1 large onion, chopped
1 tablespoon canola oil
4 garlic cloves, minced
4 cups reduced-sodium chicken broth
2 cans (15 ounces each) pinto beans, rinsed and drained
2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
3 cups frozen corn
2 chipotle peppers in adobo sauce, seeded and minced
2 teaspoons adobo sauce
1 teaspoon ground cumin
1/4 teaspoon pepper
2 cups cubed cooked chicken breast
1/2 cup fat-free sour cream
1/4 cup minced fresh cilantro

Steps:

  • In a Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the broth, beans, tomatoes, corn, chipotle peppers, adobo sauce, cumin and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes., Stir in chicken; heat through. Garnish with sour cream; sprinkle with cilantro.

1 tablespoon olive oil
1 pound skinless, boneless chicken breast meat - cut into cubes
1 onion, chopped
1 clove garlic, minced
1 tablespoon chicken bouillon granules
1 tablespoon adobo sauce from canned chilies, or to taste
1 teaspoon white sugar
2 (14.5 ounce) cans petite diced tomatoes
1 (15.25 ounce) can whole kernel corn, drained
1 (15 ounce) can black beans, rinsed and drained
2 ½ cups water, or as needed
1 bunch cilantro, chopped

Steps:

  • Heat the olive oil in a large saucepan over medium heat. Stir in the chicken cubes, and cook until the chicken is no longer pink in the center, about 5 minutes. Stir in the onion and cook for 4 minutes. Add the garlic, and cook for 1 minute more. Stir in the chicken bouillon, adobo sauce, sugar, tomatoes, corn, black beans and water. Pour in additional water if desired to reach your desired consistency. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer 15 minutes. Stir in the cilantro before serving.

  • Bring the broth to a simmer and add the chicken tenders, poach them for 6 to 7 minutes with a bay leaf.

1 can (15 ounces) tomato sauce
1 to 2 tablespoons chipotle-in-adobo sauce without chiles (from a 7-ounce can)
3 medium carrots, peeled and chopped (about 2 cups)
2 stalks celery, chopped (1 cup)
Kosher salt
2 cans (each 15.5 ounces) white beans, rinsed and drained
Sliced radishes, tortilla chips, and diced avocado, for serving

Steps:

  • In a large pot, combine chicken, tomato sauce, 1 tablespoon chipotle sauce, carrots, celery, 6 cups water, and 1 tablespoon salt. Bring to a boil, then reduce heat and simmer, skimming surface if needed, until chicken is cooked through, about 10 minutes.

2 onions, coarsely chopped
1 whole chicken (about 3 1/2 pounds)
1 head garlic, halved crosswise
3 1/2 quart cold water
25 cilantro stems
2 Turkish bay leaves or 1 California
For finishing soup:
3 whole allspice
1 whole clove
1/2 teaspoon cumin seeds
1/4 teaspoon black peppercorns
1 medium white onion, chopped
2 garlic cloves
1 1/2 to 2 tablespoons chipotles in adobo, finely chopped, plus 1 tablespoon adobo sauce
1 cup medium-or short-grain brown rice
1 1/2 pounds sweet potatoes (about 2), peeled and cut into 1/2-inch pieces
20 (7-to 8-inch) corn tortillas
6 tablespoons vegetable oil
1 (15- to 19-ounces) can black beans, rinsed
2 (7-to 8-ounces) firm-ripe avocados
2 limes, cut into wedges
1/2 cup finely chopped cilantro

Steps:

  • Make stock:
  • Bring all stock ingredients to a boil with 2 teaspoons salt and 1/2 teaspoon pepper in an 8-to 10-quart heavy pot, then skim foam.
  • Reduce heat and gently simmer, uncovered, skimming foam occasionally, 2 3/4 hours.
  • Transfer chicken to a cutting board, then pour stock through a fine-mesh sieve into a large bowl and discard solids. Reserve
  • 1 cup stock and return remainder to cleaned pot.
  • Finish soup:
  • Toast spices in a dry small skillet (not nonstick) over medium-low heat, shaking skillet occasionally, until fragrant and a shade darker, about 2 minutes.
  • Transfer spices to a blender along with onion, garlic, chipotles with adobo sauce, 2 1/2 teaspoons salt, and reserved stock.
  • Blend until mixture is smooth and spices are ground, about 2 minutes (use caution when blending hot liquids).
  • Add purée to stock in pot along with rice and sweet potatoes and bring to a simmer over medium heat. Simmer, covered, until sweet potatoes and rice are tender, about 45 minutes.
  • While soup simmers, discard skin and bones from chicken and cut or shred meat into bite-size pieces.
  • Meanwhile, preheat oven to 375°F with racks in upper and lower thirds. Stack tortillas and cut into 1/4-inch-thick strips, then toss with oil. Spread strips in 1 layer on 2 large baking sheets and season with salt.
  • Bake, stirring frequently and switching position of sheets halfway through baking, until deep golden and crisp, 20 to 25 minutes.
  • When rice and sweet potatoes are tender, add chicken and beans to soup and simmer, uncovered, until just heated through, about 5 minutes.
  • Meanwhile, quarter avocados lengthwise and cut into 1/2-inch cubes.
  • Season soup with salt and pepper, then serve with lime wedges, chopped cilantro, avocados, and tortilla strips.

