¼ lb chicken breast, diced
½ lemon lemon zest
1 teaspoon garlic, crushed
1 tablespoon soy sauce
salt, to taste
pepper, to taste
½ cup flour
2 eggs, beaten
1 cup panko breadcrumbs
2 cups oil
¼ cup chicken stock
½ lemon lemon zest
1 lemon, juiced
4 tablespoons sugar
1 tablespoon water
½ tablespoon corn flour

Steps:

  • Combine all marinade ingredients with the chicken breast and leave for 20 minutes.
  • Coat the chicken breast first in flour, then eggs, and finally panko breadcrumbs.
  • In a medium-sized saucepan heat the oil to 325˚F (170°C),
  • Deep fry the breaded chicken for about 3-4 minutes until the coating is golden brown.
  • In a small frying pan, combine the chicken stock, lemon juice, and sugar. Bring the mixture to a boil.
  • Mix the corn flour with the water, then add the mixture to the frying pan to thicken the sauce.
  • Add the chicken to the frying pan and coat with the lemon sauce.
  • Serve on top of rice. (We garnished ours with green onions and sesame seeds.)

I have had Cashew Chicken all over!...This recipe has the most authentic flavors I have ever tried. My favorite dish, before this recipe, I found on the Hawaiian Islands, in Maui. You will love this one! Better than Hawaii's.

1 lb chicken breast (boneless, skinless)
1 teaspoon salt
2 teaspoons rice wine
2 teaspoons fresh ginger (minced)
1 tablespoon cornstarch
1/4 cup hoisin sauce
2 tablespoons soy sauce
1/4 cup water
1 tablespoon granulated sugar
1 teaspoon fresh ginger (minced)
1 tablespoon cornstarch
3 garlic cloves (minced)
3 green onions (sliced 1 inch on a diagonal)
2 carrots (peeled, sliced on a diagonal)
1/2 cup broccoli (roughly chopped)
2 stalks celery (sliced 1 inch on a diagonal)
1/4 cup onion (sliced)
1/4 cup red bell pepper (chopped)
1 (8 ounce) can water chestnuts (drained and sliced)
1/2 cup roasted cashews
4 tablespoons oil (for frying)

Steps:

  • Cube chicken into bite size pieces and place in a medium size mixing bowl.
  • Add the salt, rice cooking wine, ginger and cornstarch to the chicken cubes, using a fork to mix it in and adding the cornstarch last, mix again. Cover and marinate the chicken for 1 hour in the refrigerator.
  • Prepare the sauce ingredients while the chicken is marinating. In a small size mixing bowl, mix together the sauce ingredients and set aside.
  • Finely mince the garlic. Wash and slice the green onions on the diagonal into 1-inch pieces, chop the broccoli, slice the celery, carrots, onions and drain the sliced water chestnuts.
  • Roast the cashews in a heavy skillet over medium heat, shaking the pan continuously so that the nuts do not burn. Roast for about 5 minutes, or until the cashews are lightly browned. Remove from the pan and let cool completely.
  • Heat the wok or large size skillet over medium-high to high heat. Add 2 tablespoons oil. When the oil is hot, add the garlic. Stir-fry until aromatic (about 30 seconds). Add the coated chicken cubes. Stir-fry until they change color (about 5 to 7 minutes) and are cooked through. Remove from the wok or frying pan, keep warm.
  • Add 2 tablespoons oil to the same wok or skillet. When the oil is hot, add the stir-frying vegetables. Stir-fry until crunchy-tender (about 5 to 6 minutes), then push up to the sides of the pan. Add the sauce and the chicken. Heat everything through and then fold all together to completely coat with sauce. Serve the chicken and vegetables over prepared rice (Jasmine rice is the best) and the roasted cashews on top as a tasty garnish.
  • Makes 4 servings.

6 chicken breasts (cut into inch pieces)
6 egg whites
1 1/2 cups soy sauce
2 cups flour
2 cups cornstarch
2 cups vegetable oil or 2 cups canola oil

Steps:

  • Cut chicken into inch pieces.
  • Whisk together egg whites and soy sauce.
  • Soak chicken in soy mixture for 20 minutes covered in the fridge.
  • Add 2 cups oil to wok or deep fryer.
  • Heat wok to 350°F.
  • Put cornstarch and flour into a reseal able plastic freezer bag.
  • Add chicken to bag a little at a time, shake until evenly coated. Add more of the 50/50 flour mixture as needed to finish the job.
  • Add chicken to wok.
  • Fry 15 seconds only. No browning yet!
  • Remove chicken and place aside on a cookie sheet or bowl lined with paper towels.
  • After all of the chicken has cooked for 15 seconds let cool for a few minutes.
  • Fry it an additional 15-20 seconds or until golden.
  • Always check meat. If it is pink it needs to be cooked longer.
  • Top with your favorite lemon or orange sauce.

