3 green plantains
1 teaspoon salt
1 teaspoon pepper
1 teaspoon chili powder
4 slices mozzarella cheese
4 hot dogs, or other preferred sausage
oil, for frying

Steps:

  • Grate the green plantains into a large mixing bowl.
  • Add salt, pepper, and chili powder, and mix to combine.
  • Wrap one slice of cheese around a hot dog link and cut into fifths.
  • Take one tablespoon of your plantain mixture and encase one slice of the cheese-wrapped hot dog, shaping into a cylindrical "tot."
  • Repeat until all slices are covered and shaped, and place on a parchment-lined baking sheet. Freeze one hour.
  • In a large pot over medium-high heat, heat your oil to 375ºF (190ºC).
  • Drop four to five tots into the oil and fry until golden brown, about one to two minutes.
  • Place on a paper towel to drain excess oil.
  • Serve warm with your favorite dipping sauce!

Cook once and eat twice with this hearty Southwestern casserole from Linda Baldwin of Long Beach, California. With help from a few convenience products, it quickly goes together before you freeze it or pop it into the oven to bake.

1 pound ground beef
2 cans (15 ounces each) chili without beans
1 can (8 ounces) tomato sauce
1 can (2-1/4 ounces) sliced ripe olives, drained
1 can (4 ounces) chopped green chilies
2 cups shredded cheddar cheese
1 package (32 ounces) frozen Tater Tots

Steps:

  • In a large skillet, cook the beef over medium heat until no longer pink; drain. Stir in the chili, tomato sauce, olives and green chilies. Transfer to two greased 8-in. square baking dishes. Sprinkle with cheese; top with Tater Tots. Cover and freeze one casserole for up to 3 months. , Cover and bake the remaining casserole at 350° for 35-40 minutes or until heated through. , To use frozen casserole: Remove from the freezer 30 minutes before baking (do not thaw). Cover and bake at 350° for 1-1/4 to 1-1/2 hours or until heated through.

2 tablespoons all-purpose flour
1 ½ tablespoons salt, or more to taste
1 tablespoon ground black pepper
3 eggs
1 block cheddar cheese, cut into small, rectangular cubes
vegetable oil, for frying

Steps:

  • Combine thawed hash browns, flour, salt, pepper, and eggs in a bowl.
