This is a thick, hearty vegetarian chili that is a hit at parties even among die-hard meat eaters. The TVP gives it the texture of ground beef, and the chiles give it a nice depth of flavor. Cook it in the slow cooker or on the stovetop. This recipe really benefits from using the best quality ingredients you can find. Also, I find this tastes best after sitting in the fridge overnight and reheating the next day. Serve with grated cheese on top.

6 tablespoons olive oil, divided
2 large red bell peppers, seeded and chopped
2 poblano peppers, seeded and chopped
1 large onion, chopped
5 cloves garlic, minced
1 jalapeno pepper, seeded and minced, or more to taste
2 cups hot vegetable broth
2 cups texturized vegetable protein (TVP)
3 tablespoons nutritional yeast
1 (32 ounce) can canned diced tomatoes, undrained
2 (15 ounce) cans kidney beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
½ cup beer
1 (6 ounce) can tomato paste
½ cup cider vinegar
3 tablespoons soy sauce
3 tablespoons lemon juice
2 tablespoons chili powder
2 tablespoons unsweetened cocoa powder
4 teaspoons seasoned salt
1 tablespoon Worcestershire sauce
1 tablespoon paprika
1 tablespoon ground cumin
2 teaspoons dried oregano
1 teaspoon liquid smoke flavoring
1 teaspoon ground black pepper
1 teaspoon white sugar

Steps:

  • Heat 3 tablespoons olive oil in skillet over medium-low heat. Add bell peppers, poblano peppers, onion, garlic, and jalapeno. Cook and stir until soft, about 15 minutes. Transfer to a slow cooker.
  • Combine hot vegetable broth and TVP in a bowl; stir and let sit until liquid is absorbed, about 5 minutes. Add to the slow cooker.
  • Place diced tomatoes, kidney beans, black beans, tomato paste, beer, vinegar, soy sauce, lemon juice, chili powder, cocoa powder, seasoned salt, Worcestershire sauce, paprika, cumin, oregano, liquid smoke, black pepper, and sugar into the slow cooker. Mix to combine.
  • Cook chili on Low for 6 to 10 hours or on High for 4 to 5 hours.

A unique chili using a mixture of meats. It is spicy and loaded with flavor. The name of this recipe used to be Chili Colorado, but I challenged my new friend, Chef #383557, to make and rename the recipe for me after he pointed out that it was not a typical Chili Colorado recipe. (Please see his delightful review. I changed the measurement of the stew meat because if his review and because I also prefer more of this meat in my chili. I also like his idea for marinading the stew meat.) It was all in good fun and I am pleased with the new name. Thank you Bruce! Thank you also too all the reviewers of this recipe.

1 lb hamburger
3 large jalapenos, seeded and chopped
1 lb hot breakfast sausage (I prefer Jimmy Dean's)
1 lb stew meat
1 cup chopped onion
3/4 cup chopped bell pepper
1 (15 ounce) can kidney beans (optional)
3 tablespoons chili powder
1 teaspoon salt
3 garlic cloves, minced
1 (6 ounce) can chopped green chilies
1 (15 ounce) can chopped tomatoes
2 (15 ounce) cans tomato sauce
1/2 teaspoon sugar
1 tablespoon cayenne
1 teaspoon oregano
2 tablespoons jalapeno juice
1/4 teaspoon garlic powder
3/4 teaspoon Tabasco sauce
3 1/2 tablespoons cumin
1/2 teaspoon onion powder

Steps:

  • Marinate stew meat with jalapeno juice, onion powder, and garlic powder.
  • Refrigerate 24 hours.
  • Brown hamburger with onion, garlic, bell pepper and 1/2 tablespoon cumin.
  • Brown sausage.
  • Remove stew meat from marinade and brown.
  • Mix all the meat together.
  • Add tomato sauce, tomatoes, drained beans, jalapenos, chili powder, 3 tablespoons cumin, cayenne, oregano, green chilies, salt, sugar, and Tabasco.
  • Cook on medium heat for 2 hours.

