These tasty treats are commonly served as an appetizer or snack in China. I've adapted this recipe from one I found for pork combined with the tips my best friend's mother (who is from Taiwan) taught me about Chinese cooking.

1 chicken breast, cut into small pieces
4 tablespoons light soy sauce
2 tablespoons sesame oil
1 green onion, finely sliced
1 teaspoon oyster sauce
1/2 teaspoon sesame seeds
24 wonton wrappers
1 cup chicken broth
1 cup water

Steps:

  • Cut the chicken breast into small pieces and stir fry in 2 tablespoons soy sauce and 1 tablespoon sesame oil. Let cool until warm.
  • In a bowl, combine chicken with remainder of soy sauce, sesame oil, green onion, oyster sauce and sesame seeds.
  • Put a small amount of the mixture into each wonton wrapper and fold diagonally. Putting a little bit of water on the edges helps seal them, but it often takes a bit of pressing. Make sure they are sealed so that the sauce doesn't leak out.
  • Put the chicken broth and water into a saucepan and bring to a boil.
  • Drop the wonton parcels into the saucepan and boil for 3-5 mins (they will look like cooked noodles when they are done). Only put a few in at a time so they are not touching as they tend to stick together.
  • Remove with a slotted spoon and serve warm with soy sauce to dip.

These are time consuming but so yummy. The recipe makes a lot. You can freeze the dumplings and cook them at a later time. I could not find round wrappers so I used egg roll wrappers and cut them into rounds with cookie cutter.

4 oz shitake mushrooms rough cut
3 scallions green parts only
1 c grated jicama
3 clove garlic
1 lb ground chicken
1/2 c olive oil
1/4 c soy sauce
2 Tbsp sugar
2 pkg round dumpling wrappers
canola oil for frying
DIPPING SAUCE
1 c chinese black vinegar or rice vinegar
1 c soy sauce
4 clove garlic minced
1/2 c sugar
1 Tbsp sesame oil

Steps:

  • 1. Place first four ingredients in food processor and process until fine. Drizzle in the olive oil.
  • 2. Mix the ground chicken with the mushroom mixture and add soy sauce and sugar.
  • 3. Put some water in a small bowl. Lay our dumpling wrappers and wet the edges. Place a small amount of chicken mixture in center fold in half and pinch to close. Repeat until all dumpling wrappers are used.
  • 4. Boil a large pan of water. Carefully drop the dumplings in the water. When they float to the top carefully remove with slotted spoon.
  • 5. Place canola oil in large skillet. Brown each dumpling in oil and remove to a serving plate.
  • 6. For the sauce mix all ingredients together. Taste and adjust seasonings. Serve with dumplings .
  • 7. Tip. I couldn't find round dumpling wrappers so I used egg roll wrappers and cut out circles with cookie cutter.

Number Of Ingredients 10

1 c coarsely chopped cabbage (green, napa, or savoy)
1 sliced and washed leek, white and light green parts only
2 to 3 green onions (scallions), green and white parts, coarsely chopped
3 to 4 clove garlic, peeled
2x1x1-inch piece of fresh ginger root, peeled and cut into several pieces
1 c cooked chicken meat (dark meat is more flavorful)
1 Tbsp soy sauce
1 Tbsp rice vinegar
dash(es) chinese hot oil or hot sauce
1 pkg wonton skins (about 60)

Steps:

  • 1. In the large bowl of a food processor, chop the cabbage, leek, and green onion until fairly fine. Move to a screen seive and squeeze until it is dry enough to clump.
  • 2. Grind garlic and ginger in the food processor. Add chicken, soy sauce, vinegar, and hot oil. Process until the consistency of stiff peanut butter.
  • 3. Mix together cabbage mixture with chicken mixture.
  • 4. To assemble dumplings, lay a wonton skin on a flat surface.
  • 5. Paint two sides (half of the edges) with water using either your finger or a small brush. Water is the glue that keeps the wanton skin shut.
  • 6. Put 1 teaspoon chicken filling in the center of the wanton skin and fold to seal the edges, trying to get as much air as possible out of the dumpling.
  • 7. Place flat on parchment paper or stick-free foil on a cookie sheet and freeze. Once they are frozen they can be moved to bags for storage.
  • 8. Heat a large covered skillet on medium heat. Lightly oil the skillet with vegetable oil. Lay each dumpling on the hot pan and do not move for 3 to 4 minutes (long enough for the bottom to become golden and somewhat stuck to the pan. Add chicken broth and cover the pan. Simmer about 5 minutes until heated through. Serve with dipping sauce.
  • 9. Dipping sauce: combine soy sauce, rice wine, garlic & ginger or use purchased dipping sauce.
  • 10. If you have leftover filling, add an egg and some bread crumbs and form into small balls. Poach these slowly in chicken broth and chill. Serve with a dipping sauce.

CHINESE CHICKEN AND GINGER STEAMED SOUP DUMPLINGS

These delicate little Chinese steamed buns are from the Shanghai region. Filled with minced chicken or pork, ginger, and spring onion. Feel free to experiment by including your favorite ingredients. Serve with shredded ginger in dark vinegar.

¾ cup chicken stock, or more if needed
1 teaspoon agar-agar flakes
1 piece fresh ginger root, peeled
1 spring onion, sliced
¾ cup warm water
9 ounces ground chicken
2 tablespoons soy sauce
2 teaspoons cooking wine
1 teaspoon sesame oil
½ teaspoon white sugar
½ teaspoon freshly ground black pepper
1 ¾ cups all-purpose flour
⅔ cup warm water
1 tablespoon vegetable oil

Steps:

  • Combine chicken stock and agar-agar flakes in a saucepan over low heat; cook and stir until agar-agar is dissolved, 1 to 2 minutes. Refrigerate and chill and until set, 15 to 30 minutes.
  • Slightly smash ginger with the blade of a broad knife to bring out flavor. Place ginger and spring onion in 3/4 cup warm water in a bowl; rub with your fingers to extract the flavor of the ginger and onion into the water. The water will turn slightly green. Drain and let water cool.
  • Mix chicken, soy sauce, cooking wine, sesame oil, sugar, and black pepper together in a bowl. Gradually mix in the cooled ginger-spring onion water.
  • Mince the agar mixture and stir into chicken mixture. Cover and chill in the refrigerator for at least 4 hours.
  • Place flour in a large bowl; stir in 2/3 cup warm water and vegetable oil. Mix until a smooth dough forms; cover with plastic wrap and let stand for 10 minutes. Cut dough into small pieces and roll into balls; flatten into rounds that are slightly thicker in the center.
  • Spoon chicken mixture into the center of each piece of dough. Draw up the sides to form a bag shape and twist to seal.
  • Place in a bamboo steamer. Steam in a skillet filled with about 1 inch of water over high heat until chicken is no longer pink in the center, 10 to 15 minutes.
