CHILLI TUNA PASTA SALAD
One of my favourites...for best results be sure to use good quality tuna. I usually use Sirena brand tuna.

Steps:
- Cook the pasta in a large pan of boiling water, uncovered, until it is just tender. Drain the pasta, then rinse it under cold water.
- Meanwhile, boil, steam or microwave the beans until just tender, then drain. Drain the tuna over a small bowl, reserving the oil for the Dressing. Flake the tuna into large chunks with a fork.
- Just before serving, combine the pasta, beans tuna, herbs and capers is a large bowl then drizzle with the Dressing. Serve the salad topped with rocket leaves.
- DRESSING.
- Combine all of the ingredients with the reserved chilli oil in a jar and shake well.

- Cook pasta in a large saucepan of boiling water, uncovered until just tender, drain. Rince under cold water and drain again. Meanwhile boil, steam or microwave the beans until just tender, and refresh under cold water once cooked. Drain the tuna and reserve the oil, place tuna in a large bowl and flake with a fork, add pasta and beans with herbs, rocket and toss gently to combine. place remaining ingredients and the reserved oil in a jar and shake well, drizzle oil over the mixture and serve.

Steps:
- In a large pot, cook penne to taste (see packaging for details).
- Add oil to a deep, heavy based frying pan. Chop onion and cook in pan along with garic and chilli on high heat until oninion is soft.
- Add chopped sun dried tomatoes, tuna and pasta sauce.
- Reduce heat to a simmer.
- Add pine nuts.
- When pasta has cooked, drain and add to frying pan along with chopped, fresh basil.
- Stir pasta through sauce until well coated.
- Serve in large, open bowl.
- Top with slices of fresh parmesan cheese.
- You can add pretty much anything to this dish - olives, egg plant, artichoke hearts, capers - even anchovy fillets are lovely.
- You can also remove the tuna from the dish and add 4 or 5 rashers of chopped bacon instead. This is VERY nice.
