Categories     side-dish

Time 1h40m

Yield 4 servings

Number Of Ingredients 8

4 large sweet potatoes, scrubbed
1 1/2 cups heavy cream
1 tablespoon chipotle peppers in adobo, pureed
1 stick unsalted butter, softened
1/4 cup creme fraiche
1/2 cup maple syrup, plus 2 tablespoons
Salt and freshly ground pepper
Nonstick cooking spray

Steps:

  • Preheat oven to 375 degrees F.
  • Place potatoes on a baking sheet and bake in the oven until soft, 45 to 50 minutes. Remove the potatoes from the oven and let rest 5 minutes. Slice potatoes in half lengthwise and carefully scoop out the flesh, being careful not to damage the skin. Rice the flesh in a ricer set over a bowl.
  • Bring the heavy cream and chipotle puree to a simmer over low heat in a small saucepan. Stir the warm cream, butter, creme fraiche and 1/2 cup of the maple syrup into the sweet potato mixture until combined. Season with salt and pepper, to taste. Spray the baking dish with cooking spray. Fill each of the skins with the cream mixture, place back on the baking sheet and bake until golden brown. Remove the potatoes to a platter and drizzle the tops of each with the remaining maple syrup.

Categories     Side Dish

Time 1h25m

Yield 4

Number Of Ingredients 7

4 small sweet potatoes (about 1 3/4 lb)
1/4 cup fat-free half-and-half
1 chipotle chile in adobo sauce (from 7-oz can), finely chopped
1 teaspoon adobo sauce (from can of chipotle chiles)
1/2 teaspoon salt
8 teaspoons reduced-fat sour cream
4 teaspoons chopped fresh cilantro

Steps:

  • Heat oven to 375°F. Gently scrub potatoes but do not peel. Pierce potatoes several times with fork to allow steam to escape while potatoes bake. Bake about 45 minutes or until potatoes are tender when pierced in center with a fork.
  • When potatoes are cool enough to handle, cut lengthwise down through center of potato to within 1/2 inch of ends and bottom. Carefully scoop out inside, leaving thin shell. In medium bowl, mash potatoes, half-and-half, chile, adobo sauce and salt with potato masher or electric mixer on low speed until light and fluffy.
  • Increase oven temperature to 400°F. In 13x9-inch pan, place potato shells. Divide potato mixture evenly among shells. Bake uncovered 20 minutes or until potato mixture is golden brown and heated through.
  • Just before serving, top each potato with 2 teaspoons sour cream and 1 teaspoon cilantro.

Provided by Ina Garten Bio & Top Recipes

Categories     side-dish

Time 1h50m

Yield 8 servings

Number Of Ingredients 8

4 pounds sweet potatoes (6 potatoes)
1 cup whole milk
1 cup heavy cream
1 tablespoon minced canned chipotle chiles in adobo sauce, with seeds, such as Goya
1 tablespoon adobo sauce (from the can of chiles)
1/4 cup pure Grade A maple syrup
4 tablespoons (1/2 stick) unsalted butter, diced
Kosher salt and freshly ground pepper

Steps:

  • Preheat the oven to 350 degrees F. Line a sheet pan with aluminum foil.
  • Place the sweet potatoes on the prepared sheet pan and pierce each potato 4 times with a small knife. Roast for 1 to 1 1/4 hours, until very tender inside when tested with a knife. Set aside until cool enough to handle. (Leave the oven on.) Peel the potatoes, discard the skins and place the potatoes in the bowl of an electric mixer fitted with the paddle attachment.
  • Meanwhile, place the milk, cream, chipotle chile and adobo sauce in a small saucepan. Bring to a boil, lower the heat and simmer for 5 minutes. (It might look curdled.)
  • With the mixer on low speed, add the chipotle-milk mixture to the sweet potatoes. Add the maple syrup, butter and 1 tablespoon salt. Mix until the potatoes are coarsely pureed. Pour into a 9-by-12-by-2-inch oval oven-to-table baking dish and bake for 30 minutes, until heated through. Sprinkle with salt and pepper and serve hot.
  • Make ahead: Prepare the sweet potato mixture, spoon it into the baking dish, cover and refrigerate for up to 3 days. Bake at 350 degrees F for 40 to 45 minutes, until hot.
