GRILLED SALMON WITH A PINEAPPLE, MANGO AND STRAWBERRY SALSA
Steps:
- Preheat a grill to medium.
- Brush both sides of the salmon with the olive oil. Season the salmon on both sides with the Essence, salt and pepper. Place the fish on the grill, skin side down and cook for about 3 minutes then turn the fish 45 degrees and cook for an additional 3 minutes. Turn the fish over and cook for an additional 2 minutes, or until cooked through to the desired degree of doneness.
- Remove the fish from the grill and serve with the fruit salsa spooned over the fish. Serve immediately.
- Combine all ingredients thoroughly.
- In a medium non-reactive bowl, combine all of the ingredients and stir to blend. Cover with plastic wrap and allow the salsa to macerate for 20 to 30 minutes before serving.
SALMON WITH MAPLE-CHIPOTLE SAUCE
Rachael Ray's recipe for Chipotle Cashew Chicken inspired me to create this dish. It's an interesting combination of flavors--sweet, smoky, spicy and nutty. I'm sure the marinade could be used on chicken or pork as well (of course keeping in mind varying cooking times of different meats). I oven-roasted my salmon, but it would also be excellent grilled.

Steps:
- Preheat oven to 375 degrees.
- Whisk together maple syrup, soy sauce, lemon juice, chipotle chili, garlic powder and black pepper in a shallow baking dish.
- Lay salmon in baking dish, coating both sides evenly. Marinate for 30 minutes at room temperature or refrigerated for 1 hour.
- Carefully pour off marinade into a saucepan. Bring to a boil, cooking for 5 minutes or until slightly thickened.
- Roast salmon in the same baking dish in which it was marinated for 12-15 minutes or until fish flakes easily when forked.
- Serve salmon with warm maple-chipotle sauce drizzled atop or on the side. If desired, sprinkle top of salmon with toasted cashews.

GRILLED SALMON WITH STRAWBERRY SALSA
Its Strawberry season!!! My friend served this last weekend and everyone raved about it, said the flavors were wonderful. My hubby decided we should make this for company this weekend, and I thought I'd share my neighbor's recipe with my friends at Zaar. (I have not personally prepared this dish yet). Prep time does not include 1 hour chilling time. Cook time does not include the time to prepare the charcoal grill.

Steps:
- ***Salsa***.
- Mix together cucumbers, green onion, yellow pepper, cilanto and vinegar.
- Cover and chill at least 1 hour.
- Just before serving add strawberries.
- ***Sauce***.
- In small sauce pan over low heat, melt butter with garlic.
- Stir in honey, soy sauce and lemon juice.
- Cook 2 minutes, then set aside.
- ***Grill***.
- Prepare charcoal grill.
- When coals are ready, oil a fish grilling rack.
- Brush sauce on salmon pieces and place on well-oiled rack.
- Place rack over coals (about 4 inches from heat).
- Grill salmon about 4-5 minutes on each side.
- Brush fish with sauce after turning, and again when done.
- Place grilled fish on warm platter and top with salsa.

- In a small bowl, combine the first 10 ingredients. Pour 1/4 cup marinade into a large resealable plastic bag. Add the salmon; seal bag and turn to coat. Refrigerate for up to 30 minutes. Cover and refrigerate remaining marinade. , Drain salmon, discarding marinade in bag. Place salmon skin side down on a greased grill rack. Grill, covered, over high heat or broil 3-4 in. from the heat for 5-10 minutes or until fish flakes easily with a fork, basting occasionally with remaining marinade.
