • Gradually, add in the flour mixture, vanilla; mix well with a wooden spoon, until well combined.
  • Add in the chocolate chips, and the chopped nuts (if using).
  • Transfer the batter into a prepared baking pan.
  • Bake for 1-1/2 hours (for 9x5" baking pan), or until cake test done.
  • For the mini loaf pans, bake for 45-50 minutes, or until they test done.

4 ripe bananas, peeled
250g caster sugar
2 eggs
140g softened butter
250g plain flour
2 tsp baking powder
100g walnut piece
100g chocolate chip

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a 900g/2lb loaf tin with baking parchment. In a large bowl, mash together the bananas and the sugar with the back of a fork. Add the eggs and mix well with an electric hand whisk until fully incorporated, then add the butter and mix for a couple mins more to blend everything together. Sieve in the flour and baking powder and fold together with a spatula, then add the walnuts and chocolate chips. Give everything one final mix before tipping into the lined loaf tin.
  • Bake for 1 hr 5 mins or until a skewer inserted into the middle comes out clean. Leave to cool slightly in the tin, then turn out and serve cut into thick slices, either warm or at room temperature. Any uneaten cake will keep in an airtight container for up to 3 days.

Steps:

  • In a large bowl cream together melted chocolate chips, butter, brown sugar and banana until smooth.
  • In a separate bowl combine flour, baking powder, baking soda, mix well.

  • Stir in nuts if using.
  • Spoon into greased and floured loaf pan.

2 tsp baking powder
3/4 tsp salt
1/4 tsp baking soda
1/2 c shortening
1/2 c sugar

3/4 cup creamy peanut butter
2 ripe bananas
1 cup heavy cream, whipped to stiff peaks (about 2 cups)
1/2 cup roasted salted peanuts, chopped
Nonstick cooking spray and waxed paper, for loaf pan

Steps:

  • Coat an 8 1/2-by-4 1/2-inch loaf pan with cooking spray; line with waxed paper, leaving overhang on both long sides. Set aside.
  • Melt chocolate; cool to room temperature. Meanwhile, in a food processor, puree bananas until smooth.
  • Stir peanut butter into cooled chocolate until combined, then stir in banana puree. Gently fold in whipped cream until combined. Pour into prepared pan; top with peanuts. Fold waxed paper over top; wrap tightly in plastic. Freeze until firm, at least 3 hours.

  • You can change the flavor of "chips". I used Butterscotch and they are great. BUT, I only added 1 cup for the whole recipe, so as not to increase the sweetness/fat/caloric value too much. 1 Cup was just fine!

  • Preheat oven to 350. Butter and flour two small loaf pans. (approx. 8"x4") Cream together the sugar and butter. Add the eggs and beat well. Mix in the sour cream, bananas and vanilla. In a separate bowl, combine the flour, baking powder, baking soda and salt. Add the dry mixture to the wet mixture and mix well. Mix in the chocolate chips. A little sour cream goes a long way when it comes to baking certain cakes I find, and this banana cake is a shining example. It held together nicely. It was moist with just the right amount of density. It didn't even have a strong banana flavor. The spices blended perfectly with the batter.

- 2 cups self-rising flour
- 1 teaspoon baking powder
- dash of cinnamon
- dash of nutmeg
- ½ cup white sugar
- ½ cup brown sugar
- 1 teaspoon vanilla
- 2 eggs
- ½ cup canola oil
- 3 ripe bananas
- ¼ cup whole milk
- ¼ cup sour cream
- ½ cup chocolate chips
- brown sugar topping
- 3 tablespoons butter
- 3 tablespoons oats
- 1 tablespoon flour

Steps:

  • Preheat oven to 350 degrees F. Grease a loaf pan and set the pan on a baking sheet. In a large bowl, sift together flour, baking powder, cinnamon and nutmeg. Set aside. In the bowl of your stand mixer, cream sugars, vanilla eggs and oil. Add bananas, milk, and sour cream. Gradually add the dry ingredients on low speed until a smooth batter forms. Stir in chocolate chips and pour batter into the prepared loaf pan. In a bullet blender, or in a small bowl combine all ingredients for the topping and blend together with a fork. 1/2 c. butter
1 2/3 c. sugar
2 eggs, slightly beaten
1 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
4 tbs sour cream
1 c. mashed ripe bananas
2 c. cake flour
1 tsp vanilla
2 c. mini chocolate chips

Steps:

  • Cream together butter and sugar until light and fluffy. Add eggs and salt. Mix well. Disolve baking powder and baking soda in sour cream, then add to creamed mixture. Stir in bananas. Gradually add flower, vanilla, and chocolate chips. Pour into well buttered and flowered loaf tins. Separate evenly into 2 loaf pans. Bake 350 for about 45-60 minutes. Once golden brown on top and has a little give to the touch, it's ready.

1 1/2 cups all-purpose flour
1/2 cup sugar
1/3 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup low-fat buttermilk
3/4 cup banana (mashed)
1/3 cup canola oil
2 teaspoons vanilla

Steps:

  • Preheat oven to 350°F.
  • Coat 9x5 inch loaf pan (or 12-cup muffin tin) with cooking spray.
  • Whisk together flour, sugar, cocoa, baking soda, and salt in a bowl.
  • In a separate bowl, whisk together buttermilk, mashed banana, oil and vanilla.
  • Fold buttermilk mixture into flour mixture.
  • Scoop batter into prepared pan(s). Bake loaf 50-60 minutes (or muffins 18-22 mins).
  • Cool 5 minutes in pan, before serving.

The cake mix makes this a cinch to put together in a hurry and I assure you, nobody will turn down this delicious, moist, treat.

1 box chocolate cake mix
3 ripe bananas
3 large eggs
½ cup water
½ cup corn oil
½ - 1 cup nuts or chocolate chips (optional)
2 tbsp. instant coffee granuals (optional)

Steps:

  • 1. Preheat oven to 350º F. Spray a standard size loaf pan with non-stick baking spray; set aside.
  • 2. In stand mixer, mix until well blended everything except nuts or chocolate chips (if using) - fold them in last.
  • 3. Pour batter into prepared pan and bake for 55 minutes or when tests done with wooden skewer.
  • 4. Once done, set on wire rack to cool for 20 minutes. Turn out onto wire rack and allow to cool completely before slicing.
  • 5. To store: Wrap in plastic wrap and refrigerate.
