DRIED BEEF / CHIPPED BEEF CHEESE BALL
This is my most requested recipe. We have it at every family function, and it always goes fast. I often double the recipe, making one really large cheese ball. I got this from my mother, who got it from an old cookbook. It really is simple and delicious. You will never want to make another cheese ball. Enjoy!

Steps:
- Dice the dried beef into small pieces. This is dependent upon how small you want your dried beef to be. I usually dice mine into 1/4" squares (approx.), but others like it more finely diced.
- Dice/mince the green onions.
- Add all of the ingredients to the softened cream cheese in a medium sized bowl. Stir. (I usually use my clean hands for this; a wooden spoon also works with a bit more effort). The ingredients should be consistent throughout the cheese ball.
- Wrap in plastic wrap. Store in the fridge for at least 6-8 hours. This is one of those recipes that is at its best after sitting overnight. This way, the flavors really blend.
- Serve with crackers. My family likes Wheat Thins, but it really goes with any type of cracker. Enjoy!

- Place beef in a food processor; pulse until finely chopped. In a large bowl, beat cream cheese until smooth. Stir in 2/3 cup beef and the onion and Worcestershire sauce. Refrigerate, covered, at least 1 hour., Place remaining beef in a small shallow bowl. Shape cheese mixture into a ball; roll in beef to coat evenly. Wrap; refrigerate at least 1 hour. Serve with crackers and vegetables.

QUICK CHIPPED BEEF CHEESE BALL
I got this recipe from a friend who used to work at the deli of our local grocery. When they were bought out by a larger chain their cheese ball recipe changed. This is the only way I can get my favorite cheese ball now. The grocery called it "chipped beef" but it actually uses thinly sliced Buddig roast beef.

CHRISTMAS, OR ANY TIME CHIPPED BEEF CHEESE BALL
I am terrible about not asking for a recipe, I was watching a girlfriend make this and i just remembered the ingredients. Not sure if i got the amounts right but I have fiddled with it for years and this seems the best. You could also cover it with nuts, or for a Daytona 500 party, I shaped it with a ring mold, covered it with finely chopped black olives and called it a Cheese Tire!

- Use green part too.
- Mix into cream cheese with the worcestershire sauce until well incorporated and smooth.
