a 3/4-pound seedless piece butternut squash, peeled and cut into 3/4-inch dice (about 5 cups)
1 medium onion, unpeeled, cut into eighths
1 large garlic clove, unpeeled
1 tablespoon vegetable oil
eight 5- to 6-inch flour tortillas
1 cup chopped red bell pepper (about 1 large)
1 cup coarsely grated jack cheese
1/2 stick (1/4 cup) unsalted butter, softened
Accompaniment: chipotle lime sour cream dip
For the dip:
1 canned chipotle chili in adobo*, minced
2 teaspoons fresh lime juice
1 cup sour cream
*available at Hispanic markets and some specialty foods shops

Steps:

  • To make the quesadillas:
  • Preheat oven to 400°F.
  • In a shallow baking pan arrange squash, onion, and garlic in one layer and drizzle with oil, tossing to coat. Roast mixture in middle of oven 15 minutes, or until garlic is tender and transfer garlic to a work surface. Roast squash and onion until tender, about 15 minutes more. Discard peels from squash, onion, and garlic.
  • In a food processor purée squash, onion and garlic with salt and pepper to taste until smooth. Squash purée may be made 2 days ahead and chilled, covered.
  • Spread about one fourth squash purée on each of 4 tortillas and sprinkle each with about one fourth bell pepper and about one fourth cheese. Top each quesadilla with a plain tortilla, pressing gently together. Spread each side of quesadillas with 1/2 tablespoon butter.
  • Heat a griddle or 7-inch non-stick skillet over moderately high heat until hot and cook quesadillas, 1 at a time, until golden, about 3 minutes on each side, transferring to a cutting board.
  • Cut each quesadilla into 6 to 8 wedges and serve warm with chipotle dip.
  • To make the dip:
  • In a small bowl stir chili and lime juice into sour cram until combined well. Dip may be made 2 days ahead and chilled, covered. Makes about 1 cup.

I found a tasty chipotle dip at my local store but they discontinued it. This recipe is very close to what I used to buy and I actually like it more. Very spicy if prepared according to the recipe so beware.

16 ounces sour cream
1 tablespoon ground cumin
1 lime, juice of
salt (start with one good pinch)

Steps:

  • Place chipoptles and adobo sauce from can in a food processor. Pulse peppers until there are no large chunks. (For less spicy dip scrape seed from peppers first and or use a smaller can of chipotles).
  • Mix peppers, sour cream, cumin, lime and salt well. Refrigerate several hours or overnight. Stir before serving with tortilla chips.

1/4 cup fresh squeezed lime juice
2 tablespoons canola oil
3 heaping tablespoons ancho chile powder
2 cloves garlic, smashed to a paste

1 1/2 pounds red snapper fillets
6-inch flour tortillas
Shredded red cabbage
Cilantro leaves
Avocado-Papaya Relish, recipe follows
Tomatillo-Chipotle Salsa, recipe follows
Sour Cream Salsa, recipe follows
Lime wedges
2 ripe Hass avocados, peeled, pitted and diced
1 ripe papaya, peeled, seeded and diced
1/2 small red onion, finely diced
1 serrano or jalapeno chile, finely diced (you can use more chiles if you want it spicier)
2 limes, juiced
2 tablespoons canola oil
2 teaspoons honey
Salt and freshly ground black pepper
1/4 cup finely chopped fresh cilantro leaves
3 tablespoons canola oil, plus 1/2 cup
8 tomatillos, washed and halved
1 large red onion, peeled and quartered
4 cloves garlic, peeled
Salt and freshly ground black pepper
2 to 3 teaspoons chipotle in adobo puree
1/4 cup fresh lime juice
1 cup spinach leaves, blanched
Honey
2 ripe beefsteak tomatoes, seeded and diced
1/2 small red onion, finely diced
2 cloves garlic, finely diced
1 serrano chile, finely diced
1 tablespoon red wine vinegar
2 tablespoons canola oil
2 tablespoons sour cream or creme fraiche

Steps:

