What a great appetizer, or even a main course. But I love these as an appetizer because ... if they aren't hot that is perfectly ok. Just a light crusty outside, but a spicy chipolte marinade. Then a creamy sweet mango sauce to dip them in. I just set them on a big plate with the sauce in the middle.

Number Of Ingredients 24

2 lbs fresh extra large shrimp (peeled, tails on)
2 chipoltes in adobo sauce, chopped and mashed
2 limes, juice of
1/2 cup orange juice
2 teaspoons minced garlic
2 teaspoons fresh cilantro, chopped fine
1 tablespoon olive oil
1 cup panko breadcrumbs (pulsed in the food processor to make them a bit finer)
2 eggs (beaten)
1 tablespoon fresh cilantro
4 tablespoons butter (melted)
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
2 large mangoes, chopped (you can also buy quality frozen mango too if you can not find fresh, which work ok for this)
1/3 cup sour cream
1 tablespoon lime juice
1/2 teaspoon of the adobo sauce (more or less according to taste)
1 tablespoon honey
1/2 teaspoon lime zest
1/2 teaspoon ground ginger
1/2 teaspoon brown sugar
salt
1 lime, sliced (optional)
fresh cilantro (optional)

Steps:

  • Marinade -- Mix the lime juice, chipoltes, orange juice, garlic, olive oil and cilantro in a large baggie. Add the shrimp and marinade no more than 1 hour, 30 minutes minimum.
  • Mango Sauce -- To a food processor or a blender, add the mango, sour cream, honey, lime juice, adobo sauce, zest, ginger and brown sugar, with a pinch of salt. Blend until creamy. Just transfer to a bowl and refrigerate. NOTE: Taste, if they are very sweet mangos, you may want to eliminate the brown sugar. It just depends on the mango.
  • Coating -- Panko, now when I coat shrimp since they are small, I like the crumbs to be a bit finer. So I pulse them a few times to "crunch them up" a bit to make them easier to coat the shimp, but it is not necessary.
  • So, in two bowls; 1) for the panko crumbs, add some salt, pepper and fresh cilantro and mix well, 2) for the egg wash, simple beat the eggs. Then line a baking sheet with parchment or you can spray with non-stick spray. Next, dip the shrimp in the egg, and then dredge in the panko crumbs. Add to the baking sheet. MY trick -- I drizzle the melted butter over the shrimp. Adds a nice golden brown to the panko crumbs. Just a little over each shrimp.
  • Bake -- Heat the oven to 425 degrees and bake the shrimp until golden brown. They only take 5-10 minutes (really depends on the size of the shrimp and your oven. Just watch them. They don't take long. Just when they start to get golden brown. You can always sample one to try to make sure -- Cooks PRIVILEGE!
  • Serve -- On a big platter, put the mango sauce in the center, garnish with fresh cilantro and a lime slice if you want and then surround with the baked golden shrimp. A great appetizer and goes over great at any party.

Succulent shrimp in a creamy rich sauce that packs some heat. Don't let the looks deceive you- My DBF took one look at it and poured on the Tapatio before I could stop him. Little did he know, despite the looks of the light colored cream sauce, it carries some heat. I added extra white wine (couldn't resist) and extra chipotle (knowing how much DBF likes spicy food), You might start off using less or just the adobo sauce and then add more to suit your tolerance for heat. 1 cup all-purpose flour
4 tablespoons finely chopped fresh cilantro (optional)
salt & freshly ground black pepper
2 lbs large raw shrimp, peeled but tails in tact and deveined (13 to 15 per pound)
6 tablespoons unsalted butter
1/4 cup dry white wine
1 cup heavy cream
2 tablespoons chopped canned chipotle chiles in adobo
2 garlic cloves, minced
1 1/2 tablespoons Worcestershire sauce

Steps:

  • Put the flour in a shallow bowl. Add 3 tablespoons of the cilantro, 1 teaspoon salt, and 1 teaspoon pepper and toss to combine. Add the shrimp and toss to coat.
  • Melt the butter in a large heavy saute pan over medium-high heat. Add the shrimp and saute for 5 minutes, or until golden brown and just cooked through (mine took less time). Transfer the shrimp to a plate.
  • Add the wine to the same pan and boil for 2 minutes, or until slightly reduced.
  • Return the shrimp to the pan and toss to coat them with the chipotle sauce. Season to taste with salt and pepper. Sprinkle with the remaining 1 tablespoon cilantro, and serve.

