4 cups canola oil
1 cup leftover cornbread batter from "Chili Topped Corn Bites" recipe
3/4 cup leftover chili from "Chili Topped Corn Bites" recipe
1 tablespoon chopped parsley leaves
1/2 teaspoon baking powder
1/2 cup sour cream
2 teaspoons finely chopped chives
1/2 teaspoon Cajun seasoning
1/2 teaspoon hot sauce (recommended: Tabasco)

Steps:

  • Heat the oil, in a heavy-bottomed pot over medium-high heat, to 360 degrees F.
  • In a large bowl, mix together the cornbread batter, chili, parsley and baking powder until thoroughly combined.
  • Working in batches, so to not over crowd the oil, drop the batter by heaping tablespoons into the hot oil. Fry until golden brown, about 4 to 5 minutes. Remove from the oil to a plate lined with a paper bag or paper towels, to drain. Transfer to a serving platter and serve with the Spicy Sour Cream Dipping Sauce:

1 tablespoon olive oil
1 1/4 cups finely chopped onion
2 cloves garlic, minced
1 medium green bell pepper, chopped
1/2 teaspoon ground cumin
1 tablespoon chili powder
2 tablespoons fresh lime juice
1 (19-ounce) can cannellini beans
2 cups cooked chicken, chopped
1 (14-ounce) can chicken broth
1 (4 1/2-ounce) can mild green chiles, drained
1 egg
1/2 cup milk
3 tablespoons butter or margarine, melted
1 (6-ounce) package cornbread mix (recommended: Martha White brand Cotton Pickin' or Buttermilk)
1 cup shredded cheddar
Sour cream, optional, for garnish
Salsa, optional, for garnish
Fresh cilantro sprigs, optional, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • Filling:
  • In a 10 1/2-inch cast iron skillet, heat the olive oil over medium heat. Add 1 cup onion, garlic, green pepper, cumin, and chili powder, and cook for about 3 to 5 minutes, or until the vegetables are tender. Add the lime juice, cannellini beans, chicken, broth, and green chiles, and stir until just combined. Remove from the heat and set aside.
  • Crust:
  • In a medium mixing bowl, beat the egg. Add the milk, butter, and cornbread mix, and blend well. Stir in 1/4 cup onion and the cheese. Pour over the chicken chili in the skillet. Bake for 25 to 30 minutes, or until the cornbread is golden brown. Remove from the oven and let cool for about 5 minutes.
  • If desired, top with sour cream, salsa, and cilantro before serving.

Number Of Ingredients 8

1 cup yellow cornmeal
1/4 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
1 small onion, finely chopped
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.

Growing up in the south, fish and hush puppies are a staple. I've just recently gotten this recipe from my mother in law who owns a local restaurant. Letting the batter sit for a while before cooking will result in fluffier hush puppies.

1/2 cup self-rising flour
1 1/2 cups cornmeal
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1 large onion, finely chopped (I usually use more than one, but I like onions!)
1 cup buttermilk
1 egg
peanut oil (for frying)

Steps:

  • Combine all ingredients.
  • Mix well.
  • Will be rather thick, but that's what you want.
  • Heat oil to 350°F.
  • Drop by spoonful into oil (it helps to have a glass of water on hand to dip the spoon into before dipping into batter. The batter will easily roll off the spoon).
  • Let fry for about 5-6 minute on each side.
  • Be sure to flip so that they brown evenly.