1/2 store bought rotisserie or self roasted chicken
3 can(s) black beans (15 oz cans)
2 can(s) corn ( must use canned corn for liquid)
1 can(s) chipolte in adobo sauce
1 large onion diced
4 clove garlic
1-2 c favorite shredded mexican cheese mix
1/4 c fresh chopped cilantro
1/2 c sour cream

  • 1. shred meat from bone and skin of entire half of whole roasted chicken
  • 2. place olive oil in saute pan and saute onion until soft, add garlic and saute several more min.
  • 3. In crock pot put entire can of chipolte and adobo. Put in juice of two cans corn and rinse chipotles and remove all but one if you don't like very spicy. Add more to your liking. More chipoltes mean more heat. I serve the left over chipoltes on the table for folks who want more heat
  • 4. add the corn, unrinsed black beans, sauted onion/garlic and shredded chicken to crock pot. Stir and cook on low for 6 to 8 hours.
  • 5. In side dishes have sour cream, shredded cheese, fresh chopped cilantro, to top soup to your liking.

1 large white onion, diced small
1 large green pepper, diced small

1 quart chicken stock
14 ounces tomatoes, diced (Fire Roasted Tomatoes works best)

  • Season the chicken with fajita seasoning.

  • Place the chicken, Spanish onions, garlic,and the chipotle in a large soup pot.
  • Sprinkle in the salt,and the garlic and onion powders.
  • Put in enough water to cover over all.(about 2 quarts).
  • Bring to a boil, reduce heat to simmer.
  • Cook at a "fast simmer",( but not a "rolling" boil) for about 1 hour, or until chicken is thoroughly done.
  • Remove the chicken to cool.Keep the broth over low heat in the meantime.
  • Taste the broth and adjust the seasonings as desired (more salt, etc.).
  • Peel, pit and chop the avocados into small chunks.
  • Pour the lime juice over the avocado chunks and toss.
  • When chicken is cooled enough to handle, remove ALL bones, fat and gristle.
  • Tear all the chicken meat into bite size bits.
  • Arrange equal amounts of the chicken meat in 4 soup bowls.
  • Do the same over the chicken meat with the green onion, cilantro, and avocado.
  • Ladle the hot broth into each bowl,and serve with lime wedges.

7 cups chicken stock, preferably homemade
2 medium carrots, peeled and cut into 1/4-inch dice
2 celery stalks, trimmed and cut into 1/4-inch dice
1 medium-to-large onion, peeled and cut into 1/4-inch dice
4 to 6 dried chipotles
1/3 cup long-grain rice
Salt and pepper
2 cloves garlic, peeled
2 tablespoons tomato paste
1 teaspoon dried oregano

Steps:

  • Put stock in a saucepan with carrots, celery, and onion. Bring to a boil. Soak chipotles in just-boiled water to cover. Reduce heat, so mixture simmers steadily, and when carrots are just about tender, add rice, salt, and pepper, and stir. Bring back to boil, and continue to simmer.
  • Meanwhile, when the chipotles are soft, remove them from the liquid. Open them up on a cutting board, and with the back of a knife scrape out all seeds and stems. Combine in a blender with garlic, tomato paste, oregano and a large pinch of salt. Add enough chicken stock (you can use the simmering soup) to allow the blender to purée chilies and other ingredients well.
  • When rice is tender, taste soup, and adjust seasoning. Serve with small spoons for adding chipotle paste at the table.

3 cups chicken stock
1 lb chicken tenders
1 bay leaf, fresh if available
1 tablespoon extra virgin olive oil, 1 turn of the pan
4 slices bacon, smoky thick center cut, chopped
1 onion, finely chopped
4 garlic cloves, chopped
2 chipotle chiles in adobo, chopped, plus 2 tablespoons sauce
1 (28 ounce) can crushed fire-roasted tomatoes
salt
4 cups lightly crushed corn tortilla chips
2 cups shredded fresh smoked mozzarella cheese or 2 cups smoked sharp white cheddar cheese, 3/4 pound
1 lime, cut into wedges
1/2 red onion, chopped
freshly chopped cilantro leaf, for garnish

Steps:

  • Bring broth to a simmer and add chicken tenders, poach 6 to 7 minutes with a bay leaf.
  • While chicken poaches, heat extra-virgin olive oil in a medium soup pot or deep skillet over medium-high heat. Add bacon and cook until crisp then remove with slotted spoon. Drain off excess fat, leaving 2 to 3 tablespoons in the pan. Add onions and garlic to the skillet and cook 5 minutes then stir in chipotles and tomatoes.
  • Remove chicken from stock, dice and then add to soup. Pass stock through a strainer then add to the soup.
  • Place a pile of crushed tortilla chips in the bottom of each soup bowl. Cover liberally with smoked cheese then ladle the hot soup down over the top. Serve with lime, raw onions and cilantro at table to finish the soup.

