'Chinese' Pie image

This one-dish meal doesn't have anything to do with Chinese food. Originating more than a century ago in Canada, it came from Chinese immigrants making do with ingredients from their new environment. This is a wonderful comfort food dish that is a family favorite. Kids love this dish! Serve with a green salad and some nice crusty rolls.

1 tablespoon canola oil
1 onion, diced
1 pound lean ground beef
salt and ground black pepper to taste
2 (15 ounce) cans cream-style corn
4 cups mashed potatoes

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart casserole with butter.
  • Heat canola oil in a skillet over medium heat; cook and stir onion until translucent, about 5 minutes. Stir ground beef into onion, season with salt and black pepper, and cook ground beef mixture until browned and crumbly, about 10 more minutes. Drain excess grease.
  • Spread cooked ground beef mixture into bottom of the prepared casserole dish; pour cream-style corn over the ground beef in a layer; top with layer of mashed potatoes.
  • Bake in the preheated oven until potatoes are browned and casserole is bubbling, about 30 minutes.

My grandmother, Julia O'Malley (Nanny), always made this when I was growing up. It is neither Chinese, nor pie, so we don't know why it was called that - it's more like a shepherd's pie, but that's what it was called in our family. Believe it or not, this is great when you smush it all together and put ketchup on it! The kids love it!

6 potatoes, peeled and cubed
1 pound cooked ground beef
1 cup white sauce
1 (15.25 ounce) can whole kernel corn, drained
1 pound shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch casserole dish.
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 15 to 20 minutes. Drain and transfer to a bowl. Mash potatoes using a potato masher or fork.
  • Stir ground beef and white sauce together in a bowl; spread into the prepared casserole dish. Layer corn over beef mixture.
  • Measure about 1/2 cup Cheddar cheese and set aside. Sprinkle the remaining Cheddar cheese over corn layer; top with mashed potatoes. Sprinkle reserved 1/2 cup Cheddar cheese over potatoes.
  • Bake in the preheated oven until cooked through and cheese is melted, about 30 minutes.

This casserole is something my mother used to serve when I was aa kid and I always loved it.

1 lb ground beef
1 can corn
2 Cups mashed potatoes (i usually use instant
1 Jar beef gravy

Steps:

  • 1. Brown ground beef, drain and add to casserole dish
  • 2. Add Corn
  • 3. Top with mashed potatoes
  • 4. Bake at 350 until potatoes are brown, serve with gravy.
