A crispy version of Noel bars with the extra treat of cherries!

Number Of Ingredients 10

½ cup shortening
¾ cup white sugar
1 egg
½ teaspoon almond extract
1 cup all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
1 cup semi-sweet chocolate chips
¾ cup flaked coconut
¾ cup candied cherries, chopped

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in egg and almond extract. Stir in flour, baking powder and salt. When the mixture is creamy, stir in chocolate chips, coconut and cherries. Drop the dough by teaspoonful onto a greased cookie sheet.
  • Bake for 12 to 15 minutes.

Our daughter simply adores these cookies. They are only ever made for Christmas, so that in itself makes them special. These freeze very well, so you can bake ahead and hide. Too bad I can't hide them from myself. :) I think this may have been a Robin Hood recipe from many years ago, but I'm not completely certain.

1/2 cup butter, soft
3/4 cup sugar
1 egg, slightly beaten
1/2 teaspoon almond extract
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup semi-sweet chocolate chips
3/4 cup unsweetened coconut
3/4 cup maraschino cherry, chopped

Steps:

  • Preheat oven to 350*.
  • Cream butter and sugar. Mix in the egg and extract.
  • In a separate bowl, mix together flour, baking powder and salt. Stir into the creamed mixture.
  • Stir in the chocolate chips, coconut and cherries.
  • Drop by teaspoons on a parchment lined cookie sheet.
  • Bake for 15 minutes or until edges are slightly golden in colour. Cool slightly before removing to a wire cooling rack.

2 cups Crisco shortening (Golden Flavor)
1 cup firmly packed brown sugar
1/2 cup granulated sugar
2 eggs
2 teaspoons vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 (225 g) package hershey's chipit reese peanut butter chips
1 cup nuts, chopped

Steps:

  • Cream together shortening, brown sugar, and white sugar. Beat in 2 eggs and vanilla.
  • Combine flour, baking soda and salt. Gradually blend into creamed mixture. Stir in Chipits and nuts.
  • Drop from spoon onto ungreased cookie sheets. Bake at 375F for 10-12 minutes.

I got this recipe on the back of the chipits bag. My kids love them, sometimes I have to make 2 batches a week.

1 cup butter, softened
1 1/2 cups lightly packed brown sugar
2 eggs
1 1/3 cups all-purpose flour
2 cups quick-cooking oats
1 teaspoon baking soda
1/2 teaspoon salt
1 (350 g) package hershey chipits (semi-sweet)

Steps:

  • Beat butter&brown sugar with fork until well blended.
  • Stir in eggs.
  • Stir in flour, salt, baking soda and oats.
  • Add chocolate chips.
  • Drop by tbsp onto lightly greased cookie sheet.
  • Bake at 350F for 10-12 mins.