These Chinese style deep fried chicken wings use a special ingredient called "fermented bean curd" to enhanced it's flavor. Fermented bean curd is also known as "tofu cheese". I know a lot of Western people are scared about tofu so tofu cheese probably sounds horrendous but for a lot of Eastern people it's like a delight from heaven.

15 chicken wings
1/2 cup light soy sauce
2 chunks tofu cheese
1/2 teaspoon sesame oil
1 tablespoon rice wine
1 spring onion, chop finely
2 garlic cloves, chop finely

1 tablespoon sugar
some black pepper

Steps:

  • Mix all the marination ingredients in a big bowl evenly and add the chicken wings. Use your hand to gently massage the chicken wings with the marination to ensure the marinade covers the chicken wings evenly. If you have any excess marination on the chicken be sure to gently brush this off with your hand.
  • Marinade the chicken wings for 1 hour at least.
  • Heat up the oil to around 180 degrees. Deep fry the chicken wings until they have turned a light golden brown color.

This is an original recipe by Jeff Smith, from the cookbook "The Frugal Gourmet". Use for Chicken with Leeks and Cream recipe, as well as other recipes that call for cooked chicken. Have also used method for boneless chicken thighs with great results. In this recipe we do not actually boil the bird at all but rather place it in boiling water and then leave it alone. Please read the instructions carefully. This dish is so simple and so delicious that you will think the instructions are incorrect.

1 roasting chicken (can use whole chicken or chicken breasts or thighs)

Steps:

  • Fill a large kettle with water, and bring to a boil. (An 8 quart pot two-thirds filled with water works great for a 2 1/2 - 3 pound bird). When the water boils, place the whole cleaned chicken into it. When the water stops boiling, take the chicken out. Cover the pot, and when the water again boils, place the chicken back in the pot. Cover the pot, and turn off the heat. Leave the chicken in the pot and the pot on the burner. After 1 hour the chicken is done. Remove and cool.
  • You can debone this chicken in very little time. If you are on a low-salt/low-fat diet, be sure to remove the skin. Save the juices that flow from the bird when deboning because this liquid contains a great deal of natural gelatin and will help keep the bird moist if you should decide to store the meat in the refridgerator. The chicken is ready to serve or use.

I have posted this delicious-sounding way to cook chicken - which you can have on the table in forty minutes - in response to a Forum Request for a recipe for Chinese-style Orange Chicken. I have adapted it from Lisa Pettit's recipe in Prevention Healthy Cooking's 'Eat Up, Slim Down: Tried-and-true recipes and tips from real weight-loss winners' by Jane Kirby and David Joachim. Commenting on this recipe, Lisa says "When I'm craving Chinese-style sweet-and-sour chicken but don't want the calories or fat, I turn to this recipe". If you want to increase the orange flavour, substitute some of the soy sauce for orange juice: perhaps half soy sauce and half orange juice. This is a combination that I know works well in my Veal With Orange Sauce recipe #117835.

30 g slivered almonds
1 tablespoon peanut oil or 1 tablespoon vegetable oil
4 boneless skinless chicken breasts
60 g shallots, chopped
100 g mushrooms, sliced
100 g orange marmalade
3 tablespoons soy sauce, low sodium
1/4 teaspoon fresh ground black pepper, to taste
orange slice (optional)

Steps:

  • Place the almonds in a large non-stick pan and, shaking the pan often, toast over a medium heat for 5 minutes or until fragrant. Set aside.
  • Warm the oil in the same pan over a medium-high heat, add the chicken and, turning occasionally, cook for 5 minutes or until it is cooked through. Set aside, and keep warm by covering loosely with foil.
  • Add the shallots to the pan and cook for 5 minutes or until they have softened.
  • Add the mushrooms to the pan and cook for 5 minutes or until they have softened.
  • Stir in the marmalade, soy sauce and freshly ground black pepper, and return the chicken to the pan.
  • Reduce the heat to low, cover and simmer for 10 minutes or until the juices run clear.
  • Serve over a bed of steamed rice, topped with the almonds and orange slices.

