CHOCOLATE APRICOT BUGS

1/2 cup chocolate chips
20 (about 6 ounces) dried apricots, such as Mariani Ultimate Apricots
Sixty 2 1/2-inch-long pieces thin black licorice, such as licorice laces
Special equipment: a wooden skewer

Steps:

  • Place 1/4 cup of chocolate chips in a small bowl. Place the bowl over a small pan of barely simmering water. Heat, stirring occasionally, until the chocolate is melted and smooth, about 2 minutes. Remove the pan from the heat.
  • Gently squeeze the sides of an apricot together until 3/4-inch thick. Using a wooden skewer, make a hole through the center of the side of the apricot and thread a piece of licorice through the hole. Repeat twice more on either side of the first hole. Gently flatten out the apricot to its original shape. Dip the blunt end of the skewer in the melted chocolate and place a very small dab of chocolate onto the flat side of 2 chocolate chips. Place the chocolate chips side-by-side on the end of the apricot to form 2 eyes. Repeat with the remaining ingredients. Allow the melted chocolate to harden, about 15 minutes, and serve.
  • Cook's Note: The bugs can also be made using dried prunes. Use red licorice lace for the legs and white chocolate chips for the eyes.

This is supposedly a recipe that Marie Antoinette took with her from Austria to France, where it became increasingly popular. It is traditionally baked in a special Kugelhopf mold, which gives it a festive look (it can be made in a tube pan) Thus it makes a delightful holiday bread. Kugelhopf is an excellent coffee cake or breakfast bread, especially with fresh butter and honey. It can also be served topped with fruit, and makes delicious toast indeed. I seached for this recipe for many years and finally found a Canadian Chef on the internet who was kind enough to give me this one... I get excited over this recipe because I am now 67 yrs old and I can remember my German Grandmother sitting at the kitchen table when I was 5 years old, beating this dough with a wooden spoon...what a wonderful memory and taste !!!

1 package active dry yeast
1/2 cup granulated sugar
1/2 cup warm water (100 to 115 degrees)
4 cups all-purpose flour
1/2 cup softened butter
1 tablespoon salt
6 eggs
3/4 cup light raisins
1/2 cup sliced almonds

Steps:

  • Dissolve the yeast with the sugar in the warm water and let it proof.
  • Sift the flour, putting 2 cups in each of two bowls.
  • Set one bowl aside.
  • Work together 2 cups of flour and the soft butter (this may be done in the electric mixer).
  • Mix in the salt and the eggs, one at a time, beating until very thoroughly incorporated.
  • In alternate batches, add the remaining 2 cups flour and the yeast mixture.
  • Mix in the electric mixer or with a wooden spoon until thoroughly blended and elastic, then stir in the raisins.
  • Put in a large, lightly floured bowl, cover with a towel, and let rise in a warm, draft-free spot until doubled in bulk, about 1 to 1 1/2 hours.
  • Punch the dough down.
  • Heavily butter a standard 10-inch Kugelhoph mold or a 10-inch tube pan and sprinkle half the sliced almonds around the bottom of the mold (the butter will make them adhere).
  • Pour or spoon half the dough into the mold, sprinkle in the rest of the almonds, and add the remaining dough.
  • Let rise again until doubled in bulk, about 1 hour.
  • Bake in a preheated oven at 475 degrees F.
  • for 10 minutes, then reduce the heat to 350 degrees and continue baking until nicely browned, about 40 to 45 minutes.
  • Remove from the oven and let stand for 3 minutes in the pan, then invert onto a cooling rack.

