- Pour cream-style corn and whole-kernel corn in a slow cooker set to Low; add hash browns and stir.
- Heat butter in a skillet over medium heat; cook and stir red onion, white onion, bell peppers, celery, carrots, jalapeno peppers, cherry peppers, and poblano peppers in the melted butter until onions are slightly translucent, 10 to 15 minutes. Stir vegetable mixture into slow cooker; top with half-and-half.
- Cook, stirring occasionally, for about 3 hours.

- In a Dutch oven, saute onion in butter until tender. Add the water, corn and potatoes; bring to a boil. Reduce heat; cover and simmer for 16-20 minutes or until potatoes are tender. Reduce heat to low. Stir in the milk, salt and pepper. Cook for 5-10 minutes or until heated through, stirring occasionally. Sprinkle with parsley.

- In a large saucepan, heat the olive oil over medium heat.
- Add the onion, chili powder and cumin and cook, stirring, until the onion is soft, about 5 minutes. Stir in the tomato paste.
- Add the beef and cook, breaking up the meat, for 5 minutes; season with salt and pepper.
- Add the beans and the tomatoes with their juice and bring to a boil. Lower the heat, partially cover and simmer, stirring occasionally, for 20 minutes. '.
- Transfer to an 8x11-inch baking dish.
- Position a rack in the upper third of the oven and preheat to 400*F.
- In a large bowl, combine the potatoes and cheese. Scatter the potato mixture over the chili.
- Place the baking dish on a baking sheet and bake until the potatoes are cooked through and the chili is bubbling, about 35 minutes.

- Mix together the package of hashbrowns and 1 cup of cheddar cheese.