1 boneless-skinless Chicken thigh
2 C. Chicken Broth (I tried Swanson's Cooking Stock, I really liked it)
2 C. Water
1 Garlic clove, peeled and smashed
1/2 inch piece of fresh Ginger Root, cut into matchsticks (I used more like an inch)
A pinch of Sea Salt (taste before adding, you may not need it)
1/3 of a package of SaiFun or Bean Threads (Long Rice)
3 Green Onions, cut into 1 inch pieces

Steps:

  • In a medium-sized pot, add the water, broth, chicken, ginger and garlic; cook until the chicken is very tender. Remove the chicken to a bowl and allow to cool slightly. Shred the meat and return it to the pot. While the chicken is cooking, place the bean threads into a large bowl of hot tap water to soak for 30 minutes. Strain the long rice and place into the soup; simmer partially covered for about 30 minutes, until the long rice is also tender. Add the salt, if needed, and the greens onions just before serving.

200g lemon marmalade
2 garlic cloves , crushed
small knob of ginger , peeled and finely grated (about 1 tbsp)
1 tbsp soy sauce
1 tsp sunflower oil
juice and zest 1 lemon
8 chicken thighs , skin on and bone in
2 spring onions , sliced diagonally
rice and stir-fried Tenderstem broccoli, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix together the marmalade, garlic, ginger, soy, oil and half the lemon juice. Arrange the chicken thighs on a baking tray lined with foil and spoon over half the marmalade mixture. Roast in the oven for 15 mins.
  • Baste the chicken with the marmalade mix from the bottom of the tray, then spoon over the remaining marmalade mix and cook for another 10 mins. Baste again, then cook for a further 10-15 mins until the chicken is cooked through and golden.
  • Squeeze over the remaining lemon juice, and sprinkle with the zest and spring onions. Serve with rice and stir-fried Tenderstem broccoli.

3 pkg crescent rolls
3 c chicken, cooked and shredded
5 green onion tops, sliced
1 1/2 lb cream cheese, room temperature
3 Tbsp soy sauce
2 Tbsp sesame oil
1 tsp garlic powder with parsley
3 tsp hot sauce (i use sriracha)
3 c baby spinach, coarsley chopped
3/4 c red bell pepper, diced
1 c carrot, shredded
3/4 c peanuts, coarsely chopped
1 Tbsp sesame seeds, toasted
sweet and sour sauce or duck sauce, optional
1/2 c cilantro, fresh, chopped for garnish

Steps:

  • 1. Preheat oven to 375-degrees. Unroll crescent rolls and piece together on a jelly roll baking sheet. Pinch seams together and season with salt, pepper, garlic powder and sesame seeds. Bake crust for 12-14 minutes, or until crust is lightly browned. Remove from oven and let cool for 15 minutes while you mix the topping.
  • 2. In food processor fitted with blade, process green onions until finely minced. Add chicken and pulse until chicken is finely diced. Add cream cheese, soy sauce, sesame oil, garlic powder and hot sauce. Process until mixture is smooth and creamy. Spread cream cheese mixture on prepared crust. Top with spinach, carrots, red pepper, peanuts and sesame seeds. Drizzle with sweet and sour sauce. Cover with plastic wrap and refrigerate for at least two hours. Cut into squares to serve.

1 tablespoon soy sauce
1 tablespoon real maple syrup

½ teaspoon Chinese five-spice powder
2 tablespoons sesame seeds
3 tablespoons all-purpose flour
salt and pepper to taste
½ teaspoon peanut oil
4 leaves red leaf lettuce - rinsed
1 large tomato, cut into wedges

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Cut chicken into about 1 inch X 2 inch pieces.
  • In a large nonporous glass dish or bowl, combine the soy sauce, maple syrup, sherry, ginger and five spice powder. Mix together. Add chicken pieces and toss to coat. Cover dish and refrigerate for 20 minutes, turning once, to marinate. After 20 minutes, drain chicken, reserving marinade. Boil reserved marinade in a small saucepan for 5 minutes to remove risk of bacteria.
  • Meanwhile, spread sesame seeds out evenly on an aluminum foil-lined cookie sheet. Bake in the preheated oven, to toast, for 10 minutes or until slightly browned.
  • Heat oil in a medium skillet over medium high heat. In a shallow dish or bowl combine flour and salt and pepper to taste. Dredge chicken in seasoned flour, shaking off any excess. Brown chicken pieces in oil for about 1 minute each side. Spoon boiled marinade over chicken, reduce heat and saute all together for 1 more minute or until chicken is cooked through and no longer pink inside.
  • Remove chicken pieces from heat and roll in toasted sesame seeds. Rinse and dry lettuce leaves; line serving platter with leaves and spoon chicken on top. Garnish with tomato wedges and serve.

