½ cup finely chopped onion
2 tablespoons chopped fresh cilantro
1 chipotle chile in adobo sauce, finely chopped
1 teaspoon garlic powder
1 teaspoon onion powder

¼ teaspoon black pepper
4 slices mozzarella cheese
4 hamburger buns, split and toasted

Steps:

  • Preheat an outdoor grill for medium-high heat, and lightly oil grate. Place the ground turkey, onion, cilantro, chipotle chile pepper, garlic powder, onion powder, seasoned salt, and black pepper in a mixing bowl; mix well. Form into 4 patties.
  • Cook the hamburgers on the preheated grill until the turkey is no longer pink in the center, about 4 minutes per side. Place the mozzarella slices on the patties 2 minutes before they are ready. Serve on the toasted buns.

Ground turkey has it rough in the reputation department. It's notoriously dry and flavorless, especially in burger form, and it's usually only preferred to beef when healthiness is a factor. But not for long! We can finally take back the bad rap of crumbly turkey burgers everywhere with these moist and juicy Tex-Mex-inspired patties, all thanks to a humble can of creamed corn. On the flavor front, we've got spices, herbs, veggies, cheese, and a chipotle mayo, so there's no chance this formerly blank canvas is going to be a bland burger.

1/2 cup mayonnaise
2 teaspoons sauce from canned chipotles in adobo sauce
2 teaspoons fresh lime juice
1/2 teaspoon kosher salt
1 pound lean ground turkey
1/4 cup canned creamed corn (see Cook's Note)
1/4 cup breadcrumbs
1 large egg
1/4 cup minced onion
2 tablespoons chopped fresh cilantro
1 1/2 teaspoons ground cumin
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
Cooking spray
4 slices Monterey Jack cheese
4 brioche hamburger buns
Lettuce, tomato, and avocado, for topping

Steps:

  • Make the mayo: In a large bowl, whisk together the mayonnaise, adobo sauce, lime juice, and salt. Cover and refrigerate for up to 2 days.
  • Make the burgers: In a large bowl, combine the ground turkey, creamed corn, breadcrumbs, egg, onion, cilantro, cumin, salt, and pepper. Using your hands, mix together the ingredients just until combined. Shape the mixture into four patties.
  • Heat a large skillet over medium heat, then coat the skillet with cooking spray. Add the patties and cook for 5 minutes on one side, then flip them and cook until they are no longer pink and have reached an internal temperature of 165 degrees F, an additional 10 minutes. Top each burger with a slice of cheese.
  • Spread a portion of the chipotle mayo on the bottom half of each bun. Top the mayo with a burger, then add lettuce, tomato, avocado, and the top half of the bun and serve.

1 small red onion, minced

1 canned chipotle chile en adobo plus 1 teaspoon adobo sauce

Steps:

  • Place turkey, onion, cilantro, mustard, and 1 teaspoon salt in a medium bowl. Season with pepper, and mix gently. Shape into four 1/2-inch-thick patties, cover, and refrigerate until cold and firm, about 30 minutes.
  • Puree mayonnaise, sour cream, chile, and adobo sauce. Cover, and refrigerate for up to 1 day.

Although you will not find these turkey burgers at a local cantina in Oaxaca, I can vouch that they certainly did conjure up fond memories of the flavors in dishes I ate on some of my many journeys to Oaxaca. I could even imagine these burgers served at one of the open air market's concessions. I tip my hat once again to Steven Raichlen, my grilling hero, for yet another impressively creative and delicious burger. Minus some personal modifications to the recipe, this is the recipe that appeared in Burger. Make Ahead: The salsa makes about 2 cups and can be made ahead of time and stored in the refrigerator in a sealed container for 2 days. Beer Recommendation: A rich malty, roasty beer that absorbs the heat and provides a great counterpart to chipotles and grilled meat is a good choice to pair with these burgers. If you happen to find a Noche Buena, a great dark beer from Mexico, this would be my first choice. Second would be Negra Modelo, a slightly sweet brew with some fruitiness, it's malty for a Mexican beer and goes well with chipotles.

  • Heat a thick cast iron skillet until very hot and add tomatillos, garlic, tomatoes and onion and cook over low heat. Frequently flip until blackeded in small areas and soft, about 10 minutes. Place on plate and set aside to cool.
  • Put the tomatillos, garlic, tomatoes and onion in a blender or food processor and pulse until coarsely chopped, be careful not to liquify. Add chipotles and adobo sauce, cilantro, salt and sugar and pulse one or two times until JUST mixed.

Steps:

I saw this recipe on Oprah one day but i switched around a few ingredients to make it more affordable. I like to use Granny Smith apples and I don't really use measurements, so dabble with your own! These burgers taste best when grilled ( I use my Foreman) but they taste just as good when pan frying. If your in a hurry for a meal, you can skip the 2 hours in the fridge. Thats just used to insure your burgers will stay together while cooking. This is one of the BEST turkey burgers I've ever had and I hope you enjoy it just as much as me! :)

1 cup onion, small pieces
1 cup celery, small pieces
1 large apple, small pieces
2 lbs ground turkey
2 tablespoons chipotle hot sauce
1 tablespoon lemon juice

1/4 cup Worcestershire sauce
3 garlic cloves, minced
1/4 cup olive oil

toasted whole grain English muffin

1 cup good quality mayonnaise
1/2 lime, juice of
2 chipotle chiles in adobo
1 tablespoon adobo sauce

Steps:

  • Make the Chipotle Mayo:.
  • Add all ingredients in a food processor and puree. Season to taste with salt and pepper. Keep chilled.
  • Make the burgers:.
  • In saute pan over low/medium add olive oil, onions, and a pinch of salt. Cook the onions stirring occasionally for 3 minutes. Add chopped garlic and cook for 1 to 2 minutes. Remove from heat and let cool.
  • In large bowl combine, ground turkey, worcestershire sauce, chopped cilantro, salt and black pepper to taste and cooled onion and garlic mix.
  • Mix ingredients with your hands and shape into 4 uniformed sized patties. With your finger make an indent in the center of each patty (this will prevent the burgers from puffing up in the center while cooking).
  • Place burgers on cookie sheet and place in the freezer for 15 minutes. This will prevent the burgers from falling apart on the grill.
  • Preheat indoor or outdoor grill to high. Grill the burgers for 5 to 6 minutes per side. Add cheese slices the last 3 minutes of cooking and cover loosely with foil.
  • Serve on toasted whole grain english muffins with any or all of above toppings.
