HORSERADISH MASHED POTATOES WITH CHIVE BUTTER
Steps:
- Microwave the potatoes according to package instructions.
- In a small saucepan, heat 2 tablespoons butter with heavy cream and thyme sprigs. Bring to a simmer, then remove from the heat. Remove the thyme sprigs and discard. Set mixture aside.
- In a small bowl combine the remaining 4 tablespoons butter, chives, and season with a salt and pepper. Mix until well incorporated.
- Mash the potatoes lightly with a potato masher. Add in the cream mixture, horseradish and continuing to mash until desired consistency. Do not over mix or the potatoes will become gummy. Season the potatoes with salt and pepper. Transfer to a serving bowl and top with chive butter.
GARLIC CHIVE RED POTATOES
I made these tonight from a recipe found here on Zaar, but after changing enough of it, thought I would post how I made them. I am sure that you could use any other small potatoes, I just had red potatoes on hand!

Steps:
- Wash the potatoes well and slice them halfway. If they are large enough, slice them in half again. Lay all the slices in a large baking pan.
- Sprinkle the potatoes well with the seasonings.
- Melt the butter. Crush the garlic cloves into the melted butter and stir them well in the butter. Let them sit for about 30 seconds or so.
- Drizzle the garlic butter over the potatoes well and incorporate them all.
- Bake in the uncovered dish for about 40 minutes or so, until they are tender and golden brown.

AWESOME ROASTED POTATOES WITH SOUR CREAM DIP
The version of roasted potatoes my family loves. This one came about after trial and error LOL You can adjust the seasoning to your taste I like to marinade the potatoes for about 30 minutes before roasting

Steps:
- Wash and chunk potatoes. Can peel if you want. I usually don't.
- Mix all ingredients except the parmesan cheese and toss with potatoes.
- Pour into a baking dish.
- Marinade for 30 minutes.
- Bake at 350 for 60 minutes or until fork tender.
- Sprinkle with the cheese just before serving.
- Time depends on size of potatoes.
- NOTE: Depending on your personal likes you can mix the potatoes and oil/seasoings in a bowl,marinade then just spoon the potatoes into an oiled or sprayed baking dish and then drizzle with as much of the oil/seasoning mixtue as you would like to use.
- Sour Cream Dip.
- Mix all ingredients. Chill for an hour.

- -Preheat oven to 350°F.
- -Wash and dry red potatoes.
- -Cut half or quarters.
- -Treat a 2-qt casserole dish with nonstick cooking spray.
- -Toss potato chunks in olive oil, and place evenly in dish.
- -Distribute sour cream over vegetables.
- -Sprinkle with chives and salt-n-pepper to taste.

SOUR CREAM AND CHIVE POTATOES
I came up with this dish just the other day when my fiancé asked for a ham that night for dinner. I usually make regular old mashed potatoes with ham, but that night I just didn't feel like it. So I scrambled through my kitchen a bit and came up with these bad boys.

Steps:
- Preheat your oven to 350°F and line the bottom of a 9x9-inch square baking pan with foil (I use release foil, but if you're not, grease the foil).
- With a really sharp knife (if you know how to do it) or a mandolin, cut the potatoes just about paper thin (like potato chips); place slices in a bowl of water and set aside.
- In a medium sauce pan, over medium heat, melt the butter then add the flour and cook, stirring constantly, for about 3-5 minutes or until it starts to smell nutty.
- Whisk in the broth and the cream then bring it to a boil.
- Remove from the heat and add the chives, sour cream, salt, and pepper.
- Spread a little of the chive sauce on the bottom of the lines pan then place two layers of potatoes on top of that.
- Spread more of the chive sauce on that, sprinkle with cheese and start again the two layers of potatoes, then the cream sauce, then the cheese (You should get about 4 to 5 layers if the potatoes are really thinly sliced).
- Cover with foil and bake for 45 minutes then remove the foil and bake for another 15 minutes (the potatoes should fork tender, and if they're not, just cover them and cook them for another 10-15 minutes).
- Let rest on your counter for at least 10 minutes before cutting.
ROASTED POTATO SLICES WITH CAVIAR

Steps:
- Preheat oven to 400°F. Brush both sides of potato slices with olive oil. Place on baking sheet and season lightly with salt and pepper. Bake until golden brown on bottom sides, about 15 minutes. Turn slices over and continue baking until second sides are golden brown, about 15 minutes. Transfer to plate.
- Top slices with small dollops of sour cream. Sprinkle with chives. Spoon small amount of caviar atop sour cream and chives. Serve immediately.
DOUBLE BAKED HORSERADISH POTATOES
Steps:
- Preheat oven to 375 degrees F. Prick the surface of the potatoes a few times with a fork then rub potatoes with oil, place on a baking sheet and bake in the oven for about 1 1/2 hours, or until you can poke a thin bladed knife into them. Remove them from the oven and let rest 10 minutes, or until cool enough to handle.
- Slice the potatoes in half vertically and carefully scrape the flesh into a medium bowl, reserving the best 4 skins. Add the butter, milk, cream and horseradish and mash until smooth, if the mixture is too dry add more milk. Season well with salt and pepper to taste. Fill each of the 4 skins with the mashed potato mixture. Place the filled potatoes on a baking sheet and return to the oven, bake until lightly golden brown, about 8 to 10 minutes. Remove from the oven and top with a dollop of sour cream, a tablespoon of caviar and sprinkle with chives.

- Drain, cut in half, place in baking dish cut side up.