Also, as a variation, I often follow the recipe till the marination and frying, while omitting the rest, and serve them as chicken fritters for snacks. Goes very well with drinks too!

4 chicken breasts, chopped into one inch bits
4 tablespoons cornstarch
1 egg
1 tablespoon vinegar
1 teaspoon soya sauce

6 small green chilies, slit length ways
4 cloves garlic, chopped fine
1 green pepper, deseeded and roughly chopped into one inch pieces
1 shallot, diagonally sliced into one inch pieces
1 tablespoon cornstarch

1 pinch msg (optional)

Steps:

  • Make a batter with the'Marinade' ingredients.
  • Put chicken pieces into it and mix well.
  • Set aside for 1/2 hour.
  • Heat oil, about 2 inches deep, in a wok/frypan.
  • Fry chicken pieces, in batches of 6-8 pieces, till cooked through (approx 7-8 mins for each batch).
  • Drain fried chicken on a paper towel.
  • When all the chicken pieces are fried, remove oil from the pan, letting about 2 tablespoons remain in it.
  • In a small bowl mix together cornstarch and water.
  • Put back the wok on fire and heat the 2 tblsps of oil.
  • Add green chillies, garlic, green pepper and shallot and stir fry for 30 secsonds.
  • Pour in soya sauce and vinegar; give it two three quick whisks and immediately add the cornstarch-water mixture.
  • The sauce will thicken; if you find it too thick, add some more water.
  • When the bubbles appear, add the fried chicken pieces.
  • Add salt and a pinch of MSG (if using).
  • Stir fry chicken for 2 minutes and remove from fire.
  • Serve hot with chinese fried rice/plain rice or noodles.

  • Combine marinade, with the 2 tablespoons of water, melted butter, food coloring, and slowly whisking in 2 tablespoons of corn starch in a sauce pan over medium heat.
  • Stirring often for 15-20 minutes or until thickened.
  • Dip chicken pieces into batter and fry until golden brown.
  • You can then place the chicken into the sauce or use the sauce as a dipping sauce.

2 whole boneless chicken breasts
2 garlic cloves, minced
1/2 teaspoon gingerroot, minced
1/8 teaspoon salt & pepper
1/4 cup flour
1 egg, beaten
1 cup panko breadcrumbs (japanese bread crumbs)
3 cups oil (for frying)
1/3 cup lemon juice
1/3 cup water
1/3 cup sugar
1/8 teaspoon white pepper
1 tablespoon cornstarch
1 dash salt

Steps:

  • Cut chicken in half and pound to 1/2 inch thickness.
  • Rub chicken with garlic, ginger, salt, and pepper.
  • Coat chicken with flour, dip in beaten egg and press on panko.
  • Deep fry at 350 degrees F, turning once or twice until golden brown on both sides.
  • Combine sauce ingredients and bring to a boil.
  • To serve, cut chicken into bite size pieces and pour sauce over.

6 cups water
4 cups chicken broth, low-sodium canned, or homemade
1 1/2 cups Arborio rice
2 teaspoons kosher salt
2 tablespoons unsalted butter
About 4 cups shredded cooked chicken (from 1 rotisserie chicken)
2 to 3 tablespoons grated peeled fresh ginger
3 scallions, thinly sliced
1 medium bunch fresh cilantro, leaves torn or chopped
Asian chili paste, or sambal oelek, optional

Steps:

  • Put the water and broth, salt, rice and butter in the slow cooker. Cover and cook on HIGH until the rice is soft and soupy, about 6 hours.
  • When ready to serve, remove the lid and stir in the ginger and scallions. Portion the soup into bowls and top with the shredded chicken and cilantro. Serve with chili paste on the side if desired.

a 1-inch cube of peeled fresh gingerroot, quartered
2 tablespoons soy sauce
1 tablespoon cider vinegar
2 teaspoons honey
1/4 teaspoon aniseed
1/4 teaspoon salt
1 pound chicken thighs

Steps:

  • In a blender purée the garlic and the gingerroot with the soy sauce, the vinegar, the honey, the aniseed, and the salt. In a resealable plastic bag combine the marinade with the chicken thighs and let the chicken marinate at room temperature for 15 minutes. Arrange the chicken on the rack of a foil-lined broiler pan, discarding the marinade, and roast it in the middle of a preheated 425°F. oven for 20 to 25 minutes, or until it is cooked through.

