Easy Mediterranean Bean Salad image

Easy three bean salad recipe packed with Mediterranean flavors from fresh herbs, capers, and a zesty Dijon garlic vinaigrette. Instead of mushy canned green beans, use fresh steamed ones, or swap them out for another type of bean. I chose to use cannellini beans! After dressing the bean salad, allow it to chill in the refrigerator for at least 30 minutes before serving, so that the beans can absorb the zippy dressing.

1 15 oz can kidney beans, (drained and rinsed)
1 15- oz can cannellini beans, (drained and rinsed)
1 15- oz can garbanzo beans (chickpeas), (drained and rinsed)
1 green bell pepper, (cored and chopped)
1 red bell pepper, (cored and chopped)
1/2 English cucumber, (diced)
1 cup chopped red onions
1 1/2 tbsp capers, (drained)
1 cup chopped fresh parsley
10-15 fresh mint leaves, (torn or gently chopped)
10-15 fresh basil leaves, (torn or gently chopped)
1-2 garlic cloves (minced)
1/2 tbsp Dijon mustard
2 tbsp lemon juice
1 tsp sugar
1/4 cup Early Harvest extra virgin olive oil
Salt and black pepper

Steps:

  • In a large mixing bowl, combine the beans, chopped peppers, onions, capers and fresh herbs. Mix using a wooden spoon.
  • In a small bowl, add the vinaigrette ingredients. Whisk vigorously to combine.
  • Add the vinaigrette to the salad bowl. Toss to coat.
  • For best results, cover and refrigerate for a bit before serving so that beans soak up the vinaigrette flavors. Give the salad another quick toss before serving.

1 can (16 ounces) butter beans, rinsed and drained
1 large sweet red pepper, chopped
1 medium green pepper, chopped
1 large onion, chopped

1/4 cup olive oil
2 tablespoons cider vinegar

My Easy Butter Bean Salad is made with tender butter beans tossed with fresh herbs, red onion, celery, lemon juice, and olive oil for a deep delicious flavor! Light and tasty, this bean salad makes a perfect side dish for any backyard BBQ, potluck, or brunch!

Number Of Ingredients 9

1 (20-ounce) bag of frozen tiny lima beans
1/4 cup chopped red onion
2 stalks of celery - thinly sliced
1 large lemon - juiced
1/2 tsp. fresh tarragon chopped
1 Tbsp. fresh cilantro - chopped
a handful of fresh basil - chopped
1/4 cup extra virgin olive oil
sea salt and fresh cracked pepper to taste

Steps:

  • In a medium-size pot (3 -quart size) filled with water, toss in frozen lime beans and bring to a boil. Lower the heat, and COVER. Simmer on low heat for 20 minutes, or until the beans are tender to the bite. Do not over boil them. Drain well. Then transfer to a large mixing bowl.
  • Toss in all the rest of the ingredients. Gently toss the butter bean salad to combine all the flavors.
  • Taste and season with salt and black pepper to taste.
  • Cover with clear wrap and chill in the refrigerator at least 1 to 2 hours before serving.
  • Finally, before serving, transfer the butter bean salad to a serving bowl. Then take the final taste test. Butter beans will absorb most of the vinaigrette, and therefore, you may need to add in a little more olive oil and lemon juice, as desired. Then serve.
  • Bests served chilled.

This recipe is from Glory Brand Butter Beans and I made it for a dinner party we attended this weekend. It was a huge hit with no leftovers, sigh. I did not use the cilantro leaves or the cumin or all of the cayenne pepper, because some of our friends are flavor woozes, but i will post it exactly like Glory posted it. Enjoy it is good!! Cook time is chill time.

500g cherry tomato , quartered
2small green or yellow courgettes (about 300g/10oz in total), chopped into small dice
1small red onion , chopped
15-20g pack fresh coriander , chopped
2 tbsp lemon juice
3 tbsp olive oil
1 tsp ground cumin

  • Tip all the ingredients into a bowl with some salt and pepper and mix well. Cover and leave at room temperature until ready to serve. This salad can happily be made the day before and chilled.

For this salad, I thought about succotash, a classic Soul Food dish made with butter beans, fresh corn and tomatoes, then I added a few more fresh summer veggies and herbs, plus a spicy, tangy vinaigrette. You really could add anything else from your garden or the farmers' market, like zucchini, bell peppers or snap peas-go ahead and make it your own!

1/4 cup hot sauce
2 tablespoons apple cider vinegar
1 tablespoon honey
1 1/2 teaspoons yellow mustard
1 clove garlic, minced
1/2 cup canola or vegetable oil

One 16-ounce package frozen butter beans or baby lima beans, cooked until just tender and cooled
1 cup fresh or frozen corn kernels, cooked until just tender and cooled
2 mini cucumbers, diced
1/2 cup finely chopped red onion

Steps:
