CHIPOTLE CHICKEN MARINADE
This easy Chipotle Chicken Marinade combines some of my favorite Mexican flavors, chipotles in adobo sauce and fresh lime! Add some staple spices and you have a delightful flavor combined and ready to really take a simple piece of chicken to fiesta-worthy heights!

Steps:
- Combine adobo sauce, olive oil, lime juice, cumin, onion powder, garlic powder, salt, and pepper in a small mixing bowl. Stir together.
- Pour marinade in a Ziplock bag.
- Add the chicken and press out any air in the bag and seal.
- Massage the marinade into the chicken through the bag.
- Refrigerate for at least 4 hours before use. A 24-hour marinade will yield the best results for marinade flavor.

POLLO ASADO
Pollo Asado is easy, marinated, grilled or roasted chicken chock full of zippy, smoky, earthy, spicy Latin flavors! It's stand alone scrumptious or add it to tacos, burritos, or bowls! It's big on flavor and low on effort so it's perfect for all your summer cookouts or an easy weeknight meal - the marinade literally does all the work! The Pollo Asado is marinated in an intensely flavorful mixture of citrus, spices and achiote powder, which imparts its signature red-orange color and big flavor. You can grill the chicken or roast the chicken and use the marinade on any cut of chicken you like! Serve the Pollo Asada with warm tortillas, beans and/or your favorite side dishes such as cilantro lime rice, corn salad and pina colada fruit salad for the ultimate feast.

- Whisk all of the Marinade ingredients together in a large bowl or freezer size plastic bag. Add chicken and turn to coat. Marinate in the refrigerator 4 to 24 hours. Let chicken sit at room temperature for 20-30 minutes before cooking. (If using chicken breasts, only marinate up to 12 hours or else it can become mushy.)
- Note: These instructions are for bone-in chicken thighs - see below for different cuts of chicken. Preheat the grill to medium-high heat, 425-450°F, clean and grease grates with vegetable oil. Grill chicken skin side down first (if leaving on). Grill for 5-7 minutes per side, or until chicken is cooked through and an internal temperature reaches 175 degrees F on an instant read thermometer. Transfer chicken to a cutting board and let rest 5 minutes before slicing.
- Line a baking sheet with foil and spray with cooking spray. Add chicken to baking sheet in a single layer so they aren't touching. Bake at 400 degrees F for 25-35 minutes (depending on thickness), until the internal temperature reaches 175 degrees F.
- Serve pollo asado with warm tortillas, Mexican street corn (elotes) pina colada fruit salad and Mexican rice or cilantro lime rice. We also love it with avocado corn salsa, corn salsa, mango salsa, or pineapple salsa.

- In a small saucepan, combine the chipotles and their sauce with the rest of the ingredients.
- Simmer over high heat until reduced by one third,about 3 minutes.
- Transfer contents of the pan to a blender.
- Puree until smooth.
- Note:Marinate chicken or pork for 2 hours in 1/4 of the marinade.
- Grill pork chops or chicken.
- Serve with the leftover sauce.

CITRUS CHIPOTLE MARINADE WITH A AVOCADO DIPPING SAUCE
This is a favorite of mine. I absolutely love this. The best part is you can adjust the spice .. just a little more or a little less chipoltes. Besides, use this with seafood, chicken or pork, it works well with anything. I love my simple avocado dipping sauce on the side which just tops this off. Take my dip and shrimp and add to a tortilla or taco shell with some slaw, tomatoes and you have a whole different dinner. Or top over a bed of romaine with olives, tomatoes, onions and thin out my dip with some milk to make a creamy dressing.

- Marinade -- add everything in a large baggie and mix well by shaking. Add your chicken, shrimp, pork, fish, whatever you want. Remember, seafood takes less time. Scallops maybe 30 minutes, shrimp 1-2 hours, fish depending on the thickness 1-3 hours, chicken 4-8 hours, bone in, even over night, pork chops thin 4 hours, thick cut 6, tenderloin 8-12.
- Grilling -- Just prepare your dish for grilling. Outside grill or inside grill pan or even oven. Cook as you would normally do according to your recipe.
- Dipping Sauce -- Just puree everything in a small food processor until well blended. Chill and serve with your grilled dish.
- This is also a great dip for quesadillas, tacos, etc or use as a salad dressing.