  • Whisk together the juices, oil, ancho powder, garlic and salt and pepper, to taste, in a small bowl and let stand 10 minutes at room temperature.
  • Preheat grill to medium.
  • Brush some of the wet rub on each side of the fillets and season them with salt and pepper. Grill until golden brown and slightly charred on both sides and just cooked through, about 4 minutes per side. Remove from the grill, let rest 5 minutes and flake into large pieces with a fork. Serve wrapped in the tortillas with the cabbage, cilantro, Relish and Salsas. Garnish plates with lime wedges.
  • Combine avocados, papaya, onion, chile, lime juice, oil, honey and salt and pepper, to taste, in a medium serving bowl. Fold in the cilantro until combined and serve at room temperature.
  • Preheat oven to 375 degrees F. In a large bowl, add 3 tablespoons oil, the tomatillos, onion, and garlic and season with salt and pepper. Toss until the tomatillos are well coated. Place in a roasting pan and roast, in the preheated oven, until soft and golden brown, about 20 to 25 minutes.
  • Place the tomatillos, onions, garlic, chipotle, lime juice, and spinach in a food processor and blend until smooth. With the motor running, slowly add the remaining 1/2 cup olive oil and season with honey and salt and pepper, to taste. Remove to a serving bowl and serve at room temperature.
  • In a medium bowl combine the tomatoes, onion, garlic, and chile. In a separate bowl whisk together the vinegar, canola oil, sour cream, and salt and pepper, to taste. Toss the tomato mixture with the dressing. Place in a serving bowl and top with chopped cilantro.;

Steps:

  • Combine crab meat, 1/4 C. tortilla chip crumbs, poblano chili, green onions, cilantro, mayonnaise, salsa, lime juice, egg and Tabasco sauce. Refrigerate about 45 minutes. Shape into 24, 1 1/2-inch miniature crab cakes. Roll in remaining tortilla chip crumbs. Heat butter or margarine and oil in a heavy skillet. Fry crab cakes until golden brown. Drain on paper towels. Serve with Mango-Chipotle Sour Cream Dipping Sauce: Place chipotle chili, adobo sauce and 1/2 of the mango pieces in a food processor bowl. Process until pureed. Stir in honey. Place sour cream in a medium bowl and stir in mango-chipotle puree, lime juice, the remaining chopped mango and remaining 1 T. cilantro. 1 bunch radishes (6-8), thinly sliced
3/4 c sour cream
2 canned chipotle peppers in adobo, seeded and diced, plus 2 t sauce
8 whole wheat flour tortillas

Steps:

  • (1) Preheat oven to 425F. Toss together corn, 1 T oil, lime juice, 1 t salt, cumin, 1/4 t black pepper, bell peppers, and onion, then spread on a large baking sheet. Toss together remaining oil, paprika, 1/2 t salt, and black beans, then spread on a second large baking sheet. Roast vegetables and beans, tossing occasionally and rotating sheet trays halfway through, until beans are dried out and just crisp, 20-25 minutes, and vegetables are deep golden brown and softened, about 40 minutes. (2) Toss together cabbage, cilantro, vinegar, sugar, avocado, radishes, 3/4 t salt, and 1/4 t pepper; set aside. In a small bowl stir together sour cream, chipotle peppers, and adobo sauce, and 1/2 t salt. (3) Wrap tortillas in foil, and place in oven for a few minutes to warm. 4 fresh minced garlic cloves, divided
1 small red bell pepper, seeded and sliced
4 flour tortillas, warmed
2 teaspoons minced canned chipotle chiles in adobo
1/4 cup minced fresh cilantro

Steps:

  • Toss pork strips in the taco seasoning to coat evenly.
  • Heat the oil in a large skillet over medium-high heat; add pork strips, onion, bell pepper, and 3 cloves minced fresh garlic; stir-fry 3-5 minutes.
  • Divide the pork mixture and mango chunks into four equal parts.
  • Roll up in warmed tortillas.

5 russet potatoes
5 strips bacon
4 oz cheddar cheese, cubed
1 c bread crumbs, seasoned (panko also works great)
2 eggs, beaten
4 oz butter
4 oz heavy cream
salt and pepper to taste
vegetable oil for frying
1/2 c sour cream
5-6 dash(es) chipotle hot sauce

Steps:

  • 1. Boil potatoes with skin on until fork tender (approx 60 min). Place bacon on baking sheet and cook until crisp, remove from oven and chop finely, set aside. When potatoes are fork tender, remove from pot and drain water. When potatoes are cool enough to handle, peel, and return to pot. Add cream, butter, then mash and stir over low heat until smooth. Stir in bacon, salt and pepper to taste.
  • 2. Assemble two bowls, one with beaten egg, and one with bread crumbs. Take a cube of cheese and form a ball of the potatoes around it; they should be about the size of a golf ball. Dip the ball in the egg wash then in the bread crumbs to coat. You can make the entire batch 1-2 days ahead of time, store in refrigerator.
  • 3. Preheat oil to 375 F degrees.
  • 4. Fry croquettes until golden brown and crispy on the outside, you should have a nice center of melted cheese.
  • 5. For sauce simply mix sour cream and chipotle hot sauce, serve