1 large onion, chopped
1 tablespoon canola oil
4 garlic cloves, minced
4 cups reduced-sodium chicken broth
2 cans (15 ounces each) pinto beans, rinsed and drained
2 cans (14-1/2 ounces each) fire-roasted diced tomatoes, undrained
3 cups frozen corn
2 chipotle peppers in adobo sauce, seeded and minced
2 teaspoons adobo sauce
1 teaspoon ground cumin
1/4 teaspoon pepper
2 cups cubed cooked chicken breast
1/2 cup fat-free sour cream
1/4 cup minced fresh cilantro

Steps:

  • 1. In a Dutch oven, saute onion in oil until tender. Add garlic; cook 1 minute longer. Add the broth, beans, tomatoes, corn, chipotle peppers, adobo sauce, cumin and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 20 minutes. 2. Stir in chicken; heat through. Garnish with sour cream; sprinkle with cilantro.

1 Good size rotisserie chicken skinned and shredded = 3 cups
1 16 oz box chicken broth
2 Tbsp tomato paste
1 8 oz bottle Ortega taco sauce
1 5 oz bottle Tabasco sauce
2 Tbsp Chipotle seasoning
2 Tsp Cumin
2 Tsp Chili powder
2 Bay leaf
2 Tbsp Olive oil
1 28 oz can of diced tomatoes
1 28 oz can of black beans drained and rinsed
2 cups fresh corn roasted
1 Large Anaheim chile pepper
1 Large Mirasol pepper
1 Jalapeno pepper diced
4 Habanero peppers diced
3 Large cloves garlic diced
1 Small red onion diced
1 Ripe avocado
1 Lime
4 Tbsp chopped green onion
Fresh Cilantro
Sour Cream/Light Sour Cream
Restaurant style corn tortilla chips
Sharp shredded cheddar cheese, Monterey Jack or Mexican blend cheese
Small brown paper bag

Steps:

  • Please keep in mind that the hot spice, sauces and peppers should be done to your taste and liking. The peppers and spices are guidelines only:-) Skin, bone and shred chicken. Add chicken broth and 3 cups shredded chicken into a large cooking pot. Combine with chicken broth, diced tomatoes, black beans drained and rinsed, tomato paste, taco sauce, Tabasco sauce, chipotle seasoning, cumin, chili powder and bay leaf. Cook over medium heat until simmering. Reduce heat and continue to simmer. Seed then quarter the Anaheim and Mirasol peppers. Add the olive oil to a frying pan and cook peppers over medium heat until the meat is slightly tender and the skin is bubbling off the meat. Place peppers into a small brown bag and seal. Let cool for 10 minutes. Dice onion then cook in the remaining olive oil until slightly tender. Set aside Brown the roasted corn in the frying pan until slightly tender then set aside. Peel the pepper then dice into small cubes. Add the peppers, onion and corn into the soup and continue to simmer. Seed and dice the jalapeno, dice the garlic set aside together. Cube and dice the avocado, sqeeze ½ of the lime juice over and lightly toss. Dice the habanero and green onion then place all in the fridge to keep chilled. Add the jalapeno and garlic to the soup. Simmer for 30 minutes over low heat. Dish soup into bowls then sprinkle with cheese and crumbled corn chips. Garnish with avocado, habanero, green onion, cilantro stemmed and a drop of sour cream. Cooks for about 1.5 hours Pairs well with Pinot Grigio. Note Garnish is best chilled to offset the heat of soup

1 can (15 ounces) black beans, rinsed and drained
1 can (14-1/2 ounces) no-salt-added stewed tomatoes, cut up
1 can (14-1/2 ounces) reduced-sodium chicken broth
1-3/4 cups water
1 teaspoon ground cumin
1 teaspoon minced chipotle pepper in adobo sauce
2 cups cubed cooked chicken breast
1 large egg
1 large egg white
1 package (8-1/2 ounces) cornbread/muffin mix
1/3 cup reduced-fat biscuit/baking mix
1 tablespoon fat-free milk
1/4 cup minced fresh cilantro, optional

Steps:

  • In a small bowl, mash half the beans. Transfer mashed and remaining beans to a Dutch oven. Add the tomatoes, broth, water, cumin and chipotle pepper. Bring to a boil. Reduce heat; cover and simmer for 15 minutes. Add chicken., In a small bowl, combine the egg, egg white, muffin mix and baking mix; stir in milk. Drop by tablespoonfuls onto simmering soup. Cover and simmer until a toothpick inserted in a dumpling comes out clean (do not lift the cover while simmering), 10-12 minutes. Ladle soup into bowls. Sprinkle each serving with cilantro if desired.
