This is a really delicious version of Meatloaf that I really love. I like the sweet tang of the Chili Sauce. This is adapted from Martha Stewart's recipe, but I have changed a few of the ingredients to suit what I had in my pantry. It's just the two of us, so I made a small meatloaf, which was perfect! 1 lb ground beef, lean
1 c panko bread crumbs
1/4 c milk or buttermilk
1 whole egg, slightly beaten
1/2 c chili sauce (i like heinz)
1 Tbsp olive oil
1 small onion, minced
1 or 2 cloves garlic, minced
1/2 small red or green pepper, minced
salt and pepper to taste
extra chili sauce for basting on top

Steps:

  • 1. Preheat oven to 350 and line a 9x9 baking tin with foil. Spray the foil with Pam to prevent sticking.
  • 2. In a saucepan, heat olive oil to medium. Add onion and pepper. Saute until just soft. Add garlic cloves and sautee an additional minute. Add vegetables to meat mixture
  • 3. In a large bowl, add beef, panko, milk, egg and chili sauce. Toss in the veggies and salt and pepper to taste. Mix very well, incorporating all ingredients. Shape into a basic loaf and place in pan. Slather additional Chili Sauce over the top of the loaf.
  • 4. If making a small 1 lb meatloaf, bake at 350 degrees for about 1 hour. If doubling the recipe, add another 15 minutes. Let sit for 10 minutes before slicing.

Number Of Ingredients 9

1 1/2 lb ground beef
1 lb ground pork
1 cup VH Thai Market Sweet Thai Chili Sauce
1 cup onion, finely chopped
2 tbsp Worcestershire sauce
2 eggs
1/2 cup bread crumbs
1 1/2 tsp salt
2 tsp dried oregano or thyme

Steps:

  • Mix all of the ingredients together with 1/2 cup of VH sauce, reserving the other half for the glaze. Place loaf pan on a baking sheet, pack mixture into loaf pan. Spread remaining chili sauce over the meatloaf. Cook in a 350F oven for 1 1/2 hours, or until meat thermometer reads 160F.