1 lb ground beef
1 lb pork sausage
1 onion
2 garlic cloves
1 green bell pepper
1 lb smoked sausage
1 tablespoon ground oregano
3 tablespoons chili powder
1 teaspoon ground coriander
1 1/2 teaspoons celery seeds
2 (28 ounce) cans tomatoes
2 (27 ounce) cans kidney beans
1/3 cup yellow cornmeal

Steps:

  • In a large heavy pot or Dutch oven, over medium heat, brown ground beef and ground pork sausage with 1 lg onion coarsely chopped and 2cloves of garlic minced.Add 1lg green bell pepper cut into 3/4" chunks and smoked sausage cut into 3/4"chunks; continue cooking 5-10 min longer. Reduce heat to low; drain fat. Blend in spices and chopped tomatoes with all their juice. Simmer 5-10min. Stir in kidney beans (reserve liquid). In a bowl, blend a little of the reserved bean liquid with cornmeal to consistency similar to pancake batter; mix with chili simmering another 10-15min. Stirring occasionally.

2 T. olive oil
2 T. butter
2-4 cloves garlic, chopped/pressed
2 red onions, sliced
7-10 carrots, shredded
1-2 packages chili mix (I prefer one bag of the "brown bag" chili mix, but some in our family use 2 bags of Lawry's)
2 cans of beans (use two of the same kind or two different kinds, use the beans you like in chili), drained
1-2 cans corn, drained
Optional: 1 c. mushrooms, sliced
Optional: 1 can black olives, drained
Optional: 1 c. tofu, cut into small cubes
Optional: hot sauce to taste or one can of diced chilies

Steps:

  • In a large skillet, saute the garlic, onions, and carrots in the oil and butter. Saute on low for a LONG TIME ... until carrots are almost carmelized. Add chili mix, beans, corn, and any of the optional ingredients you choose. Turn heat up to medium, stir and heat until chili is hot. We like to serve corn bread with the chili, but if we are dieting, we use toasted,dry sour dough bread (or forget the bread all together !!! )

It was so rich thick & hearty, had so much flavor. it is a great way to please every one. With chili Dogs, a hearty bowl chili plus Chili Mac. Top it with your favorite condiments & it is a meal to die for....

4 1/2 lb lean ground beef ( i used 90 % lean)
23 oz low sodium v-8 tomato juice ( 2 cans 11 1/2 oz each)
28 oz crushed tomatoes
1 can(s) 10 oz mild diced tomatoes with green chilis
1 can(s) 14 1/2 oz diced tomatoes
12 oz tomato paste
46 1/2 oz mexican style chili beans
1 Tbsp each cumin & granulated garlic powder
3 pkg dry chili mix
1 c water or beef broth
2 large onions chopped
1 large bell pepper, chopped
1 lb elbow macaroni cooked al dente'
1 lb hot dogs (i added mine in the pot of chili for 10 minutes)
1 pkg hot dog buns
1 pkg 8 oz.finely shredded cheese of your choice
condiments-chpd onions,peppers, tomatoes, & sour cream

Steps:

  • 1. These are MOST of the ingredients that I used in the chili.
  • 2. Chop the onions and bell peppers to desired size, then add them with the lean ground beef to a very large pot. Heat over medium high heat till meat has browned, and is no longer pink. Break with a large spoon as you go. I prefer using a wooden spoon.
  • 3. Once meat is fully cooked, remove from heat, and drain excel liquid through a colander or strainer, then add the meat back into the pot and return to medium high heat.
  • 4. Add all 3 cans of the tomatoes undrained, then stir to mix together. Then add the garlic powder and cumin. stir and continue to cook, stirring to prevent meat from sticking.
  • 5. Now add the 3 packages of the chili mix, and stir to blend. Add the tomato paste, and stir and blend as it cooks. Stir in the tomato juice and continue to mix and allow to cook. Pour in water or beef broth, and stir. Add additional liquid if desired, but we like ours very thick. Lower heat and allow to cook for at least an hour or so or as desired. PLEASE BE SURE TO STIR, TO PREVENT MEAT FROM STICKING TO BOTTOM OF POT. Add hot dogs to pot if desired during last 10 minutes or so of cooking.
  • 6. WHEN DONE assemble and serve as desired. Chili Mac adding your favorite condiments.
  • 7. Warm Hot Dog buns if desired. Assemble chili dog and top with your favorite condiments.
  • 8. Pile in the chili to a large bowl and top with what ever you like. Enjoy.
  • 9. This is what the finished product looked like. So thick rich tasty & good. I could not resist showing you what the finished product looked like. NOTE: I PURPOSELY DID NOT ADD SALT OR PEPPER, BUT THAT IS A PERSONAL PREFERENCE.

