This super tasty and healthy salad is also known as choban salad - from its Turkish name, çoban salatası.

1 medium-sized onion (peeled & finely chopped)
1 medium cucumber (washed, seeds removed & finely chopped)
1 large green pepper (or two finger peppers, seeded & finely chopped)
1 large tomato (seeded & finely chopped)
1 tsp sumac
1 small handful parsley (chopped)
small handful mint (chopped)
2 tbsp olive oil
1 lemon (juiced)
1 tsp apple vinegar
salt & pepper (to season)

Steps:

  • First of all, sprinkle the sumac over your chopped onion, give it a squeeze and add to a small mixing bowl.
  • Now add your cucumber, peppers and tomato. Mix gently.
  • Time for the parsley and mint. Mix those, too.
  • Add your dressing ingredients to a ramekin dish or similar and mix before pouring over your shepherd's salad.
  • If you're entertaining, transfer your shepherd salad to a clean serving bowl.

Coban Salatasi is a fresh and simple side salad made with sweet, juicy summer tomatoes, crunchy Turkish cucumbers, fresh green peppers, and crisp red onions.

3 small cucumbers ((peel and cut in small cubes))
3 tomatoes ((peel and cut in small cubes))
1 Turkish green pepper, or ½ green bell pepper, or 3 Padron peppers ((sliced))
½ red onion ((finely sliced))
1 clove garlic ((finely chopped))
½ cup flat-leaf parsley ((finely chopped))
2 tbsp extra virgin olive oil ((adjust it to your taste))
2 tbsp freshly squeezed lemon juice ((adjust it to your taste))
1 tbsp white wine vinegar or apple cider vinegar ((optional, adjust it to your taste))
⅓ TSP salt ((adjust it to your taste))

Steps:

  • Peel and cut the cucumbers into small dice. If using large cucumbers, deseed them before dicing. Place them in a bowl.
  • Chop the tomatoes the same size as the cucumbers and add them to the bowl. If you have the time, peel the tomatoes to make your salad even juicier.
  • Slice the Turkish peppers and the red onion, scatter them on top of the cucumbers and tomatoes.
  • Sprinkle on some finely chopped parsley and drizzle with some olive oil.
  • Lastly, pour the lemon juice and vinegar (if using) on and season your salad with some salt.

6 radishes, thinly sliced (optional)
3 green onions (white part only sliced) or 1 white onion, sliced into rings
1/2 cup flat-leaf Italian parsley, finely chopped
6 tablespoons lemon juice
1/4 cup olive oil
salt
pepper

  • Have all the vegetables cut into similar size, diced.
  • English cucumbers work best; remove seeds from larger ones.

50 g radishes or Turkish green peppers, roughly chopped

a handful (10 g) flat-leaf parsley leaves, finely chopped
a small handful (5 g) mint, finely chopped
2 Tbsp lemon juice
3 Tbsp extra virgin olive oil
salt and pepper