  • Peel and devein the shrimp. Place in a bowl and sprinkle with salt and pepper. In a large and heavy sauté pan set over medium-high heat, let the butter melt. Once it starts to sizzle, add the garlic; stir and cook for 10 to 15 seconds, until it becomes fragrant. 1 cup diced leek, white and light green parts (thoroughly washed)
1/2 cup heavy cream
4 ounces mild goat cheese
salt & freshly ground black pepper, to taste
1 teaspoon olive oil
12 shrimp, peeled and deveined (26 to 30 per pound)
2 chipotle chiles in adobo
1 cup heavy cream
4 flour tortillas, 8 inches in diameter

Steps:

  • Fill a saucepan halfway with water and bring to a boil over high heat.
  • Add the leeks, cook about 1 minute, and immediately drain and rinse with cold water.
  • Wipe the pan dry and return the leeks to the pan.
  • Add cream, goat cheese, salt and pepper.
  • Place the pan over medium heat and cook, stirring until the cheese is melted and the sauce is somewhat thickened, about 10 minutes.
  • Set aside.
  • In a skillet heat the olive oil over medium-high heat. When hot, add the shrimp and sauté until they just turn pink, 1 to 2 minutes.
  • When cool enough to handle, slice the shrimp lengthwise along their backs so there are now 24 pieces of shrimp.
  • For the chipotle cream: In a mini food processor or with a sharp knife, very finely chop the chilies; strain into a small saucepan (there should be about 1 tablespoon puree).
  • Add the cream to the pan and heat over medium heat, whisking, until the mixture is smooth and heated through.
  • To assemble: Preheat oven to 350°F.
  • Divide the cheese-leek mixture evenly among 4 tortillas, placing the mixture along the length of the center of the tortillas.
  • Place 4 shrimp pieces on top and roll up into a cylinder.
  • Place in an 8 x 8-inch ovenproof dish and pour the chipotle cream over all; cover with foil.
  • Heat in the oven until warmed through, 10 to 15 minutes.
  • Remove from the oven and, with a spatula, place 1 enchilada on each plate.
  • Top each with 2 pieces of the remaining shrimp and surround with a spoonful of the sauce from the bottom of the baking dish.

1 pound shrimp, peeled and deveined
1 red onion, chopped
1 bunch cilantro, chopped
1 can chipotles in adobe sauce
2 tablespoons coconut oil
1 tablespoon garlic powder
Salt and pepper

Honey
3 avocados, diced
3 limes, juiced
1/2 cup sour cream
1 tablespoon adobo powder
3 jalapenos, diced
Vegetable oil, for pan

Steps:

  • In a bowl, combine the shrimp with half of the red onions, a handful of chopped cilantro, 2 teaspoons adobo sauce, and the coconut oil, garlic powder, some salt and pepper, and a drizzle of honey. Marinate in the refrigerator for 30 minutes.
  • Combine the avocados, lime juice, sour cream, adobo powder and the remaining onions in a bowl. Mix until you have a smooth paste; press through a fine-mesh sieve. Stir in the jalapenos.
  • Set a saute pan over medium-high heat and coat with vegetable oil. Add the marinated shrimp; cook until pink throughout. Finish with a handful of fresh cilantro. Spread the avocado sauce on a serving platter; arrange the shrimp on top. Serve.

2 lbs peeled and deveined shrimp (I used something like 20 count)
1 Tbsp Olive Oil
2 Tbsp Butter (1 Tbsp reserved to finish sauce)
Zest of one lemon
Juice of one lemon
1 Tbsp finely chopped shallot
1 large clove finely chopped or pressed garlic
1 Chipotle chili chopped fine (from a can of Chipotle Chili in Adobo Sauce)
1 Tbsp Honey
1/3 cup chicken stock
3/4 cup heavy cream (let it sit out for a bit so it is not refrigerator cold)
Salt and fresh cracked pepper

Steps:

  • Place the shrimp in a bowl and salt lightly and pepper moderately Heat a large skillet over medium high heat and add Olive Oil and 1 Tbsp of Butter Drain any liquid from the bowl with the shrimp and toss shrimp into hot skillet Cook shrimp just until they are no longer visibly translucent (about 3 minutes - depends on what size shrimp you use - do not overcook!) Remove shrimp from skillet with a slotted spoon to a plate Over high heat allow any liquid in the skillet to evaporate (takes a couple of minutes) Add shallots and garlic and stir for a minute Add lemon juice, lemon zest, chipotle and honey and stir for a minute Add chicken stock and deglaze pan Reduce for a couple of minutes until thick Place the cream in larger cup and add three or four spoonfuls of the hot skillet mixture to the cream and stir (do not try using anything less than heavy cream...sorry) Pour the cream mixture into the skillet Adjust salt to taste and add fresh cracked pepper Allow to come to a foamy boil while stirring Add 1 Tbsp Butter and stir in Add back in the shrimp and any juices from the plate Stir to coat the shrimp and heat through (a minute or so) Serve over your favorite pasta or rice