This is a quick homemade candy delicacy that can also be used as a tastier take on Chanukah gelt, inspired by a recipe in Martha Stewart Living. I used Ghirardelli bitterwsweet baking chocolate bars. 1 lb dried apricot
1 lb bittersweet chocolate, chopped
aluminum foil, candy wrappers (optional)

Steps:

  • Line two baking sheets with parchment paper.
  • Heat chocolate over a double-boiler. Allow the water in the boiler to get hot but not fully boil. Use a plastic spatula to scrape chocolate away from the sides. Remove from heat as soon as the chocolate is melted. If you prefer to use a microwave, melt the chocolate in a glass bowl in short intervals, stirring well with spatula.
  • Immediately add all the apricots to the pot melted chocolate, and stir gently until they are all coated fully. Carefully lift each piece out of the pot with a fork, allowing some of the excess chocolate to drip off. For a more sophisticated look, you can also try holding each apricot by one end with your fingers and dipping only half of it into the chocolate.
  • Place carefully on parchment-lined baking sheet. Refrigerate until the chocolate has become firm (20-30 minutes). Optionally, you can wrap individually in foil wrappers to give as gifts. Store in the refrigerator - If refrigerated, they can last up to a week (though they are best if eaten within 3 days).

1 1/2 cups apricot nectar
1 1/2 cups sifted all purpose flour
1/4 cup sugar
1/4 cup nonfat dry milk powder
1 envelope fast-rising dry yeast
Dough
1/2 cup (1 stick) unsalted butter, room temperature
1 cup sugar
2 large eggs
3 large egg yolks
3 tablespoons apricot-flavored brandy or apricot nectar
1 1/4 teaspoons salt
1 teaspoon vanilla extract
1/2 teaspoon ground ginger
1 envelope fast-rising dry yeast
2 tablespoons hot water (120°F. to 125°F.)
3 1/2 cups sifted all purpose flour
12 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
6 ounces moist dried apricots, quartered
2 tablespoons firmly packed golden brown sugar
1 1/2 teaspoons ground cinnamon
Powdered sugar
Whipped Cream
2 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
2 cups plus 2 tablespoons whipping cream
2 tablespoons sugar
3 tablespoons apricot-flavored brandy or apricot nectar

Steps:

  • For sponge:
  • Boil apricot nectar in heavy medium saucepan over high heat until reduced to 1 cup, about 5 minutes. Pour reduced nectar into large bowl. Cool to 120°F. to 125°F. Whisk in flour, sugar, milk powder and yeast. Cover tightly with plastic wrap and let rise in warm draft-free area until double in volume, about 30 minutes.
  • Meanwhile, prepare dough:
  • Generously butter 12-cup kugelhupf pan. Using electric mixer, cream butter with sugar in large bowl until fluffy. Beat in eggs and egg yolks 1 at a time. Beat in apricot brandy, salt, vanilla and ginger. Combine yeast and 2 tablespoons hot water in small bowl and stir until yeast dissolves. Mix yeast mixture and sponge into butter mixture. Gradually mix in 3 cups flour. Combine chocolate, apricots, brown sugar and cinnamon in medium bowl. Mix into dough.
  • Spoon dough into prepared pan. Cover tightly with plastic wrap and clean kitchen towel. Let stand in warm draft-free area until dough rises just to top of pan, about 3 hours.
  • Position rack in center of oven and preheat to 350°F. Bake kugelhupf until deep brown and cracking on top and tester inserted in center comes out clean, about 48 minutes. Cool on rack 20 minutes. Turn out onto rack and cool completely. (Can be prepared 1 day ahead. Return to pan, cover tightly and store at room temperature.)
  • For whipped cream:
  • Stir chocolate and 2 tablespoons cream in heavy small saucepan over low heat until chocolate melts and mixture is smooth. Cool. Beat remaining 2 cups cream and sugar in large bowl until soft peaks form. Add brandy and continue beating until stiff peaks form. Pour chocolate mixture over cream and fold together until whipped cream is lightly streaked with chocolate. Transfer to serving bowl; chill. (Can be prepared 8 hours ahead.)
  • Place kugelhupf on platter. Lightly sift powdered sugar over. Cut into wedges. Serve, passing whipped cream separately if desired.
