Leftover ham gets an unusual treatment from Carol Forcum of Marion, Illinois in this creative chili blend that features three kinds of convenient canned beans. "I sometimes serve it in bowls over rice or corn bread and garnish it with cheese," she notes.

2 cups cubed fully cooked ham
1 medium onion, chopped
1 medium green pepper, chopped
1 garlic clove, minced
1 tablespoon olive oil
1 can (28 ounces) diced tomatoes, undrained
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 can (15 ounces) pinto beans, rinsed and drained
1 jar (8 ounces) picante sauce
1 can (8 ounces) tomato sauce
1/2 cup water, optional
1 can (2-1/4 ounces) sliced ripe olives, drained
1 teaspoon beef bouillon granules
1 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon pepper
Shredded cheddar cheese

Steps:

  • In a large saucepan, cook the ham, onion, green pepper and garlic in oil until tender. Stir in tomatoes, beans, picante sauce, tomato sauce and water if desired. Bring to a boil. Stir in the olives, bouillon, thyme, salt and pepper. Reduce heat, simmer, uncovered, for 15-20 minutes. Garnish with cheese.

Number Of Ingredients 10

One 7- to 8-pound fully cooked bone-in ham
1 cup chicken stock
4 tablespoons unsalted butter
2 tablespoons fresh ginger grated on a rasp
1/2 teaspoon chile flakes
3/4 cup brown sugar
1/2 cup honey
1/2 cup lime juice
1 tablespoon plus 1 teaspoon Dijon mustard
1/3 cup bourbon, optional

Steps:

  • Temper the ham by bringing it out of the fridge 90 minutes before cooking. (This will allow it to heat more evenly and not dry out.)
  • Preheat the oven to 300 degrees F.
  • Place the ham in a shallow roasting pan fitted with a rack. Using a paring knife, score the fatty side of the ham by gently slicing lines 1/2-inch apart, crisscrossing on an angle to create a diamond pattern. This will allow the glaze to soak into the ham. Add the chicken stock to the bottom of the pan, then cover the pan in foil. Cook for 40 minutes, basting every 10 to 15 minutes.
  • To make the glaze, warm the butter in a medium saucepan over medium heat. Add the ginger and chile flakes and cook until fragrant, about 1 minute. Add the brown sugar, honey, lime juice and Dijon mustard. Bring to a simmer, then cook until slightly reduced, about 2 minutes. Set aside the glaze in a bowl, leaving about 1/4 cup behind in the pan for finishing.
  • Remove the ham from the oven and raise the oven to 425 degrees F.
  • Remove the foil from the ham and discard the drippings from the pan. Brush the ham liberally with half of the glaze. Return to the oven and cook, uncovered, for 15 minutes, then brush again. Bake again until dark and caramelized, another 15 minutes. Remove the ham to a rimmed platter.
  • Heat the remaining 1/4 cup glaze to a simmer over medium-low heat. If using the bourbon, remove the glaze from heat and add the bourbon. Using a lighter, flambe the alcohol in the pan and very carefully pour over the ham. (The alcohol can be omitted and you can just put the warm glaze over the ham.)

12 large, thin slices of ham
12 eggs
sweet chilli, sriracha or your favourite chilli sauce
½ cup finely sliced spring onions (scallions), plus extra to serve
1 cup grated cheese

  • Step 1.Preheat your oven to 180°C/356°F.. Step 2.Brush a 6-hole muffin pan with sesame oil. Step 3.Line each muffin hole with ham. Spoon a teaspoon or more of chilli sauce into the ham cups. Crack an egg into each ham cup. Top with spring onions and the cheese.. Step 4.Bake for about 15 minutes or until the whites are just set. Loosen the edges of each bundle with a knife and pull out the ham cups. Serve warm or cold.

  • Add remaining ingredients, lower heat, and simmer uncovered for 20 minutes.
  • Add cooked pasta, if desired, for"chili mac".

I found this recipe on one of those little leaflets that they pass out at the supermarket. It's a great way to use up leftover ham and a great family pleaser. Serve with lots of bread to soak up the sauce.

4 slices bacon, finely chopped
1 cup finely chopped onion
1 (28 ounce) can tomatoes
1 (14 ounce) can pork and beans in tomato sauce
1 (14 ounce) can red kidney beans
3/4 cup ketchup
1/4 cup brown sugar
2 tablespoons chili powder
1/2 teaspoon ground cumin
hot pepper flakes (optional)
4 cups chopped ham

Steps:

  • In a large sauce pan or dutch oven, over medium heat, cook bacon and onions until tender.
  • Add tomatoes, stirring to break up (or use diced tomatoes.) Stir in beans, ketchup, brown sugar, chili powder, cumin and hot pepper flakes.
  • Bring mixture to a boil, reduce heat and simmer 20 minutes.
  • Add ham, cook 10 minutes longer to warm through.
