4 pounds racks baby back pork ribs (2 racks) (You can use spare ribs)
1/2 cup salt
1/2 cup ground black pepper
1/2 cup paprika
1 tablespoon cayenne pepper
1 tablespoon granulated white sugar
1/2 tablespoon minced dry onion
1/2 tablespoon garlic powder
vegetable oil
4 cups brown sugar
12 ounces tomato paste
1 cup water
1 can chipotle peppers in adobo sauce (7.5 ounces)
1/2 cup chicken broth
1/3 cup ketchup
1/4 cup soy sauce
1/4 cup apple cider vinegar
1/4 cup minced garlic
2 tablespoons dried minced onion
1 tablespoon chili powder
salt and pepper to taste

Steps:

  • Preheat pellet smoker to 225 degrees fahrenheit.
  • In a medium bowl, combine the sugar, salt, pepper, minced onion, garlic powder, cayenne, and paprika. Whisk together.
  • Place your ribs, with the bottom facing up, on your baking sheet. Remove the membrane from the back of the ribs.
  • Drizzle a bit of vegetable oil (around 2 tablespoons, but you don't have to be exact) on the back of the ribs and rub it all over.
  • Sprinkle about ⅙ of the spice mixture on the back of each rack of ribs and rub it in thoroughly.
  • Flip the ribs and repeat the oil and spice process, just divide the remaining seasoning mixture between the two racks
  • Place your 8x8 pan of water to the back of your smoker and then place your racks of ribs in the smoker.
  • Cook for 3 hours at 225 degrees, spraying every half an hour with the apple cider vinegar. Spray them just enough to make them shiny, you don't have to be exact here.
  • Place foil on your baking sheet, making sure that the foil is about 5 inches longer than the ribs on each side.
  • Place your ribs on the foil, generously squirt with apple cider vinegar, seal it tightly, and continue to bake at 225 degrees for 2 more hours.
  • Remove the ribs from the foil, smother with BBQ sauce, and place them back in the smoker, without the foil, and smoke for 1 more hour. Enjoy!
  • Add all the wet ingredients to a medium boiling pot. Using an immersion blender, blend the ingredients until smooth. You can also use a normal blender if you have one large enough, or do it in batches.
  • Add the rest of the ingredients, stir, and simmer for 30-45 minutes. The longer you simmer, the thicker it will get.

1 tablespoon dried chipotle powder
1 tablespoon smoked paprika
1 tablespoon ground cumin
1 1/2 teaspoons salt
1 teaspoon ground black pepper
12 ounces dark beer
14 -18 ounces prepared hickory barbecue sauce
1/2 cup water
2 tablespoons golden brown sugar
1 tablespoon ketchup
1 tablespoon honey
1 tablespoon finely ground dark roast coffee (or espresso)

Steps:

  • For the rub:.
  • Whisk rub ingredients together in small bowl.
  • Rub spice mixture all over ribs.
  • Gently boil beer in medium saucepan until reduced to about 1 cup.
  • Place ribs in roasting pan or thick foil for grill. Pour beer around ribs. Cover ribs with foil and set aside.
  • Preheat oven to 400F or preheat gas grill to approximately 350-400°F
  • Once heated, roast ribs for about 1.5 hours. If using outdoor gas grill try adding some alder or cherry wood chips (if not for anything other than a neighbor jealousy-inducing aroma).
  • For the BBQ sauce:.
  • Combine ingredients in medium saucepan and simmer for 10 minutes, stirring occasionally.
  • Brush ribs with sauce. Grill ribs over medium heat, about 5 minutes per side. Save some sauce for slathering and dipping.
  • Serve with polenta.

1 cup ketchup
1/4 cup apple cider vinegar
3 tablespoons dark brown sugar
3 tablespoons Worcestershire sauce
1 teaspoon liquid smoke

Steps:

  • Place ribs in a large pot and fill pot with enough water to cover ribs.
  • Bring water to a boil, reduce heat, cover and simmer for 1 hour, or until ribs are fork tender.
  • While ribs are boiling, combine remaining ingredients in a medium saucepan and bring to a boil.
  • Reduce heat and simmer, uncovered, stirring often, for 30 minutes, or until slightly thickened.

2 tablespoons Mexican chili powder
1 tablespoon paprika
1 tablespoon ground cumin
1 1/2 teaspoons salt
3/4 teaspoon ground black pepper
4 lbs pork baby back ribs
1 (12 ounce) bottle dark beer
1 (18 ounce) bottle barbecue sauce
1/2 cup water
2 tablespoons golden brown sugar (packed)
1 tablespoon instant espresso powder

Steps:

  • Preheat oven to 400°F Whisk chili powder, paprika, cumin, salt, and pepper in small bowl to blend. Rub spice mixture all over ribs. Place ribs in heavy large roasting pan.
  • Boil beer in medium saucepan until reduced to 1 cup, about 5 minutes. Pour beer around ribs. Cover pan tightly with foil. Bake ribs until fork-tender, about 1 hour 30 minutes.
  • Combine barbecue sauce, 1/2 cup water, brown sugar, and espresso powder in heavy medium saucepan. Simmer until flavors blend and sauce thickens slightly, stirring occasionally, about 10 minutes. (Ribs and barbecue sauce can be prepared 1 day ahead. Cool slightly, then cover separately and refrigerate.).
  • Prepare barbecue (medium heat). Brush ribs with some barbecue sauce. Grill ribs just until heated through, about 3 minutes per side. Transfer ribs to platter. Bring remaining sauce to simmer. Brush ribs with more barbecue sauce. Serve ribs, passing remaining barbecue sauce separately.