1 package(s) jimmy dean italian sausage crumbled browned
1 link conecuh original sausage chopped cooked
1 can(s) ro-tel tomatoes w/ chilies 10oz
1 chopped red bell pepper
1 vidalia onion chopped
1 tablespoon(s) minced garlic (from jar)
2 tablespoon(s) chili powder
1 teaspoon(s) cumin
1/2 teaspoon(s) oregano
2 tablespoon(s) black pepper
2 can(s) tomato sauce 29oz
1 can(s) tomato paste 6oz

Steps:

  • Pour your tomato sauce and Ro-Tel tomatoes into your crock pot. (our large pot on stove, with low flame) Mix in all your dry ingredients into the tomato sauces.
  • Brown Italian sausage and chopped link sausage. Once browned mix in the paste with a half of the empty can of water. Dump this into your tomato sauce mixture.
  • Brown beef with garlic, onions and bell pepper. Dump this into your tomato mixture.
  • I let this cook in the crock pot on high for a few hours. You can also warm it through on your stove top as well, since everything is already cooked.
  • I like to serve this with sour cream, cheese and warm garlic bread.

1 lb ground beef
1 lb sirloin steak cut into cubes
2 chicken breast cut into cubes
1 lb kielbasa cut into circles then cut into quarters
1 lb bacon cooked crisp then chopped
4 c beef broth
2 28 oz cans crushed tomatoes
2 Tbsp dark lamesa chili powder
1 Tbsp smoked paprika
1 Tbsp ground aleppo pepper
1 c fire roasted red peppers
1 c dry red wine
1/2 c molasses
1 medium red onion diced
1 small onion diced
6 clove garlic minced
salt to taste

Steps:

  • 1. In a large pot place the beef broth, crushed tomatoes, red wine, molasses, chili powder,Aleppo pepper, smoked paprika fire roasted red peppers and molasses. Heat to a boil then reduce to a simmer.
  • 2. Meanwhile add the ground beef with the red onion and yellow onion and garlic and cook until browned.
  • 3. Add the ground beef to the pot along with the chicken, steak, kielbasa, and bacon. Simmer 1 hour. Taste and adjust for salt.
  • 4. Serve with a dollup of sour cream

4 - boneless beef ribs braised
1 - large can of crushed tomatoes
2 can(s) italian stewed tomatoes
2 can(s) brooks hot chili beans
1 - large onion finely chopped fried in a little olive oil
3 - cloves of garlic finely chopped
- 1/2 of a 2 1/2 ounce jar of chili powder
- salt and pepper to taste
1 - small jalipano pepper seeded. deveined and finely chopped optional

Steps:

  • Put all Ingredients in the crockpot and stir together. Cook on low for 6 hour stirring every two hours

This is almost the same as #32436 with the exception that it shows the amounts. I changed a couple things but the recipe is basically the same THANKS Sparkle for the starting point. IT'S AWESOME !!!!!!!! However it blows the calories to heck. With 8 servings it comes to 466 cal. with 6 servings it's 621 cal. Guess you guys will figure this out from the ingredients.

  • Brown beef and pork in skillet.
  • drain for at least 15 minutes to rid of all the grease.
  • place back in pan and over med heat add everything except- tequila, beer and beans.
  • bring just to a boil then reduce heat.
  • add beer and tequila.
  • simmer for about 2 to 3 hours.
  • add beans during the last half hour.
