1/2 cup butter, softened
1-1/2 cups sugar
2 large eggs
2 cups all-purpose flour
2 tablespoons baking cocoa
1-1/2 teaspoons baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups unsweetened applesauce
TOPPING:
1 cup semisweet chocolate chips
1/2 cup chopped pecans
2 tablespoons sugar

Steps:

  • In a bowl, cream butter and sugar. Add the eggs, one at a time, beating well after each addition. Combine dry ingredients; add to the creamed mixture alternately with applesauce. Pour into a greased 13x9-in. baking pan. Combine topping ingredients; sprinkle over batter. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean.

At last, an easy-to-make "scratch" cake recipe that does not need frosting! Recipe has been modified from one given to me by a friend years ago... 6/30/07 NOTE: This is not a standard chocolate cake recipe nor a spice cake recipe. The cocoa and chocolate chips help add to the "dark chocolaty" flavor and appearance but the applesauce and spices give it a unique flavor addition, producing a dark, moist cake with a different flavor with the added bonus of being a no-frost cake.

1/2 cup oil
1 1/2 cups sugar
2 eggs, beaten
2 cups flour
1/2 teaspoon cinnamon
1/2 teaspoon salt
2 cups applesauce
1 1/2 teaspoons baking soda
4 tablespoons cocoa
1 1/2 teaspoons sugar
1/2 cup nuts, chopped
3/4 cup chocolate chips

Steps:

  • Grease and flour a 13x 9" baking pan.
  • In large mixing bowl, mix oil and 1 1/2 c sugar.
  • Add beaten eggs, flour (no need to sift), cinnamon, salt, applesauce, baking soda and cocoa and mix until well-blended.
  • Pour into pan and sprinkle with 1 1/2 T sugar, nuts (chopped walnuts or pecans) and 3/4 C chocolate chips.
  • Bake at 350 dg. for 30-40 mins, until top springs back when touched, covering with foil if top gets too brown.

1 1/4 cup natural cocoa powder
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon sea salt
2 large eggs
1 cup Mott's® Applesauce
1 cup granulated sugar
1 teaspoon vanilla extract
4 tablespoons unsalted butter (melted)

Steps:

  • Preheat the oven to 350 F and prepare a 9 inch round cake pan by either a) spraying it with a baking spray containing flour, b) buttering and flouring the pan, or c) buttering the pan and lining it with parchment paper.
  • In a bowl, combine the flour, cocoa powder, baking powder, baking soda, and salt, then stir thoroughly to combine. Set aside.
  • In a large mixing bowl, combine the eggs, applesauce, sugar, and vanilla. Stir to combine. Then, while whisking continuously, drizzle in the melted butter.
  • Add the dry mixture to the wet mixture and stir until combined. Batter will be very thick. Scrape the batter into the prepared cake pan and smooth out the top evenly.
  • Bake for about 25 minutes, or until a toothpick inserted in the middle comes out with moist crumbs but no wet batter attached.
  • Cool in the pan on a rack for 15 minutes, then set the cake on a rack and let cool completely. Store airtight for freshness.

1/2 cup unsalted butter, at room temperature
1/2 cup vegetable oil
1 3/4 cups granulated sugar
2 eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour

1 teaspoon salt
1/2 teaspoon ground cinnamon
1 1/3 cups applesauce
1/2 cup buttermilk
8 ounces semi-sweet chocolate chips

18 hazelnuts, toasted and peeled

Steps:

  • Preheat the oven to 325 degrees F.
  • Grease and sugar a 10-cup Bundt pan.
  • Beat the butter, oil and sugar with an electric mixer until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Beat in the vanilla.
  • In a separate bowl, sift the flour, cocoa, baking soda, salt and cinnamon.
  • Whisk the buttermilk and applesauce together.
  • Add the flour to the butter mixture, alternating with the applesauce mixture, mixing well after each addition.
