A soulful chicken salad loaded with chunks of chicken breasts, boiled eggs, onions, celery, relish, and spices! A traditional chicken salad made the old-fashioned way with simple ingredients.

1½ pounds chicken breast
1-2 teaspoons olive oil (for brushing chicken)
1 tablespoon Old Bay seafood seasoning
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon celery salt
½ cup celery (finely diced)
½ cup onions (finely diced)
5 hard-boiled eggs, chopped
2 tablespoons sweet relish
¼ teaspoon dill weed
¾ cup Duke's mayonnaise ((may need more or less))
1 tablespoon dried parsley
fresh cracked black pepper ((a sprinkling))
salt, pepper, +extra seasonings, if desired ((see note))

Steps:

  • Preheat oven to 350 F. Line a pan with aluminum foil. Set aside.
  • Brush the chicken very lightly with a little olive oil.
  • To season the chicken, mix together Old Bay Seasoning, garlic powder, onion powder, and celery salt.
  • Sprinkle chicken generously with seasoning on top and bottom.
  • Place chicken on prepared pan and bake for 20-25 minutes. (You may need more or less time depending on the thickness of your chicken)
  • Once the chicken is done, let it cool and then dice it up into small chunks and place in a large bowl.
  • Add diced celery, diced onions, diced eggs, sweet relish, and dill weed to the large bowl. Stir to combine.
  • Next, stir in the mayonnaise a little at a time until your desired creaminess is reached.
  • Stir in parsley and black pepper
  • Taste and adjust the seasonings if needed. (see note)
  • Cover and refrigerate until chilled. (about 1 hour)
  • Stir before serving. Serve with crackers or on buttered croissants.

1 store-bought rotisserie chicken (about 3 pounds), white and dark meat hand shredded, then roughly chopped
1 cup mayonnaise
1/3 cup Dijon mustard
1 teaspoon paprika
1 teaspoon garlic powder
2 hard-boiled eggs, chopped
1 celery stick, diced
1 bell pepper, diced
Kosher salt and freshly ground black pepper
6 croissants, split

Steps:

  • Mix together the chicken, mayonnaise, mustard, paprika, garlic powder, eggs, celery and bell pepper in a medium bowl; season with salt and pepper. Cover and refrigerate until chilled, about 30 minutes.
  • Serve on split croissants.

Lemon-Paprika Chicken with Chickpeas and Couscous image

This recipe is inspired by the flavors of the Lebanese dish "Shish Tawook" which is a classic marinated grilled chicken kebab recipe. This version uses fewer ingredients but is still loaded with flavor, with the marinade also acting as a delicious sauce tossed with couscous and chickpeas.

1/4 cup fresh lemon juice, plus lemon wedges for serving
1 tablespoon tomato paste
3 tablespoons extra-virgin olive oil
2 teaspoons paprika
2 teaspoons chopped fresh thyme
3 cloves garlic, finely chopped
Kosher salt and freshly ground pepper
4 skinless, boneless chicken breasts (6 to 8 ounces each)
1 15-ounce can chickpeas (not drained)
1 red bell pepper, chopped
3/4 cup couscous
2 tablespoons chopped fresh parsley

Steps:

  • Preheat the oven to 375˚ F. Whisk the lemon juice, tomato paste, 2 tablespoons olive oil, the paprika, thyme, garlic and 1/2 teaspoon each salt and pepper in a small bowl. Pat the chicken dry with paper towels; season with salt and pepper. Rub the chicken with 3 tablespoons of the lemon-paprika mixture to evenly coat.
  • Heat the remaining 1 tablespoon olive oil in a large ovenproof skillet over medium-high heat. Add the chicken and cook until browned on one side, about 5 minutes. Meanwhile, remove 3 tablespoons liquid from the can of chickpeas and transfer to a medium bowl. Drain and rinse the chickpeas. Add to the bowl with the chickpea liquid and add the remaining lemon-paprika mixture and the bell pepper; toss. Flip the chicken and scatter the chickpea mixture around the chicken, scraping any liquid into the pan. Transfer the skillet to the oven and roast until the chicken is cooked through, 8 to 12 minutes.
  • Meanwhile, cook the couscous as the label directs. Fluff the couscous with a fork.
  • Remove the chicken to a plate. Add the couscous to the chickpea mixture and stir together to absorb the pan sauce; season with salt and pepper. Slice the chicken and divide among plates along with the couscous-chickpea mixture. Top with the parsley and serve with lemon wedges.