An easy to make tasty barbecue sauce made with cold coffee. It keeps well for a long time in a glass jar in refrigerator. Use as a sauce for precooked chicken wings or ribs in the oven. Or cook raw wings as directed below. Sauce can also be used for pork chops or spareribs or any recipe calling for barbecue sauce. Easy to make with readily available ingredients. A good way to use up leftover coffee. Time given is to make the sauce only and the yield is an estimate.

4 -6 lbs pork baby back ribs, cut by your butcher as explained above
1/8 cup chili powder
1 tablespoon fresh ground black pepper
1 tablespoon brown sugar
2 teaspoons crushed red pepper flakes
1 teaspoon garlic powder
1 teaspoon dried thyme
1 medium yellow onion
1 tablespoon vegetable oil
2 teaspoons olive oil
4 garlic cloves, finely minced
1 cup brown sugar
2 cups ketchup
3/4 cup apple cider vinegar
1/2 cup soy sauce
2 tablespoons Worcestershire sauce
1 teaspoon crushed red pepper flakes
1 teaspoon dry mustard
1 tablespoon finely minced ginger

Steps:

  • Remove the membrane from the underside of the ribs. This is important. If you've not done this before, Google the technique.
  • In a small bowl, combine the chili powder, sugar, crushed red pepper, garlic powder and thyme and mix well.
  • Using your fingers, rub the mixture over both sides of the ribs.
  • Cure the ribs in the refrigerator for at least 2 hours and for more flavor, up to 24 hours.
  • To make the barbecue sauce, chop the onion and cook it in the vegetable oil until it is dark golden.
  • Transfer the onion to a saucepan and add all the remaining barbecue sauce ingredients.
  • Bring to a simmer, reduce heat to low, cover and simmer for 30 minutes.
  • Pour the sauce through a medium-meshed strainer, scraping the sieve with a metal spoon to force all the pulp through the sieve.
  • Refrigerate the sauce.
  • Grill the ribs over medium indirect heat, for about 75 minutes or until the meat begins to shrink from the ends of the rib bones.
  • Baste the ribs with the sauce occasionally, stopping 15 minutes before removing the ribs from the grill.
  • To serve, cut the ribs into individual pieces and transfer them to a garnished serving platter or to garnished individual plates and serve at once, along with any extra sauce and the fruit salad and corn on the cob.

It's great to know folks like this sauce so much! I wish I could take credit for it but it was adopted after the original member left. Thank you, all, just the same. I have made the recipe with regular brewed coffee but highly recommend the espresso. In a pinch use strong instant if you have nothing else. The acid of the coffee balances the sweetness of the other ingredients.

1/4 cup red wine vinegar
3/4 cup dark brown sugar, firmly packed
1 onion, peeled and chopped, about 1 cup

2 tablespoons hot dry mustard, mixed with 1 tablespoon water
2 tablespoons Worcestershire sauce

  • Cool, then puree in a blender or food processor until smooth.

6 lbs pork baby back ribs
2 cups water
1 cup white vinegar
1/2 cup tomato paste
1 tablespoon dry mustard
1/4 cup packed dark brown sugar
1 teaspoon liquid smoke
3 tablespoons Worcestershire sauce
1 1/4 teaspoons salt
1/2 teaspoon onion powder
2 garlic cloves, minced
1/4 teaspoon paprika
2 teaspoons lemon juice

Steps:

  • Preheat the oven to 350°.
  • Cut the rib slabs in half, leaving 6 to 8 ribs per section. In a large roasting pan, arrange the ribs evenly, then add the water. Cover the pan tightly with a lid or foil to prevent steam from escaping. Bake for 3 hours.
  • About 2 hours into the baking time, make the sauce. In a large saucepan, combine all the sauce ingredients. Simmer over low heat for 1 hour, stirring occasionally.
  • Prepare the coals in a barbecue. Remove the ribs from the roasting pan. Discard the water.
  • Cover the ribs with the sauce, saving about 1 1/2 cups of the sauce for later use at the table. Grill the ribs on the barbecue for about 5 minutes per side, or until slightly charred.
  • Serve with the remaining sauce and lots of paper towels or moist towelettes.
  • ***ALTERNATE SLOW COOKER DIRECTIONS: Place the ribs in a slow cooker, pouring the sauce over. Let cook on low for 6 to 8 hours or on high for 3 to 4 hours until the meat is very tender.
