KALE, ZUCCHINI AND POTATO SOUP



Kale, Zucchini and Potato Soup image

Puree zucchini and kale with potato for a rich and creamy soup.

Number Of Ingredients 12

2 tablespoons olive oil
1 cup chopped red onion
1 cup chopped peeled potato
3 to 4 sprigs fresh thyme
1 medium clove garlic, minced
1 sprig fresh rosemary
Kosher salt and freshly ground black pepper
3 1/2 cups chicken broth
1 1/2 cups chopped zucchini
1 1/2 cups firmly packed chopped kale or baby kale, plus more, thinly sliced, for serving
1/4 to 1/2 cup heavy cream
Cayenne or paprika, for serving

Steps:

  • Heat the oil in a medium saucepan over medium heat. Add the onion and cook, stirring, until tender, 3 to 5 minutes. Add the potato, thyme, garlic, rosemary, 1/2 teaspoon salt and a few grinds of black pepper and cook, stirring, until the potatoes are well coated, 2 to 3 minutes more. Pour in the broth and bring to a simmer.
  • Add the zucchini and simmer until the potatoes are tender, about 15 minutes, adjusting the heat as needed to maintain a simmer. Stir in the kale and cook 5 minutes more. Remove from the heat, discard the thyme and rosemary and let cool at least 5 minutes. Carefully puree until smooth with a handheld immersion blender or in 2 to 3 batches in a blender (do not fill the blender more than halfway full per batch).
  • Stir in the heavy cream and reheat the soup if necessary, adjusting the consistency and seasoning with additional water, salt and pepper.
  • Serve hot sprinkled with cayenne or paprika and topped with sliced kale.

6 green onions, chopped
1 medium sweet red pepper, chopped
1 tablespoon dried minced onion

1 pound bulk spicy pork sausage
2 cups (8 ounces) shredded sharp cheddar cheese
1 carton (8 ounces) French onion dip

Steps:

  • In a 6-qt. slow cooker, combine the first 10 ingredients. In a large skillet, cook sausage over medium heat 6-8 minutes or until no longer pink, breaking it into crumbles; drain. Add to slow cooker., Cook, covered, on low to allow flavors to blend, 4-5 hours. Add cheese and onion dip in the last 30 minutes of cooking. Stir before serving. Serve with tortilla chips., Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally; add a little water if necessary.

1 onion, diced
¾ cup diced carrot

4 large potatoes (around 500g), 3 peeled and cubed, 1 left whole with skin on
1 tbsp cold pressed rapeseed oil
15g butter
5 leeks (around 500g), washed and sliced into half moons
2 garlic cloves , sliced
1 ½l vegetable stock (we used Bouillon)
200g kale
2 tbsp half-fat crème fraîche

Steps:

  • Heat oven to 220C/200C fan/ gas 7 and line a baking tray with parchment. Cut the whole potato into matchsticks using a julienne peeler, or shave thin slices using a vegetable peeler, then cut into matchsticks. Pat dry using kitchen paper, then toss with the oil and some seasoning. Spread out on the tray and roast for 15-18 mins.
  • Melt the butter in a large saucepan. Add the leeks, chopped potatoes and a pinch of salt, then cook gently for 10 mins until the leeks have softened. Stir in the garlic and cook for 1 min more, then pour in the stock. Simmer for 10-12 mins until the potatoes are soft, then add the kale and cook for 2-3 mins to wilt.
  • Stir in the crème fraîche, then blitz with a hand blender and season to taste. Divide the soup between bowls and top with the shoestring fries.

1 cup heavy whipping cream
