This is a great, moist cake. Perfect as a base for cherries or berries. Makes a square pan or 6 Texas Sized Muffins, perfect for a small family or couple.

1 (9 ounce) box chocolate cake mix (jiffy)
1 egg
1/2 cup cold water
1 cup part-skim ricotta cheese
1 teaspoon almond extract
1/2 cup sugar

Steps:

  • Preheat oven to 350.
  • Grease and flour 9x9 or 6 jumbo muffin pan.
  • Mix cake mix, egg and water together and pour into prepared pan.
  • Mix ricotta, almond extract and sugar until well blended with hand mixer.
  • Place by spoonfuls on top of batter as close together and evenly as possible, or 2 tablespoons into each muffin.
  • Bake for 30-40 minutes.
  • Serve with berries or cherries.

Sweet Ricotta with Chocolate image

Ricotta cheese is lightly sweetened and mixed with chopped dark chocolate. Dip into it with your favorite store-bought biscotti or bake a batch of sturdy homemade cookies. A platter of fresh fruit, such as grapes and peaches, adds a light element to the meal.

2 pounds ricotta cheese
1/4 cup sugar
1/2 cup coarsely chopped semisweet chocolate (about 2 1/2 ounces)
1/4 cup chopped nuts or raisins (optional)
1 box store-bought biscotti, for serving
Fresh seasonal fruit, such as grapes and peaches, for serving

Steps:

  • Put ricotta in a large fine sieve set over a large bowl; let drain 20 minutes. Discard liquid. Transfer ricotta to a serving bowl. Stir in sugar until smooth. Fold in chocolate. Ricotta mixture can be refrigerated, covered, up to 8 hours. Stir in nuts or raisins, if desired, before serving. Serve with biscotti and fruit.
