8 oz cream cheese, softened
2 c cooked shredded or cubed chicken
1/2 c black beans, canned drained and rinsed
1/2 c corn kernels off cob (canned or frozen thawed)
1/2 c mini sweet peppers, diced small
16 oz mexican blend shredded cheese
5 oz bottle of tabasco chipotle hot sauce

Steps:

  • 1. Preheat oven to 350. Drizzle chicken with some chipotle sauce to let flavor sink in.
  • 2. In large bowl mix cream cheese with 1/4 cup of chipotle sauce.
  • 3. Add corn, beans, peppers and 1 cup of shredded cheese to the cream cheese mixture.
  • 4. Add chicken to to cream cheese mixture and mix well.
  • 5. Add to an oven-safe dish. Drizzle with remaining hot sauce.
  • 6. Then sprinkle a layer of shredded cheese.
  • 7. Bake for 30 minutes or until cheese is bubbling.
  • 8. Serve with your favorite crackers, corn or tortilla chips or veggies.

1 1/2 cups sour cream
1/2 cup mayonnaise
2 tablespoons Mrs Dash southwest chipotle seasoning mix
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt

Steps:

  • 1. Add all ingredients and mix thoroughly in mixing bowl.
  • 2. Cover and place in refrigerator for at least one hour (longer is better).
  • 3. Remove from refrigerator and mix once more.
  • 4. Serve.

1 cup mayonnaise
