After working at A&W Hot Dogs, my husband loved their Chimi Chili Dogs, so we came up with our own version. ery simple to make, and can be stored in the freezer for when those "munchies" come to call.

8 turkey hot dogs (we use Jennie-O)
1 (15 ounce) can chili
1 -2 cup shredded cheddar cheese
8 large flour tortillas
oil, for frying

Steps:

  • Place 1 hot dog in center of each tortilla.
  • Spread 1/4 cup chili over each hot dog.
  • Place 1/8-1/4 cup cheese on each (to your preference).
  • Fold bottom of tortilla up over hot dog, and then fold in the sides.
  • Roll up remaining tortilla.
  • Place seam side down.
  • Wrap each chimi chili dog in plastic wrap and place in fridge for 1-2 hours, or freeze at this point.
  • Heat 1 inch of oil to 350 degrees Farenheit.
  • Place chimi chili dog seam side down in hot oil and cook 2-3 minutes on each side, or until golden brown.
  • To use frozen: Thaw and cook as directed above, or, for quick preparation, heat for 2-3 minutes on high in microwave.

6 hot dogs
1/2 pound ground beef
1/4 cup chopped onion
1 garlic clove, minced
1 can (8 ounces) tomato sauce
2-1/2 teaspoons minced chipotle peppers in adobo sauce
3/4 teaspoon chili powder
1/4 teaspoon salt
1/8 teaspoon pepper
6 hot dog buns, split
3/4 cup shredded cheddar cheese
2 green onions, chopped

Steps:

  • Cook hot dogs according to package directions. Meanwhile, in a large cast-iron or other heavy skillet, cook the beef, onion and garlic over medium heat until meat is no longer pink; drain. Stir in the tomato sauce, chipotle peppers, chili powder, salt and pepper. Bring to a boil. Reduce heat; simmer, uncovered, until flavors are blended, 4-5 minutes., Place hot dogs in buns. Spoon chili over hot dogs. Sprinkle with cheese and green onions.

1 lb lean (at least 85%) ground beef
1 cup chopped onions (2 medium)
3 cloves garlic, finely chopped
2 cans (14.5 oz each) Progresso™ diced tomatoes, undrained
1 tablespoon chili powder
2 teaspoons ground cumin
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
1 package (8 count) hot dogs
8 hot dog buns, split
1/4 cup chopped onion (1/2 medium)
1/2 cup shredded Cheddar cheese (2 oz)

Steps:

  • In 10-inch skillet, cook ground beef, 1 cup onions and the garlic over medium-high heat about 5 to 7 minutes, stirring occasionally, until beef is no longer pink. Drain, if necessary.
  • In 3 1/2- to 4-quart slow cooker, place beef mixture, tomatoes, chili powder, cumin, Worcestershire sauce, salt and pepper; mix until well combined. Place hot dogs in slow cooker; cover with chili mixture.
  • Cover; cook on High heat setting 2 hours or on Low heat setting 4 to 6 hours.
  • Serve chili dogs in buns; top with onion and cheese.

1 1/2 teaspoons vegetable oil
1/2 large white onion, chopped
8 ounces ground beef
2 cloves garlic, finely chopped
1 1/2 teaspoons chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
1 cup canned diced tomatoes
1 1/2 teaspoons tomato paste
8 hot dogs
8 split hot dog buns
4 ounces shredded Cheddar
Ketchup and mustard, for serving

Steps:

  • For the chili: Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring frequently, until soft and translucent, about 8 minutes. Add the beef and garlic and cook, stirring and breaking up into smaller pieces with a wooden spoon, until the meat is brown and cooked through, about 5 minutes. Add the chili powder, cayenne, cumin, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until well combined, about 1 minute.
  • Add the tomatoes, tomato paste and 1/2 cup water to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered and stirring occasionally, until slightly thickened, about 10 minutes. Season with salt and pepper and keep warm.
  • For the chili dogs: Preheat a grill or large grill pan to medium. Grill the hot dogs according to the package directions until grill marks appear and the hot dogs are warmed through, about 5 minutes. Working in batches, if necessary, grill the cut side of the buns until golden and toasted, about 1 minute. Build the hot dogs and top each with about 1/4 cup of chili spooned down the length of the hot dog. Sprinkle each with some cheese and serve with ketchup and mustard.

2 good-quality beef franks
2 good-quality hot dog buns
2 cups chili, recipe follows, heated
1/2 cup grated Cheddar
2 tablespoons finely diced onion
4 pounds ground beef
6 cloves garlic, minced
Two 8-ounce cans tomato sauce
One 6-ounce can tomato paste
1/4 cup chili powder, or more as desired
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper, or more as desired
Two 15-ounce cans kidney beans, drained and rinsed
Two 15-ounce cans pinto beans, drained and rinsed
1/2 cup masa harina (corn flour) or regular cornmeal

Steps:

  • Preheat the broiler.
  • Brown the franks in a small skillet over medium heat. Lightly toast the buns under the broiler. Put the franks on the buns and spoon on a bunch of chili. Add the cheese all over the top, then heat in the microwave to melt the cheese, 25 to 35 seconds. (Or if you're using an ovensafe plate, place it under a low broiler until the cheese melts, about 1 minute.) Sprinkle with the onion and dive in.
  • In a large, heavy pot, brown the ground beef with the garlic over medium heat until the beef is totally cooked, 8 to 10 minutes. Drain off most of the excess fat, leaving a little behind for moisture and flavor. Add the tomato sauce, tomato paste, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally; if the liquid level seems low, add up to 1 cup water to keep it from burning.
  • After an hour, stir in the kidney and pinto beans. In a small bowl, combine the masa harina with 1/2 cup water and stir together with a fork until it's smooth. Pour the masa mixture into the chili. Stir together well, then taste the chili and adjust the seasonings. Simmer the chili for another 10 minutes to thicken, then turn off the heat and let it cool.
  • Fill freezer bags with 2-cup portions and freeze them flat for easy stacking (or freeze in other freezer-safe containers).

**your favorite wieners

**grated cheddar or your favorite grating cheese
**canola oil

Steps:

  • 1. I had 6 bun length wieners left and about 2 c. of homemade chili. I diced 1/2 onion and grated about 1 1/2 c. of cheddar cheese. I bought some 10" flour tortillas.
  • 2. Heat chili and brown or boil wieners. Place about 3 tbs. of chili in center of flour tortilla, then wiener, then onion and cheddar. Fold sides in and roll up.
  • 3. Heat about 1/2 c. of canola oil in small skillet and fry chimi's. Place them seam side down to start, then once browned, turn them over, then place on each side to brown sides. You may need to add a little more oil as you go.