2-4 boneless chicken thighs, depending on how big they are
A piece of fresh ginger about the size of your thumb, grated
3 Tbs soy sauce
1 Tbs sake or sherry
cornstarch
peanut oil for deep frying

Steps:

  • (you can use another kind of oil; I just prefer peanut oil) Cut up the chicken thighs into bite-sized pieces. You can take off the skin if you like, though it does make the chicken crispier. Put the chicken pieces in a bowl. Add the grated ginger, soy sauce and sake, and mix well. Let marinate for a minimum of 1/2 hour, and up to about 1 hour (not too long or the salt in the soy sauce will toughen up the chicken.) Heat the oil. Toss in enough cornstarch into the marinated chicken so that each piece is completely coated. Fry the chicken pieces a few at a time until a deep golden brown. Drain well, and eat with a squeeze of lemon juice.

Orange Chicken - quick, easy and baked, not fried; this Chinese style take out dish uses frozen orange juice concentrate as the base of the tangy sauce.

4 large boneless skinless chicken breasts (or 8 boneless skinless, well-trimmed chicken thighs)
tbsp a few peanut or canola oil
1 cup flour
1 tsp fine salt
1 tsp black pepper
1 tsp powdered ginger
1 tsp five spice powder
1 egg + 2 Tbsp water
3 cloves minced garlic
1 tbsp peanut oil or canola oil
1 1/4 cups frozen orange juice concentrate, Approximately. I used a 295 ml container
1 tbsp freshly grated ginger root
1/2 cup water
1/3 cup honey
1/4 cup rice wine vinegar
1 tsp Chinese five spice powder
2 tsp crushed chili paste, or chili flakes to taste
2 tbsp light soy sauce
2 tsp toasted sesame oil
2 tbsp corn starch dissolved in 1/4 cup water

Steps:

  • Heat a cookie sheet in the oven at 425 degrees F. This speeds up the cooking time later.
  • Cut the chicken into about 2-bite pieces and season them lightly with salt and pepper
  • Sift together the flour, salt, pepper, powdered ginger and five spice powder.
  • Whisk together the egg and water to make an egg wash.
  • Dredge the chicken pieces into the flour dredge to coat them, then dip the pieces into the egg wash and back into the flour and spice dredge again.
  • Working quickly, retrieve the cookie sheet from the oven and lightly brush the entire bottom with the oil. Add the coated chicken pieces to the pan but don't crowd them together. They should not be touching. Lightly drizzle a little more oil over the chicken pieces. A spray bottle works well for this too.
  • Pop the chicken into the oven for 8 minutes. Take the pan out and turn the chicken pieces over before putting them back into the oven for another 7-8 minutes. Cut one open to see that they are fully cooked. This should be plenty of time at that temperature.
  • Toss the cooked chicken pieces wight he sauce and serve over steamed rice or Chinese noodles.
  • Garnish with toasted sesame seeds and chopped green onions if you like.
  • In a small saucepan over medium heat, quickly sauté the garlic in the peanut oil for only a minute or so.
  • Add all of the remaining ingredients to the pot, except the cornstarch and water.
  • Bring the sauce to a slow simmer for 5 minutes.
  • Stir the cornstarch into the water and immediately add it to the sauce stirring constantly. Simmer for only another minute, stirring constantly before serving.

I LOVE the chicken kale dish from panda express, but I unfortunately, do not have the money (or the body :) lol ) to eat out often. I came up with this little dish when I was craving panda express and you know what? I bet you wont even be able to tell the difference!

1 frozen boneless skinless chicken breast
1 c sliced mushrooms
1 bundle, kale
2 Tbsp general tso's chicken seasoning
1 pkg stevia or splenda
3-4 Tbsp water
1/2 tsp lite soy sauce

Steps:

  • 1. Dice your chicken into bite size pieces. I start with semi thawed chicken breasts. Heat a deep skillet over medium heat
  • 2. Spray non stick (you can use a small amount of oil) into skillet and add chicken. Mean while slice your mushrooms. Add them to the skillet once chicken starts to show only a small amount of pink
  • 3. Wash your kale well then rip from the stems. You can chop the leaves but I just rip them with my hands. Add the kale to the skillet then turn to medium low heat and COVER! this is important for steaming. Cook about 5 minutes or until the kale starts to wilt and turns a rich green color
  • 4. In a small bowl mix the seasoning, soy sauce, water and stevia. (You can use plain white sugar or even brown sugar. I use stevia as a slightly healthier option for this dish)
  • 5. mix the seasoning well then pour into your skillet. Turn off the heat and stir the skillet well so that the seasoning is mixed thoroughly. Cover and let stand for just a minute or two. Serve and enjoy your homemade panda express!
