1 package (1 pound) hot dogs
2 cans (15 ounces each) chili without beans
1 can (10-3/4 ounces) condensed cheddar cheese soup, undiluted
1 can (4 ounces) chopped green chiles
10 hot dog buns, split
1 medium onion, chopped
1 to 2 cups corn chips, coarsely crushed
1 cup shredded cheddar cheese

Steps:

  • Place hot dogs in a 3-qt. slow cooker. In a large bowl, combine the chili, soup and green chiles; pour over hot dogs. Cover and cook on low for 4-5 hours. , Serve hot dogs in buns; top with chili mixture, onion, corn chips and cheese.

1 1/2 teaspoons vegetable oil
1/2 large white onion, chopped
8 ounces ground beef
2 cloves garlic, finely chopped
1 1/2 teaspoons chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cumin
Kosher salt and freshly ground black pepper
1 cup canned diced tomatoes
1 1/2 teaspoons tomato paste
8 hot dogs
8 split hot dog buns
4 ounces shredded Cheddar
Ketchup and mustard, for serving

Steps:

  • For the chili: Heat the oil in a large pot over medium-high heat. Add the onion and cook, stirring frequently, until soft and translucent, about 8 minutes. Add the beef and garlic and cook, stirring and breaking up into smaller pieces with a wooden spoon, until the meat is brown and cooked through, about 5 minutes. Add the chili powder, cayenne, cumin, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring, until well combined, about 1 minute.
  • Add the tomatoes, tomato paste and 1/2 cup water to the pot. Stir well and bring to a boil. Lower the heat to medium-low and simmer, uncovered and stirring occasionally, until slightly thickened, about 10 minutes. Season with salt and pepper and keep warm.
  • For the chili dogs: Preheat a grill or large grill pan to medium. Grill the hot dogs according to the package directions until grill marks appear and the hot dogs are warmed through, about 5 minutes. Working in batches, if necessary, grill the cut side of the buns until golden and toasted, about 1 minute. Build the hot dogs and top each with about 1/4 cup of chili spooned down the length of the hot dog. Sprinkle each with some cheese and serve with ketchup and mustard.

1 cup chopped white onion (from 1 onion), plus more for serving
1 tablespoon minced garlic (from 3 cloves)
1 pound 85 percent-lean ground beef, preferably grass-fed
Kosher salt
1 tablespoon unsweetened Dutch-process cocoa powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground allspice
1 can (8 ounces) low-sodium tomato sauce
1 tablespoon apple-cider vinegar
1 teaspoon Worcestershire sauce
1 tablespoon chili powder
6 all-beef franks
6 long potato rolls, such as Martin's, split
Yellow mustard, for serving
4 ounces finely shredded sharp cheddar (2 cups), for serving

Steps:

  • Heat oil in a large skillet over medium. Add onion and cook, stirring occasionally, until soft and golden in places, 8 to 10 minutes. Add garlic; cook 30 seconds more. Add ground beef and season with salt. Increase heat to medium-high and cook, breaking into bite-size pieces and stirring occasionally, until meat is browned in places and just cooked through, 6 to 8 minutes. Stir in cocoa, cinnamon, and allspice; cook 1 minute. Stir in tomato sauce, 1 cup water, vinegar, Worcestershire, and chili powder. Bring to a boil, then reduce heat to low and simmer, stirring occasionally, until thick and darkened slightly, 18 to 20 minutes. Remove from heat; cover to keep warm.
  • Meanwhile, bring 2 inches of water to a boil in a large saucepan. Add franks, reduce heat to low, and simmer until plump and hot, about 5 minutes. Drain franks and place in rolls. Top each with chili, sprinkle with onion, drizzle with mustard, and top with cheese. Serve immediately.

2 good-quality beef franks
2 good-quality hot dog buns
2 cups chili, recipe follows, heated
1/2 cup grated Cheddar
2 tablespoons finely diced onion
4 pounds ground beef
6 cloves garlic, minced
Two 8-ounce cans tomato sauce
One 6-ounce can tomato paste
1/4 cup chili powder, or more as desired
2 teaspoons ground cumin
2 teaspoons dried oregano
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper, or more as desired
Two 15-ounce cans kidney beans, drained and rinsed
Two 15-ounce cans pinto beans, drained and rinsed
1/2 cup masa harina (corn flour) or regular cornmeal

Steps:

  • Preheat the broiler.
  • Brown the franks in a small skillet over medium heat. Lightly toast the buns under the broiler. Put the franks on the buns and spoon on a bunch of chili. Add the cheese all over the top, then heat in the microwave to melt the cheese, 25 to 35 seconds. (Or if you're using an ovensafe plate, place it under a low broiler until the cheese melts, about 1 minute.) Sprinkle with the onion and dive in.
  • In a large, heavy pot, brown the ground beef with the garlic over medium heat until the beef is totally cooked, 8 to 10 minutes. Drain off most of the excess fat, leaving a little behind for moisture and flavor. Add the tomato sauce, tomato paste, chili powder, cumin, oregano, salt and cayenne. Stir together well, cover the pot and reduce the heat to low. Simmer for 1 hour, stirring occasionally; if the liquid level seems low, add up to 1 cup water to keep it from burning.
  • After an hour, stir in the kidney and pinto beans. In a small bowl, combine the masa harina with 1/2 cup water and stir together with a fork until it's smooth. Pour the masa mixture into the chili. Stir together well, then taste the chili and adjust the seasonings. Simmer the chili for another 10 minutes to thicken, then turn off the heat and let it cool.
  • Fill freezer bags with 2-cup portions and freeze them flat for easy stacking (or freeze in other freezer-safe containers).

Steps:

  • To make chili, brown ground beef in 1 tablespoon vegetable oil in a large saucepan for about 10 minutes over medium heat.
  • Add onion and red bell pepper, stirring well. Add tomato sauce and seasonings, stirring well.
  • Allow mixture to bubble for about 10 minutes, then reduce heat to simmer and cook at least 30 minutes.
  • To make hot dogs, cook on your grill or on a grill pan until just seared on the outside.
  • Meanwhile, toast buns in a 400-degree oven for about 10 minutes, taking care not to brown.
  • Swipe each bun with mustard, top with chili as desired, followed by grated cheese, onion and, if you're brave, jalapenos.

1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 pound ground sirloin
Salt and pepper
2 teaspoons Worcestershire sauce -- eyeball it
1 small onion, chopped
2 cloves garlic, chopped
1 tablespoon chili powder, a palmful
1 (8-ounce) can tomato sauce
8 fat or footlong beef franks
1 tablespoon butter
1 tablespoon hot sauce
8 hot dog buns, toasted
2 cups shredded Cheddar, 1 (10-ounce sack)

Steps:

  • Heat a skillet over medium high heat. Add extra-virgin olive oil and meat and season with salt and pepper. Brown and crumble beef. Add Worcestershire, onion, garlic, chili powder and cook together 5 minutes. Add tomato sauce and reduce heat to low.
  • Meanwhile, boil franks in shallow pan to warm through, 5 minutes. Drain water and return pan to medium heat. Score casings on dogs. Melt butter in skillet and hot sauce. Add dogs to pan, browning and crisping the casings in hot sauce and butter.
  • Heat broiler.
  • Place devilish dogs in buns and top with chili and lots of cheese. Place devilish dogs under broiler and melt cheese. Serve immediately.

  • Heat the chili and hot dogs in the same pan until hot.
  • Put the hot dogs in a split hot dog bun, cover with chili cheese and onion.
  • Eat!
  • Note: You could toast the buns first, although I don't.
