1 cup butter-flavored shortening
½ cup white sugar
½ cup light brown sugar
2 eggs
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
2 cups rolled oats
1 cup shredded coconut
¾ cup drained, dried, and chopped maraschino cherries
½ cup semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line baking sheets with parchment paper.
  • Beat shortening, white sugar, and brown sugar together in a bowl with an electric mixer until creamy and fluffy. Add eggs and vanilla extract; stir until well incorporated.
  • Mix flour, baking powder, baking soda, and salt together in another bowl; add to sugar mixture, blending until an even dough forms. Add oats, coconut, cherries, and chocolate chips until just mixed in.
  • Scoop rounded tablespoons of dough onto the prepared baking sheets.
  • Bake in the preheated oven until the edges are brown, 8 to 10 minutes. Let rest for 5 minutes, then transfer to a wire rack to cool.

1 cup unsalted butter, room temperature
1/2 cup confectioners' sugar
2 cups all-purpose flour
1/2 teaspoon salt
1 cup maraschino cherry, chopped
1/2 cup white chocolate chips (and or or dark chocolate chips)
1/2 tablespoon vanilla extract
8 ounces chocolate, chopped (optional)

Steps:

  • Cream the butter and the sugar.Mix the flour and the salt.Mix the dry ingredients into the wet until it starts forming larger clumps.
  • Mix in the maraschino cherries, white chocolate and vanilla extract.Form the dough into the shape that you want, wrap it in plastic and let it chill in the fridge for at least an hour.
  • Cut the log into 1/4 inch thick slices and place them on a parchment lined baking pan with one inch of space between them.
  • Bake in a preheated 325F oven until they just start to turn lightly golden brown on top, about 10-15 minutes.Let cool completely.Melt the chocolate in a double boiler. (optional).
  • Dip the cookies into the chocolate and place on a sheet of parchment paper and let cool until the chocolate sets. (optional).

1 cup unsalted butter, room temperature
1/2 cup powdered sugar
1/2 tablespoon vanilla extract
2 cups all-purpose flour
1/2 teaspoon salt
3/4 cup maraschino cherries-chopped (spread cherries on paper towel to drain well or you can use dried maraschino cherries)
2/3 cup chocolate chips

Steps:

  • Mix flour and salt, set aside. Cream 1 cup unsalted softened butter with 1/2 cup powdered sugar, mix in vanilla. Add flour and salt mixture and mix until it starts forming larger clumps. Mix in chocolate chips and maraschino cherries. Form the dough into the log and press it well or it will crumble when you slice the cookies (the log should be about 2 inch thick) Wrap it in the plastic wrap and chill in the fridge for at least 1-2 hour. Preheat the oven to 325°F and line baking sheet with parchment paper. Cut the log into 1/4 or 1/3 inch thick slices (if the slices crumbles, press it back together with your hands) and place them onto baking sheet with one inch of space between. Bake the cookies 10- 15 minutes (until they just start to turn lightly golden brown on top) Let them cool for 5 minutes on a baking sheet before transfer them to a rack to cool completely.

This cookie is loaded with chocolate and cherries! They are so moist and delicious.

Number Of Ingredients 8

3/4 cup sugar
1 1/2 cups butter, softened to room temp.
1 small egg
1 teaspoon almond extract
3 cups flour
1/8 teaspoon salt
11.5 ounces milk chocolate chips
16 ounces maraschino cherries, drained and rinsed and cut into thirds

Steps:

  • Heat oven to 375 degrees.
  • Cream together the sugar, butter, egg and almond extract until well blended and fluffy. Then add in the flour and salt and stir just until combined. Then add the chocolate chips. Gently fold in the cherries that have been cut up. Stir in carefully so the cherries don't break apart too much.
  • Chill the dough for about an hour so it will be easier to roll into balls.
  • Roll into about 1 1/2 inch balls and place on a cookie sheet lined with a silpat baking mat or parchment paper.
  • Bake for about 10 to 12 minutes or until lightly golden brown.
  • Cool on a cooling rack.
