1 1/2-2 lbs lean ground beef
1 (1 1/3 ounce) envelope beefy onion soup mix
2/3 cup quick oats
2 eggs
1 (12 ounce) bottle chili sauce, divided
1 teaspoon black pepper

Steps:

  • Make foil handles for slow cooker. Do this by cutting three 18x3 inch strips of heavy duty foil paper; place in bottom of slow cooker in criss-cross strips to resemble bicycle spokes on a wheel.
  • Spray foil paper in slow cooker with cooking spray.
  • In a bowl, combine beef, beefy onion soup mix, oats, eggs, 3/4 cup chili sauce, and black pepper; mix well.
  • With your hands, shape meat mixture into round ball.
  • Place round ball into slow cooker; pat down into loaf shape.
  • Cover and cook on low for 3 to 4 hours. Before last half hour of cooking time, spread remaining chili sauce over top of loaf and continue cooking.
  • Use foil handles to lift meat loaf out of slow cooker.

1 1/2 lbs lean ground beef
1 egg
1/2 cup breadcrumbs
1/2 teaspoon salt
1/4 teaspoon pepper
2 teaspoons canola oil
1 large onion, chopped
1 sweet red peppers or 1 green pepper, chopped
1 tablespoon chili powder
1 cup drained red kidney beans
1/2 cup salsa
1/2 cup shredded cheddar cheese

Steps:

  • In a large bowl, beat egg with a fork.
  • Add bread crumbs, salt and pepper.
  • Gently mix in ground beef.
  • Set aside.
  • In a large frying pan, heat oil on medium-high heat.
  • Add onion; cook for 5 minutes or until softened.
  • Add sweet pepper and chili powder.
  • Cook for another 4 minutes.
  • Let cool slightly and then add to beef mixture.
  • Add kidney beans and salsa.
  • Pack into an 8 by 4 inch loaf pan.
  • Bake in preheated 350F (180C) degree oven for 60-75 minutes.
  • Drain off fat.
  • Sprinkle cheddar cheese on top of meatloaf and return to oven for 5-7 minutes or until cheese is bubbly.

2 tablespoons olive oil
2 tablespoons chili powder
2 teaspoons oregano
2 teaspoons minced garlic
2 teaspoons salt
2 teaspoons ground cumin
1 medium red bell pepper
1 medium onion
2 jalapeno peppers
1 (28 ounce) can italian crushed tomatoes
1 1/2 lbs ground beef
1/2 lb ground sausage
1 cup breadcrumbs
2 eggs
1 cup frozen corn
3 green onions
8 ounces cheddar cheese, grated

Steps:

  • Peel and dice the onion. Remove core and seeds from red pepper and jalapenos and dice. Thinly slice the green onion.
  • In a large skillet heat the olive oil. Add diced onion, red pepper, jalapenos, garlic, chili powder, salt, oregano, and cumin and saute 1 minute. Drain crushed tomatoes and add to skillet. Cover, reduce heat to low and cook about 10 minutes. Remove from heat and cool to room temperature.
  • In a large bowl, combine beef and sausage. Add tomato mixture, bread crumbs, eggs, corn, and green onions and mix well.
  • Press meat mixture into 2 9x5 inch loaf pans.
  • Bake at 350 degrees for 50 minutes.
  • Remove from oven and pour off any pan juices. Top evenly with cheddar cheese and return to the oven for about 4 minutes, until cheese melts.

1 tablespoon olive oil
1 cup finely chopped onions
1 tablespoon finely minced garlic
1 cup finely chopped green pepper
3/4 cup finely chopped celery
1 tablespoon chili powder
3/4 cup crushed canned no-salt tomatoes
Freshly ground black pepper to taste
1/4 teaspoon dried hot red pepper flakes
1 pound ground pork
1 pound ground veal
1 large egg, lightly beaten
1 cup fine fresh bread crumbs
Tomato sauce with chili (see recipe), optional

Steps:

  • Heat oil in skillet and add onions and garlic. Cook, stirring, until wilted. Add green pepper, celery and chili powder and cook, stirring, about 1 minute longer. Add tomatoes and bring to boil. Let cook about 5 minutes. Sprinkle with black pepper and pepper flakes. There should be about 3 cups. Let cool.
  • Preheat oven to 375 degrees.
  • Put pork and veal in mixing bowl. Add egg, then stir in cooled vegetable mixture and bread crumbs. Blend thoroughly.
  • Spoon mixture into 6 1/2-to-7-cup loaf pan and smooth over top. Put dish in oven and bake about 1 1/4 to 1 1/2 hours. Internal temperature on meat thermometer should be 160 degrees. Serve hot with tomato sauce with chili if desired or serve cold in sandwiches.

2 medium onions, chopped
2 garlic cloves, minced

1/4 teaspoon ground cinnamon

4 tablespoons vegetable oil
1 green bell pepper, chopped
1 yellow onion, chopped
2 ½ pounds lean ground beef
2 beef bouillon cubes
⅔ cup red wine
2 (16 ounce) cans whole peeled tomatoes, chopped, juice reserved
garlic cloves, crushed
1 (12 ounce) can tomato paste
1 ½ teaspoons paprika
2 ½ teaspoons chili powder
1 teaspoon cayenne pepper
2 ½ teaspoons dried basil
½ teaspoon dried oregano
2 tablespoons dried parsley
½ teaspoon black pepper
1 teaspoon salt
12 drops hot pepper sauce (e.g. Tabasco™)
1 (15 ounce) can kidney beans, drained
3 tablespoons flour
3 tablespoons corn meal
½ cup water

Steps:

  • Heat oil in a large saucepan over medium heat. Cook green pepper, and onion, until softened. Add the ground beef and cook until browned. Crumble over bouillon cubes, and stir in wine; continue to cook for a few minutes. Stir in chopped tomatoes, garlic, and tomato paste. Season with paprika, chili powder, cayenne pepper, basil, oregano, and parsley. Stir in salt and pepper.
  • Bring to a boil over high heat. Reduce heat to medium low. Cover, and simmer for 90 minutes, stirring occasionally.
  • Stir in kidney beans, and hot pepper sauce. You can add the reserved tomato juice if more liquid is needed. Continue to simmer for an additional 30 minutes.
  • In a small bowl, whisk together the flour, corn meal, and water until smooth. Stir into chili, and cook for a further 10 minutes, or until chili has thickened up.
